Bizen-Yaki (Okayama Prefecture)  is created using the Yakishime method of firing unglazed wares at high temperatures. Using red pine wood in the firing process beautiful natural colors and tones emerge from the clay. Bizen clay has a high iron content which enables the pottery to retain heat or remain cool. Bizen -Yaki  reflects the Japanese artistic sensibility emphasising inner beauty and subtlety.

A really memorable fancy meal: the tofu course at a Kyoto specialty restaurant! Everything was delicious and I loved all the little ceramics. Also, because of pandemic (fall 2020), they seated us in a private room deep, deep in the bowels of their labyrinthine basement—I got lost two or three different ways on my way back from the bathroom and by the time I finally found our table, I had contracted an uncontrollable fit of the giggles that lasted the rest of the night.
For hotpot, we chose yudofu, which is a simple Kyoto specialty of tofu cooked in kombu dashi (but a very sophisticated version)! The maguro was the first time I'd had tofu-yam sauce on sashimi. I also loved the two dumplings: a juicy tofu shumai (one of their specialties) and a lotus root manju, crispy on the outside and gooey on the inside.
The long skinny plate had fried yuba tofu skin (one of my favorite things) and two types of tofu dengaku. The adorable fan-shaped bowl was a gooey cheesy tofu gratin, and then they brought us rice and clear soup with yuba to finish, plus dessert: soymilk ice cream with brown sugar syrup and a bit of azuki bean "tofu." It was a really special experience, definitely recommended!

Dinner at our last hot springs hotel in Kyushu...our group was separated into 3 groups because I forgot to mail them in advance that our 3 bookings belonged to a large group...Yufuin was very touristic, full of tourists from all over the world, it felt like the old days before pandemic...

Jealous Sylus unknowingly sets himself up when he takes you to a 9-course kaiseki experience for a quiet and intimate dinner date. You’re both seated at the chef’s counter and the charming man preparing the food and serving you tonight was on the younger and attractive side. You can tell the chef pours his heart and soul into each beautiful small plate so you savor each bite with blissful appreciation and praise him for making such delicious food so skillfully with ease.
Sylus wouldn't dream of spoiling your night just because something is preventing him from sharing your enjoyment, but when you kindly ask the talented chef for his name it leaves a bitter taste in his mouth. He drags your seat closer to him, laying a soft kiss on your shoulder while maintaining a possessive grip around your waist. You’re infuriatingly oblivious to his display of jealousy as you keep your cute smiles about you and gently pat his cheek feeding him another bite.
After the lovely dinner experience, you and Sylus take a moonlit stroll basking in the cool night air. His thumbs are tucked inside his front pockets so you loop your arm through his to hold and lean some of your weight against him, exhaling that you didn’t know such simple and unique ingredients could make for such a tasty meal and you’d love to revisit the place again. You feel Sylus stiffen under your touch at that and his unimpressed response makes you realize his unusual behavior of keeping mostly quiet this entire outing. You pull him to an abrupt stop and with a tilt of your head and slight furrow to your brows you ask him what’s wrong.
Sylus takes a moment to collect his thoughts, glancing at the lamplight filtered road ahead of him then back at your concerned face and resigns with a small sigh. There’s an edge in his voice when he downplays the situation but the more he recalls your fangirl worthy attention toward the chef it slowly gnaws at him from within. “Nothing’s wrong. You just seemed to enjoy that food a little too much. And that chef a little too much.”
“Sylus, you brought me there so I’m not really understanding...? Of course, I enjoyed seeing the food be prepared right in front of us and the— Oohh, I think I see now.” You really should've tried harder to suppress the fond smile as your mind works to make perfect sense of the unwarranted tension between you and him. But it was truly adorable to think that even the fearsome Onychinus leader was jealous over something so silly and you reach up to playfully pinch his cheek. “Were you jealous? Is that why you were acting so strange?”
“Jealous, huh?” He laughs softly, but it sounds more like a scoff as his fingers curl around your wrist and he brings your hand back down to his side while brushing his thumb over your knuckles. “I wouldn’t say jealous, just… observant. You were practically gushing over the chef when I was right there.”
“Okay, I understand where you’re coming from. It seems I should be more interested in reminding my husband how much I love and adore him.” You encircle your arms around his neck and his expression softens with each tender kiss you trail across his face and meet his waiting lips for an achingly sweet kiss. His hands rest on your hips and tug you closer to him and he resists the urge to deepen the kiss like he’s a man obsessed and can’t get enough of his darling wife.
“I appreciate the reminder, kitten. But I might need another one when we’re back home for good measure.”

