Chicken of the woods (Laetiporus sulphureus)
Found some surprise chicken of the woods on the cycle home from work! It was at the perfect stage for harvesting, and I of course had to immediately make my favourite chicken nuggies of the woods. Some more is in the fridge and will likely become a stew and a risotto.

Beautiful orange fungus growing on a fallen log
Reminds me of sunshine
This might be the beloved chicken-of-the-woods (Laetiporus sulphureus), but I'm no mycologist; I just like to take pretty nature pictures. I'm reasonably sure it's at least part of that genus, though, but even still there are a lot of fungi that resemble this.
As always, I welcome corrections and/or further knowledge. 'Cause learning is fun!

My favorite piece, maybe ever. Mushroom Fae Queen.
If you know me personally, I'm a little mushroom-obsessed. I don't really even love eating mushrooms, I just like going out in the woods and looking for treasures.
I handbuilt this creature using 2 main pinched pots, and then sculpted the face, arms, cup, and the laetiporus sulphureus mushrooms that make up the crown of the head. I used tools to carve the bark texture, and then painted the body with a variety of glazes and underglazes. She's hollow inside, and the head is a planter that can hold smaller succulents.
Love, love her. She lives at my parents house. I've thought about making another one, but I feel like she's one of a kind. I feel she is a little spiritual guide for mushroom trips.

‘twas a great day for a foraging walk! the late summer shrooms are fruiting and the fall nuts are almost ready.
surprisingly, everyone was the most excited about oxalis which i did NOT expect. we also cleared out a bunch of garlic mustard so that’s a big win for that patch of woods 🤘🏽

Chicken of the Woods 》 Laetiporus sulphureus
!!!! I had my very first encounter with this choice edible in Brazos Bend State Park this past weekend while camping with a friend of mine. Such a highly anticipated find!
I didn't harvest any to eat as there was only this one formation in reach and it's better to be safe when dealing with a new-to-you species.

Based upon location (North-Eastern Forest) and observable features, I’d strongly wager these are (Laetiporus Sulphureus), common names being Chicken-of-the-woods, crab-of-the-woods, sulphur polypore, or sulfur shelf.
The bright yellow underside helps distinguish it from it’s also edible cousin, (Laetiporus Cincinnatus), which has a creamy white underside. These guys were a little too bug-infested to eat, it’s better to pick them when they first emerge, but a very cool find!

Chicken of the woods (Laetiporus sulphureus)
I'm finally back to posting!! This is from a few months ago - after a devastating absence of CotW last year, this year I found loads in all my regular spots, and feasted on it plentifully.
Lots of it topped my favourite meal for several nights: udon noodle soup. I also made chicken nuggets of the woods (with chips and veg) and a vegan chicken risotto with it.
