Ingredients: 6 medium potatoes, peeled and thinly sliced. 1 large onion, thinly sliced. 5 eggs. 1/4 cup chopped fresh parsley. 1/4 cup chopped fresh cilantro. 1/2 teaspoon ground turmeric. 1/2 teaspoon ground cumin. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 cup olive oil.
Instructions: Preheat the oven to 375F 190C. In a large bowl, mix together sliced potatoes, onions, eggs, parsley, cilantro, turmeric, cumin, salt, and black pepper until well combined. Heat olive oil in a large oven-safe skillet over medium heat. Pour the potato mixture into the skillet, spreading it out evenly. Cook for 5-7 minutes until the bottom is set and lightly golden.
