This coleslaw recipe captures the classic KFC taste with its creamy dressing and crisp veggies. It's the perfect side dish for your fried chicken cravings.
Ingredients: 1 small head of cabbage, finely shredded. 2 carrots, grated. 1/2 cup mayonnaise. 2 tablespoons buttermilk. 2 tablespoons white vinegar. 1/4 cup granulated sugar. 1/4 teaspoon salt. 1/4 teaspoon black pepper.
Instructions: In a large bowl, combine the shredded cabbage and grated carrots. In a separate bowl, whisk together mayonnaise, buttermilk, white vinegar, sugar, salt, and black pepper until well blended. Pour the dressing mixture over the cabbage and carrots. Toss to coat thoroughly. Cover the bowl and refrigerate for at least 2 hours or until chilled. Before serving, give the coleslaw a good stir and adjust the seasoning if needed. 8 1/8 cups cabbage 1/3 cup carrot 1 teaspoon onion chopped fine 1/3 cup sugar 1/2 teaspoon salt 1/8 teaspoon pepper 1/8 cup milk 3/4 cup buttermilk 2 tablespoons lemon juice 1/2 cup mayonnaise How to make: First core the cabbage and shred the cabbage fine using the fine disk for the shredder attachment to the mixer. Then shred the cabbage. In a bowl combine with a whisk combine the buttermilk, mayonnaise, milk and lemon juice mix till well combined. Then add the seasoning. Homemade “KFC” Coleslaw Slaw 3 medium carrots, trimmed 1 head of green cabbage, cored and cut into chunks 1/2 small head of red cabbage, cored, optional 2 tbsp minced onion Dressing 1/2 cup light mayonnaise (preferably Best Foods or Hellman’s brand) 1/3 cup sugar 1/4 cup milk 1/4 cup low fat buttermilk 2-1/2 tbsp freshly squeezed lemon juice 1-1/2 tbsp white vinegar 1/2 tsp salt 1/8 tsp pepper How to make it : Place the carrots in the food processor and pulse several times to get them to a medium chop. Add the onions and pulse a couple more times. Then add the cabbage to the carrots and onions. Pulse until everything is the same size and texture. Alternately, you can use a sharp knife and chop all of this by hand. Transfer to a large bowl. Combine all the dressing ingredients in a medium bowl, whisking well to thoroughly blend. Pour dressing over the slaw and toss to coat well. Cover and refrigerate for at least 4 hours to overnight before serving to allow the cabbage to soak up the marinade.
