Japanese-style spaghetti: cream sauce, shrimp, and ricotta cheese, topped with karasumi (salted dried mullet roe). Full honesty, I chose this because it’s been ages since I’ve had karasumi and couldn’t remember whether I liked it. (I live on the edge.) Turns out I feel pretty neutral about it as an ingredient. It added some saltiness but not a lot of depth. Not an intense, in-your-face texture like ikura. Mostly I wished there was more shrimp!