We all laugh (or get annoyed) at Jack for being stupid. I do it myself, but let me stand up for him right now.
Let me start quite obviously: Jack had no ill intentions when he brought Will Graham into the FBI's work. He was convinced that Will could save lives and was ready to support him in that — he wanted Alana Bloom to be his psychological support, and when she refused, he went to the psychiatrist she recommended — Hannibal Lecter.
Yes, I'm annoyed myself with how he keep putting pressure on Will (e.g. episode Coquilles: "You go back to your classroom and there’s more killing that you could have prevented, it will sour that classroom forever") and his way of thinking, which he admitted to Hannibal Lecter in Buffet froid, which I will show with a fragment of the script of the said episode:

It was after Coquilles in which Will said that he want to quit because it is bad for him, so no Jack, I don't think Will feels the same way.
But this post was supposed to be a defense of Jack Crawford, so let's get back on topic.
Jack didn't know the truth about Hannibal, he didn't know that Will had autoimmune encephalitis, and he had no reason not to believe Hannibal that what was wrong with Will was psychological. After all, Dr. Lecter was the psychiatrist recommended to him! And Jack had every right to believe that Hannibal was giving Will the psychological help he needed in his work with the FBI.
And Hannibal prepared the ground for the version that Will has a mental disorder. The story that Hannibal presented made sense: due to his empathy disorder, Will began to believe that he was G.J. Hobbs and continued his work, ultimately taking the life of his daughter.
Jack recruited Will to work with the FBI, believing in his abilities, but Hannibal made him believe that the job had broken Graham mentally. And it's not unusual for disappointed patients to blame their therapists, so it would be quite a natural turn of events for Will to start claiming that Hannibal is the copycat killer, just to avoid being the one to blame. And there was no evidence against Hannibal, because he took care of it.
And now let me focus on the episode titled Yakimono.
Miriam Lass turned out to be alive. Hannibal's partial fingerprint was found at the place where she was held! And on top of that, Dr. Chilton referenced a cannibalistic joke he heard from Hannibal! And Jack ignored it all!!!
But are you sure? In my opinion, he was already planning to use Will again. I think Jack started to suspect something when Beverly Katz was murdered. In Futamono, he tested the food served at Hannibal's party. No human flesh was found there. With Yakimono though, Will's honey pot act in regards of Hannibal begins.
And my theory may seem to make no sense to you, but let me dig into it.
Let me show you a deleted scene from Kaiseki which I find particularly important, crucial one, here:

Tl;dr: Hannibal is social anti social, Will can shape him somehow, because Hannibal believes that Will is as unique as him himself.
Which leads to the conclusion that…
To catch Hannibal, the FBI must take advantage of his weakness towards Will.
And during his honey pot act, Will was still working with Jack, so why wouldn't Jack trust him? However, in Mizumono, Will called Hannibal, warning him, which led to the bloodbath, so why, even after hearing in Aperitivo that Will wanted to run away with Hannibal and a part of him would always want to (Dolce), did Jack continue to trust him? I think it was because Jack thought Will blamed himself for Abigail's death and since he was trying so hard to be a parent to her, he thought that if he ran away with Hannibal, Abigail would be still alive. And in the end, Will "got" Hannibal arrested, right?
Why did Jack allow Hannibal's fake escape in The Wrath of the Lamb and involved Will in that?
In my opinion it connects with the paragraph from earlier. Three years had passed, Will had gotten married, adopted his wife's son, so he had mentally recovered from the bloodbath and the death of his surrogate daughter, right? He told Jack he was really happy, right?
Will may have warned Hannibal and wanted to run away with him, but he was the reason Hannibal was caught. Three years have passed and Will has gotten himself together. In front of Jack he was playing (at least partially) about how he doesn't want to be drawn into the "game" he was playing with Hannibal again, he warned Molly that when he came back he would be different (he didn't come back), he said Alana that seeing Hanniabal for the first time in three years made him feel like Hannibal was looking through to the back of his skull; felt like a fly flitting around in there (... and the Woman Clothed with the Sun), he assured her that he wouldn't let Hannibal into his head again. Will seemed to be traumatized by all this. Up until...

