If You Eat Shrimp, You Should Really Know Why It Turns Pink
Shrimp, before its cooked, is a very unappetizing gray-blue color. This color, it turns out, is the exoskeleton (you know, the shrimps external skeleton).
Now, to explain how that exoskeleton turns pink we have to get scientific on you. Here we go: the exoskeleton contains carotenoids (which are pigments) called astaxanthin. It is these carotenoids that are what give salmon its pink color. Before the shrimp is cooked the astaxanthin is covered by protein chains called crustacyanin. The protein chains in fact wrap up the astaxanthin, concealing its lovely pinkish-red color.
But heat loosens the hold these protein chains have on the carotenoids and releases the astaxanthin, turning the shrimp its lovely shade of pink. This is the same reason lobsters turn red when you cook them.
One more fun fact: if youve ever heard that flamingos are pink because they eat shrimp,its because of this same carotenoid. While flamingos eat shrimp that still appear blueish gray (they dont have the luxury of cooking them before eating), the crustacyanin protein chain dissolves in digestion releasing the carotenoid that makes flamingo feathers more pink.

Easy Weeknight Meals
These easy weeknight meals rely on a lot of fridge, freezer and pantry staples so you should be able to make them fairly quickly for lunch or dinner at almost any time!
Hi friends!
I’m here with some easy weeknight meal ideas for you! Last week I shared 25 Easy Pantry and Freezer Meals and a lot of people found them helpful for quick dinner ideas so I wanted to give you some more! I’ve included a few links but for the most part these are just general recipe directions for inspiration. If you see one that sounds good and you need a more specific recipe, just search the title in red on Google or Pinterest and I’m sure lots of options will pop up!
Easy Weeknight Meals
The titles in red are NOT links…just recipes titles followed by a general description (I did include a couple of links to recipes already on the blog)
Peanut Noodles – Roast whatever veggies you have a cook some chicken (or sub a can of white beans). Mix with cooked rice noodles or ramen noodles. Combine peanut butter, soy sauce, maple syrup, and a little broth to make a sauce and toss to coat. Add sriracha for a kick. These Instant Pot Asian Noodles are my favorite.
Italian Beef Skillet – Cook ground beef in a skillet with garlic and Italian seasoning. Add some cooked lentils (or use all lentils if you don’t have meat. Stir in a can of diced tomatoes (including the liquid in the can) along with some fresh spinach or kale and some crumbled feta. Serve with pasta, rice, quinoa etc.
Fajita Potato Nachos – Saute chicken, peppers, and onions in a skillet with taco seasoning. Serve over roasted potato slices and top with cheese. Or skip the potatoes and serve over chips, or make traditional fajitas.
Sundried Tomato Pasta – Cook chicken in a skillet with garlic and oil. Mix in cooked pasta, chopped sundried tomatoes, and some chili flakes.
Shrimp Scampi – Saute shrimp in butter, garlic, and oregano. Serve over spaghetti or zoodles and top with fresh lemon juice! I make this Paleo Shrimp Scampi all the time!
Sheet Pan Greek Chicken – Put chicken thighs, diced potatoes and green beans on a baking sheet. Top with greek seasoning and slices of lemon and bake at 400 F until chicken reaches 165 degrees.
Hawaiian Chicken Sliders – Combine chicken, diced canned pineapple (plus juice), diced red pepper and some bbq sauce in the crockpot and cook on low for 6 hours. Shred chicken, put on slider buns and top with cheese.
Hamburger Helper – Cook ground beef in a skillet with a can of Rotel, a drained can of corn and a can of ranch style beans. When beef is cooked, mix in cooked elbow noodles and serve.
Crack Chicken – Put chicken, a block of cream cheese, a packet of ranch seasoning, some shredded cheese, some chopped bacon, and a little chicken broth in the crockpot and cook on low for 6-8 hours. Make a Mexican version with this Slow Cooker Creamy Mexican Chicken. Or for something less creamy try this Crockpot Cilantro Lime Chicken.
Chicken Noodle Casserole – Mix cooked chicken and cooked egg noodles with a can of cream of mushroom soup, a bag of frozen veggies and a little chicken broth. Top with crushed potato chips. Bake until bubbly.
Unstuffed Cabbage Rolls – Cook ground beef, garlic and onion in a dutch oven and drain grease. Add a bag of coleslaw or shredded cabbage, a can of tomato soup and a little water. Bring to a boil, cover and reduce heat to simmer for 30 min or so. Stir in some cooked rice if desired.
