I would like to think that when Sam gets flustered he mixes up his languages. He always starts in English, but it ends up mixed with Latin and Enochian. If he is really flustered a little bit of Greek slips out.

Dean, of course, doesn't understand what Sam's trying to say. He catches a few bits but really Sam? Greek and Enochian? What has you that flustered?

Cas understands it perfectly and used to be confused until he picked up it's a social cue of Sam being embarrassed.