This is the scene where Will is in Jack's office watching what the Dragon has done to Chilton (The Number of the Beast is 666). He looks terrified, panicked, and then suddenly… he becomes sort of relaxed, calm? Would you agree with that? I guess so. But have you ever noticed that there is a transition between these two reactions? It is in front of Jack and Alana that he is terrified, in front of Bedelia he is calm and admits to her that maybe he exposed Chilton to the Dragon on purpose because he actually hates him (just like in the book, although in the book he set Freddy Lounds up to the Dragon).
Will played in front of Jack until the end. Even when suggesting using Hannibal as bait, Will pretends he's not 100% sure it will work, even though he already had a deal with Francis Dolarhyde (The Wrath of the Lamb). It was us as the audience who knew this, not Jack.
I think that Jack believed Will, because he wanted to; it was his way of trying to rehabilitate himself after what Will had to go through because of him because Jack didn't believe him from the beginning that Hannibal was the Copycat. I think that after it turned out that Hannibal was not only the Copycat Killer, but also the Chesapeake Ripper, Jack decided to never doubt Will's abilities again. And that doomed him, just as Kade Prunnell and Alana Bloom predicted.

France 🇫🇷
Apéritif - Apéritifs are drinks, typically alcoholic, that are normally served before (apéritif) or after (digestif) a meal respectively. An apéritif is an alcoholic beverage usually served before a meal to stimulate the appetite, and is usually dry rather than sweet. 🥂
Amuse-Bouche - An amuse-bouche is a single, bite-sized hors d'œuvre. Amuse-bouches are different from appetizers in that they are not ordered from a menu by patrons but are served free and according to the chef's selection alone.
Potage - Pottage or potage is a term for a thick soup or stew made by boiling vegetables, grains, and, if available, meat or fish. It was a staple food for many centuries. The word pottage comes from the same Old French root as potage, which is a dish of more recent origin.
Oeuf - Egg. 🥚
Coquilles - Great scallops. In French, the mollusc itself – as well as a popular preparation of it in cream sauce – is called coquille St. Jacques. 🦪
Entrée - An entrée, in modern French table service and that of much of the English-speaking world, is a dish served before the main course of a meal.
Sorbet - Sorbet is a frozen dessert made using ice combined with fruit juice, fruit purée, or other ingredients, such as wine, liqueur, or honey.
Fromage - Cheese. 🧀
Trou Normand - The Normand Hole. Calvados is the basis of the tradition of le trou Normand, or "the Norman hole". This is a small drink of calvados taken between courses in a very long meal, sometimes with apple or pear sorbet, supposedly to reawaken the appetite.
Buffet Froid - A buffet froid is a meal served on a table for guests to help themselves. The word, as such, comes from the French buffet and originally referred to a sideboard used to store china. When a buffet includes only cold dishes, it is known as buffet froid, which means cold buffet.
Rôti - Roast.
Relevés - In the late 18th century, the practice arose of removing the empty soup tureens and replacing them with entrées de broche or other grosses entrées. The replacement dishes were commonly called "relevés", or in English, "removes". They were the last of the entrées consumed at the meal, although they were brought to the table immediately after the potages.
Savoureux - Tasty, savoury.
Japan 🇯🇵
Kaiseki / 懐石 - It is a traditional multi-course Japanese dinner. The term also refers to the collection of skills and techniques that allow the preparation of such meals and is analogous to Western haute cuisine.
Sakizuke / 先附 - An appetizer similar to the French amuse-bouche.
Hassun / 八寸 - The second course, which sets the seasonal theme. Typically one kind of sushi and several smaller side dishes. Traditionally served on a square dish measuring eight sun (寸) on each side.
Takiawase / 煮合 - Vegetables served with meat, fish or tofu; the ingredients are simmered separately.
Mukōzuke / 向付 - A sliced dish of seasonal sashimi.
Futamono / 蓋物 - A "lidded dish"; typically a soup.
Yakimono / 焼物 - Flame-grilled food (esp. fish)
Su-zakana / 酢肴 - A small dish used to cleanse the palate, such as vegetables in vinegar; vinegared appetizer.
Shiizakana / 強肴 - A substantial dish, such as a hot pot.
Naka-choko / 中猪口 - Another palate-cleanser; may be a light, acidic soup.
Kō no mono / 香の物 - Seasonal pickled vegetables.
Tome-wan / 止椀 - A miso-based or vegetable soup served with rice.
Mizumono / 水物 - A seasonal dessert; may be fruit, confection, ice cream, or cake.
Italy 🇮🇹
Antipasto - Antipasto is the traditional first course of a formal Italian meal. Usually made of bite-size small portions and presented on a platter from which everyone serves themselves, the purpose of antipasti is to stimulate the appetite.
Primavera - A primo is the first course. It consists of hot food and is usually heavier than the antipasto, but lighter than the second course.
Secondo - A second course (secondo), based on meat, fish, dairy products such as cheese, or eggs.
Aperitivo - The aperitivo opens a meal, and it is similar to an appetizer. Most people gather around standing up and have alcoholic/non-alcoholic drinks.
Contorno - A side dish (contorno) of raw or cooked vegetables, which accompanies the second dish.
Dolce - Dessert.
Digestivo - The digestivo, also called ammazzacaffè if served after the coffee, is the drink to conclude the meal.

