Required ingredients to make a saada (basic) paan:
Betel leaf or paan patta
A paste of lime stone powder and water. (chunna)
A paste of catechu and water. (kattha)
A mixture of sugar powder, rose leaves, perfume, menthol, and red food color.
Betel nuts, preferably diced.
Grated saffron betel nut.
Steps to make paan:
Take a washed and dampened betel leaf and apply a small amount of chunna on it with the help of the back of a spoon or a stick.
Apply kattha in the same way onto the leaf as you applied chunna.
Sprinkle some sweet powder mixture, which you made on the leaf according to your taste or preference, on it.
You can also apply heera panna, a honey-like substance, onto one side of the leaf.
Using your finger, mix all the materials on the leaf by moving your fingers in a circular manner.

18. If you have constipation, take one teaspoon of ISABGOL (Psyllium Husk) Powder with one (1) teaspoon of honey with a glass of Damm Shudah ZamZam water or milk, hot or cold, or as you may deem fit.
19. Take your last group of medicines after ‘Isha with some Damm Shudah ZamZam water.

I never tried Makhana in my life till now. I thought let me try! At first I thought to roast it and have it and then I decided to do something extra! By the way Makhana is also known as fox seeds or lotus seeds. So, today, I am going to prepare Makhana Bhel. If you haven't tried it then let me enlighten you about it. Shall we start?

What all I need?
Makhana - 2 cups
Ghee - 1 tbsp
Red chilli powder 1 tbsp
Salt- 1 tbsp
Green chillies -2
Franklin powder 1 tbsp
Tumeric powder - 1/4tbsp
Onions 1 finely chopped
Tomatoes 2 finely chopped
Carrot - 1 cup grated
Roasted peanuts - 1/4 cup
Mint Chutney - 1/4 cup
Tamarind Chutney - 1/4 cup
Sev - 1/4 cup
lemon juice 3 tbsp
Mint Chutney!!
You can buy Mint chutney. However I have prepared! It's easy and can be prepared in 5 min. Let's start!
1 cup coriander
½ cup mint leaves
2 tbsp peanuts roasted
1 inch ginger
1 garlic
½ tsp jeera
½ tsp Franklin masala
2 tbsp lemon
¼ tsp sugar
¼ tsp salt
1 green chilli
¼ cup water
Preparing Mint Chutney!
Firstly, in a small blender take 1 cup coriander, ½ cup mint, 2 tbsp peanuts, 1 inch ginger, 1 garlic, 1 green chilli and 2 tbsp lemon.
Add ½ tsp jeera, ½ tsp Franklin masala, ¼ tsp sugar and ¼ tsp salt.
Blend to smooth paste adding ¼ cup water or as required.
Keep it aside.
Enhancing:
Use Chaat Masala instead of Franklin Masala. It will give the street food touch even though two masala mentioned are almost same!

Tamarind Chutney!
I have soaked tamarind and dates for almost 2 hours. So that they get cook fast and become soft! You can skip this step however cook more in that case!
Let's go!! What all I need?
½ cup seedless tamarind
½ cup seedless dates
2 cups water for thinner consistency add 3 cups water
½ cup jaggery
½ tsp fennel powder
½ tsp cumin powder
1 tsp red chili powder
salt to taste
Preparing Fun!
Firstly, in a large kadai take equal proportion of tamarind, dates and jaggery (½ cup each)
Pour 2 cups of water.
Mix and boil the mixture for atleast 10 minutes.
Add ½ tsp fennel powder, ½ tsp cumin powder, 1 tsp red chili powder, and salt to taste.
Mix and mash tamarind and dates.
Simmer the mixture for 2 minutes.
Later allow the mixture to cool completly.
Now transfer the dates, tamarind mixture to the mixer and blend smooth puree.
Transfer the prepared khajoor imli ka chutney into airtight jar and store it in the refrigerator..

Now, we are ready to prepare Makhana Bhel!
In a large Kadai, heat 1 tbsp Ghee and add Makhana 2 cups.
Add Red chilli powder 1 tbsp, Salt- 1 tbsp, Franklin powder 1 tbsp, Tumeric powder - 1/4tbsp
Roast it till it becomes crispy.
Keep it aside. Take a mixing bowl.
Add roasted Makhana, chopped onions, tomatoes, green chilies, Carrot - 1 cup grated, Roasted peanuts - 1/4 cup. Mix them well.
Further add Mint Chutney - 1/4 cup, Tamarind Chutney - 1/4 cup. Give it a quick mix. Add salt as required. Add Sev - 1/4 cup
Our Bhel is ready! Sprinkle Sev and lemon juice on top and Serve!!
Additional Tips!
You can add Sweet corn, Raw mangoes, Moong, Pomegranate, to enhance the taste!
Use Chaat Masala instead of Franklin powder too.
