Lemon and Mint Creamed Cucumbers
A fragrant and refreshing Summer Salad, these Lemon and Mint Creamed Cucumbers can be eaten on their own, as a side to ss with toasts, or as a side to grilled meat!
Ingredients (serves 2):
1 large Green Onion
half a dozen large leaves fresh mint
half a large lemon
a pinch of salt and freshly cracked black pepper
1 1/2 tablespoons canola oil
2 heaped tablespoons sour cream or crème fraîche
half a large cucumber, rinsed
Finely chop Green Onion, and add to serving bowl, saving a bit of its green part for garnish.
Roll mint leaves together, and chop finely. Add chopped mint to the bowl.
Grate in about two teaspoons lemon zest. Season with salt and black pepper.
Stir in canola oil, mixing well.
Then, add sour cream, and give a good stir.
Finally, thoroughly squeeze in the juice of the lemon halve, stirring until well-combined.
Cut cucumber into thin slices. Add cucumber slices to the bowl, tossing well to coat generously.
Place in the refrigerator, to chill, at least one hour.
Serve Lemon and Mint Creamed Cucumbers cold, sprinkled with reserved chopped green part of the Green Onion.

(As per the results from the poll I made 💚 I'm not sure this turned out the way I wanted it but it's cute so here you go)
Recipes
1) Just having plain uncooked veggies as snack is so nice (especially crunchy vegetables). Even if you add a simple dip it doesn't add too many c@ls!
Recipe for tztziki
You add in a bowl low fat greek yoghurt, grated cucumber, diced dill, diced garlic, a bit of olive oil and salt and you mix it (you can add mint too)
(A recipe for hummus is a bit harder but if you want it dm me and I'll try my best to explain)
2) Cucumbers or tomatoes on a rice cake with a little bit of light cream cheese 😋
3) vegetable soup
Veggie soup is actually pretty easy to make. Just cut veggies of your choice (carrots, onions, broccoli, celery, green beans). Lightly soute the veggies in a little bit of oil (its good to add them one by one starting from the one that needs to cook for longer to othe once that need less cooking). Then add some veggie broth (if possible low sodium one) and boil until ready.
4) Salad
Literally so easy but delicious and so filling. I usually just put a little bit of olive oil, salt, and lemon juice and it's soo good. Leafy greens, tomato, cucumber, and raw onion 😋 (you can add a few cubes of low fat feta cheese as well)
5) boiled or souted veggies (Brocoli, carrots) on top of rice is so nice as well, and so quick to prepare and easy to meal prep!

For ask day! A while back I wrote about savory sauces you would rec and since then I learned that I had a zinc deficiency causing me to have trouble tasting salt. Great news--zinc levels are good and I can taste salt again! Now that I have a better understanding of what went wrong, do you have any recs for salty flavorful dishes or sauces? (Thank you again for your previous advice! It helped me with ideas!)
Oh god, yes, you know what is an amazing salty dish for summe,r is just a big ol Greek salad. Thinly sliced tomatoes, romaine lettuce, cucumbers, olives, anchovy, big hunks of feta, and then all the herbs: Mint, parsley, oregano, black pepper, all mixed in together with olive oil. This isn't really a recipe, it's just vibes, but I promise it's delicious. I like roasted chickpeas for crunch.
I also really like pickle soup,. which apparently not everyone has heard of--I think it's actually an Eastern European thing, which checks out because we have a farming community nearby that was formed by a bunch of folks from there, and that's where I learned about it.
It's really easy too, you just saute a mirepoix with garlic in some butter, then add cubed potatoes, chicken broth, and a bunch of diced pickles. Season it, simmer it, mash up the potatoes, add sour cream, pickle brine, and some fresh dill. I don't have a recipe because how I described this to you is how I make it ahaha.
Stir fry seasoned with soy sauce and maybe a miso-ginger chicken would be really amazing. Oh! I like avocado toast with sea salt, it's not hard to make at all, it's just toast and mashed, seasoned avocado. Great bread with a really fantastic butter, ungodly amount of salt, thinly slices radishes, a dash of lemon, that;s heaven.

i'm just gonna c&p from my msg so you'll have to wade thru it on yr own, sorry! you can ask if anything's unclear! but this soup is fucking amazing for summer lunches and tastes so impressive compared to the level of effort you have to put forth!
cucumber souuuupies!
2-3-4 big boy cucumbers, make a decision, idc creme fraiche - like a cup? idfk 1/3 cup dill, depends on how much you like dill i guess, same for the mint 1/4 cup flat leaf parsley 1/4 cup mint 1 clove garlic 1/2 lemon, juiced an amount of kombu 2-3 spring onions, scallions, whatever you call them, but only if they're young and small salt white pepper!! don't fuck me on this, you bastard. buy the fucking white pepper.
don't ever use fucking yoghurt in cold cucumber soup. it overwhelms the cuke and it's a pussy version of actually creamy dairy products. use creme fraiche. if you don't have that, use sour cream I guess but i'm not happy about it. if it was me i'd half and half sour cream and cream cheese for a closer fat percentage with a better level of tang. if I hear that you used yoghurt bc it's healthier or whatever the fuck, I will grind yr dick in the fucking dirt.
get some water, idk how much, depends on how much cuke you have. few big cukes? maybe 400ml of water, maybe less.
take some kombu, like the size of yr palm or less, break it up a bit, put it in the water and steep it overnight in the fridge. remove the kombu and that's the broth you're gonna use for yr soup.
or you can gently simmer it for a verrry short time (don't fucking boil it or it'll turn bitter) but the flavour's better if you just let it steep overnight. not as prominent, adding umami while retaining more of the fresh green notes. it's easy to overwhelm the rest of the ingredients so don't fuck around. you want this shit to taste weak as fuck bc it's just a supporting character.
if you don't have kombu, you could probably do something like a very, very weak shiitake dashi but tbh I wouldn't.
actually, fuck, skip the kombu thing if you're not used to kombu and are worried about it. the quality grade of yr kombu and the amount of mannitol (that white powder) will affect yr dish. I think it's worth it to experiment but that's up to you.
mince yr garlic, mix it with the lemon juice, leave it to sit. the acid takes out the harsh pungency of raw garlic so you don't get that sharp, harsh bite. you can do this with garlic anytime you're using it raw btw, just drain the juice if it doesn't work in yr recipe.
if you have young scallions that won't have an overwhelming flavour, you can chop the white parts to add. finely slice the green parts for garnish. otherwise, skip it. the only substitution i'd be cool with is leek. actually leek might be preferable overall but not as pretty as a garnish.
ok, take yr cukes, cut them lengthwise and scoop out the seeds. they're useless and deserve nothing.
now you've got everything.
dump everything but the dill and mint in a blender
blend
start blending in the herbs, salt, and pepper. you're gonna do this by taste. balance that shit out and when it tastes amazing, you're done. you want this to be light and fresh with very subtle umami from the kombu and garlic. that should be the backup, the stage underneath the cuke, the dill, and the creamy finish in yr mouth, you slut
garnish sparingly with scallions, generously with herbs, and maybe some fancy little cucumber spirally things idfk sort it out by yrself, you wastrel

Ingredients:
1 cup quinoa
2 cups water
1 cup Ariga Foods Pudina Cashews, roughly chopped
1 cucumber, diced
1 tomato, diced
1/4 cup red onion, finely chopped
1/4 cup fresh mint leaves, chopped
2 tbsp lemon juice
2 tbsp olive oil
Salt and pepper to taste
Instructions:
Rinse the quinoa under cold water. Combine quinoa and water in a pot and bring to a boil.
Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Let cool.