flufftober day 4: market day
amagasaki is home to several indoor and outdoor markets that appeal to different audiences. the indoor market attracts artisans and small businesses that produce household items, jewelry, and crafts. the outdoor market is where independent grocers, farmers, and most food trucks congregate, occupying parks wreathed in autumn colors, accompanied by music from local artists and bands.
osamu borrowed everything for his booth. the tent is from inarizaki’s volleyball club. the metal trays are on loan from his old home economics teacher. the folding tables are from aran, the cash box and chalk sandwich board from omimi. the disposable plastic gloves, napkins, and takeout bags are from kita. the truck that he used to transport everything is from his uncle.
it’s only his onigiri that belong to him.
he opens the tent, sets up the tables. he slides the trays of onigiri into the transparent food displays, stickers already in place with the price and filling. he places the cashbox beside it, along with a stack of business cards, which only has his name, phone number, email, and ig. the storefront will come in the near future.
atsumu joins him after he’s set everything up and takes a piece of chalk to draw on the sandwich board. in uneven letters, he scrawls onigiri miya and doodles onigiri in the corners. he takes a handful of flyers that osamu printed with the available flavors, and atsumu starts walking around to distribute them. the morning is still young; business will pick up, hopefully.
“hey, osamu! nice booth ya got here.”
his smile widens at the pair of familiar faces. “aran! kita-san! good morning!”
aran waves, and kita nods. “how’s business so far?” aran asks.
“the market just opened, so i haven’t sold anythin’.” he gestures at the empty park. “’tsumu is walkin’ ‘round ta advertise.”
kita picks up several flyers. “i can take a handful ta bring back ta the farm an’ distribute ta the neighbors.”
“oh, same here. my team is nowhere nearby, but it helps ta spread the word, yeah?” aran does the same, tucking them under his arm. “well, i should show some patronage. i’ll take a tuna mayo, please.”
“konbu fer me, please,” kita adds.
osamu packs their orders, deposits their change into the cashbox. “thank ya both. will y’all check out the rest o’ the market?”
“of course. we’ll come back ta say bye when we leave.” aran steps away, giving him a final nod of encouragement. "good luck!”
he sells a few onigiri, and atsumu returns to deposit the remaining flyers in hand. “didja see aran an’ kita-san?” osamu asks him.
“yeah, i saw ‘em walkin’ round. i saw akagi an’ omimi-san too, they said they’ll come by.”
as if he summoned them, their upperclassmen arrive. “look at ya, osamu,” akagi says, slightly teary-eyed. “workin’ on the other side o’ the counter fer once.”
omimi rolls his eyes, although his expression is soft. “shinsuke gave us a glowin’ review. can we get one o’ everythin’?”
“thank ya both, akagi-san, omimi-san,” osamu says, beaming as he packs their orders. “i hope ya’ll enjoy ‘em.”
“ya better,” atsumu adds. “that’s yer kouhai’s cookin’ yer ‘bout ta eat.”
“i’mma enjoy the hell outta ‘em,” akagi reassures him. “if ya aren’t sold out by the end o’ the day, i’ll come back an’ buy the rest.”
the height of the afternoon approaches, and the crowd thickens. atsumu, after a brief phone break, goes back out to advertise, and osamu continues to sell a few more. a small line forms but quickly dissipates, and he’s left with another pair of familiar faces. “gin! kosaku! yer back in town?”
