Ok here are my tacos from last night (ignore the keyboard in the background) and I want to give the recipe for the homemade salsa because it’s so yummy for literal pennies.
Something about homemade fresh salsa just tastes so much better than store bought, or even canned. Sadly I do not have fresh tomatoes lying around all the time, especially in winter so here’s what I did.
1/4 can of diced tomatoes, drained well
3 Tbsp frozen corn, heated slightly to cook it, drained
1/2 tsp salt
1/2 tsp pepper
3 squirts chipotle hot sauce (add more for more spice)
1/4 onion finely minced
1/4 red pepper finely minced
2 cloves garlic minced
1 tsp lemon or lime juice
Optional: drained canned pineapple.
Mix together in a bowl until well combined. Serve on chips or in tacos.
The only truly fresh ingredients are the onion and the pepper, and garlic, but seeing as I have those on hand all the time, it’s a cheap, fast option for when you want a fresh salsa but don’t have time/funds/access to go to the grocery store.

Dec. Sunday 18th,
We had our first event in San Antonio which went amazingly. We sold out of our Chipotles en Vinagre and sold a lot of Chipotle Salsa. Can't wait to come back to Rumble SA next month to sell some more.

August 2024: The Wasteland, Harvest, Salsa & Why?
In this previous post, I mentioned collecting a water lily seed head. I dispersed the seeds in The Wasteland rivulet (It is marked by that spot where the tree line extends the furthest into the field). If they take off, the lily pads would provide great cover for the local amphibian population:

I made salsa tonight to go with our tacos. The recipe I use calls for half of a Bell Pepper & 5 Jalapenos but we didn't have any Jalapenos so I used 5 Shishito peppers (They have a similar heat to Jalapenos) & an Anaheim:
Homemade salsa made with almost all homegrown ingredients. The only thing that isn't our is the salt, red wine vinegar & cilantro. I wish the cilantro had been ours but, for us, cilantro is a Spring & Fall crop. We had some cilantro try to come up from seed on its own but the August heat caused it to whither:
Why? I thought half sheets were a dumb idea but this a step beyond. Never in my life, have I made a mess that only required a toilet sheet sized piece of paper towel. When I make an ass, it is Brazilian butt lift sized. I'm lucky if one full sheet of paper towel will suffice. This is how I know the concept of consumer driven economics is bullshit because I don't know of anyone who needed this. I can't even conceive of how this could save the paper towel manufacturers money. Who the hell asked for this?:

Salsa! 🧑🍳
Baby approves. For like 4 servings of nachos
Ingredients:
250 g cherry tomato
2 small red onion
3 gloves of garlic
Salt and pepper and all round spice (i use the Santa Maria one)
1 bell pepper or the sweet chili looking pepper that isn't a chili (I think they're call snack peppers)
10-ish g butter or oil for frying
Optional chili
How to:
Peel and small dice all vegetables
Heat oil/butter in a small pot, add pepper
When oil/butter is hot and pepper is sizzling, add onion and fry until soft
Add tomatoes and salt and simmer until sauce consistency (takes a good 30-40 minutes at medium low heat)
Add minced garlic and all round spice and simmer a bit more
Add bell pepper and taste test (I guess you'd add your chili pepper here, too)
Cover and put in fridge overnight to let flavors truly soak into each other (or just an hour or so if you're in a hurry)