“we came ta support ya!��� ginjima knocks his fist against his. “it’s yer first gig at the market, yeah? it better not be yer last.”
osamu shakes his head. “i’m gonna be at two others after this. gotta balance it with work.”
“which restaurant are ya at?” kosaku asks. “are ya still at the teppanyaki place?”
“nah, the owner recommended me ta his colleague’s kaiseki restaurant. it’s been hard, but i finally got on his good side. good thing, or i woulda had ta work today.”
“hey, guys!” atsumu returns, empty-handed, knocking fists with their friends. “ya’ll came back just ta support ‘samu?”
“obviously. we gotta support, ya know?” ginjima’s eyes gleam as he takes his wallet out. “i’ll take a negitoro onigiri.”
“i’ll take bonito flakes,” kosaku adds.
the onigiri steadily decrease from the trays. business is steady, with many eager to support him online or await his physical shop. for now, they’ll have to contend with his appearances at various markets in town, until he’s able to expand further out.
“tsum-tsum! so this is where you’ve been!”
atsumu straightens from behind, stepping next to his twin at the owl-haired young man and his dark-haired companion with glasses. “bokkun, keiji-kun! nice of ya’ll ta come by.” to his brother, he introduces them. “bokuto koutarou, my teammate, and akaashi keiji, his friend.”
“it’s nice to meet you, mya-saam!” bokuto says cheerfully. “your onigiri look amazing! i could buy all of them!”
“please don’t, bokuto-san. you don’t have enough luggage space for all of that.”
“oh, that’s true! okay, i’ll take your last mentaiko and one salmon!”
“i’ll get salmon, please,” akaashi adds. “i wish your business the best of luck, miya-san.”
osamu hands them over. “thank ya. yer support means a lot ta me.”
meian, atsumu’s captain, also stops by, along with inunaki, barnes, and adriah. atsumu converses with them while osamu bags their orders, dwindling his stock further. there’s still an hour until the market ends, with three onigiri left. he wonders who’ll take the last of them.
his answer comes as soon as his brother’s teammates leave, replaced with another trio, this time led by a familiar face. “hey.” suna has his hands in his pockets, a smile on his face. “hope we’re not too late?”
“so this is the humble beginning of an empire, huh?” his companion asks. “i’m lucky to be part of it.” there’s another person lurking behind him, and atsumu immediately singles him out.
“ya lied ta me, omi! ya said ya wouldn’t come by!” atsumu shouts.
sakusa glowers at him, the lower half of his face hidden behind his face. “it wasn’t a lie. i was brought here against my will because of motoya.”
“we have to show our support! it isn’t every day that a new onigiri restaurant is in the works,” his cousin insists. “we came just in time to snag the last three!”
it’s easy for them to decide who gets what: sakusa gets umeboshi, komori with kombu, and suna with tuna mayo. osamu slides his gloves off, satisfied that he’s sold out.
they stay to help him dismantle the stall, and promise to meet with the twins for dinner after. atsumu loads everything into the truck and climbs into the passenger seat beside osamu, clicking his seatbelt on. “that was a pretty good first day, yeah?” he says. “just wait ‘till ya get yer storefront. the line will go fer blocks.”
osamu smiles, inserting the key into the ignition. it’s so easy to imagine it, to envision the happy customers with his onigiri in hand, to visualize a full house. “i can’t wait, either. thanks fer yer help, ‘tsumu.”
“any time, ‘samu.” they knock against each other’s fists.