Fried Rice – Saute chicken and frozen veggies. Add cooked rice and soy sauce and mix. Push to the side, scramble a few eggs and mix it all together for fried rice.
Breakfast For Dinner – Try these Egg in a Hole Breakfast Sandwiches, some Red Lentil Pancakes with fruit and yogurt or these Banana Flax Waffles.
Dijon Salmon – Top salmon with dijon mustard or hummus and breadcrumbs (or crushed nuts) and bake. Serve with sweet potatoes or rice.
Mexican Zucchini Boats – Slice zucchini lengthwise and scoop out the middle. Stuff with cooked ground beef and/or black beans, corn, taco seasoning, and shredded cheese and bake.
Chicken Pot Pie – Cook garlic, chicken, potatoes and frozen mixed veggies in a skillet with butter for 10 min. Sprinkle with a couple of tablespoons of flour. Add some chicken broth, bring to a boil and then simmer until potatoes are tender. Add a cup or two of milk, pour into a baking dish, top with a sheet of puff pastry and bake. Sub chickpeas for chicken if you want!
Chicken Tenders – Make your own chicken tenders or nuggets, or pull a batch of these Freezer Chicken Tenders from the freezer and serve with steamed veggies and mac and cheese.
Easy Grilled Chicken – Marinate chicken in a mixture of garlic, oil, red wine vinegar, and honey. Grill and serve with veggies and your favorite starch.
Breakfast Loaded Potatoes – Mix scrambled eggs with black beans, salsa, and cheese and use to topped baked potatoes or sweet potatoes.
Baked Ziti – Cook ground turkey or beef. Mix with cooked pasta and a jar of pasta sauce (and spinach if you want). Spoon into a baking dish, top with mozzarella cheese and bake until bubbly.
Hummus Chicken Wraps – Make this shredded hummus chicken and throw it in a tortilla with any veggies you have on hand. Serve with fruit!
Crockpot Roast Chicken – Put a whole chicken (or a pot roast) in the crockpot with carrots, potatoes and a cup of broth. Top with a packet of onion soup mix and cook on low for 6-8 hours.
Zuppa Toscana – Cook Italian sausage, onion, garlic, diced potatoes and bacon in a dutch oven. Add broth, bring to a boil, then simmer until potatoes are tender. Add some heavy cream and fresh spinach if you have it.
Egg Wraps – Make these easy egg wraps and fill with cheese, turkey, avocado, leftover chicken etc. Whatever you have on hand!

Best Bakery On The North Shore Of Kauai - Kilauea Bakery
One of my favorite bakeries on the north shore of Kauai is the Kilauea Bakery. Nestled in the courtyard of the Kong Lung Shopping center, it is a perfect stop before or after your trip to the Kilauea Lighthouse.
For breakfast, the Kilauea Bakery has a wide selection of Hawaiian style Danish and French pastries. Choose from lilikoi, guava, coconut, chocolate or cinnamon croissants, scones, or eclairs. Their macadamia nut sticky buns are a local favorite. Or, have a toasted fresh bagel with one of their specialty spreads (olive tapenade, sun-dried tomato pesto, salmon cream cheese, ulu (breadfruit) hummus, artichoke blue cheese) for a savory choice. The breakfast stromboli, fritatta or ham cheddar rolls are other options from which to choose.
This photo was taken at about 11:00 after many of the pasties had already been bought, but you get the idea.
From 10:30 AM to 9:00 PM, Kilauea Bakery offers limited lunch & dinner choices. The specialty pizzas are unique. They are made with a semolina crust, or a gluten free crust made with local breadfruit for an additional $2.95. All meats are natural. Here are a few examples:
ISLAND STYLIN’
Smoked ham, fresh pineapple, chipotle peppers, garlic and mozzarella cheese.
CLASSIC SCAMPI
Shrimp, tomato, roasted garlic, capers, squeeze of lemon, asiago and mozzarella cheese.
BIG BLUE
Smoked ono (local fish), tomatoes, capers, garlic, parsley and mozzarella cheese.
PROVENCAL
Sun dried tomato, garlic, basil pesto, roasted onion, mozzarella cheese and asiago cheeses.
PESTO MYSTIC
Basil pesto, fresh mushroom, roasted onion and mozzarella cheese.
BILLIE HOLIDAY
Smoked ono, spinach, roasted onions, gorgonzola rosemary sauce and mozzarella cheese.
BIG MEAT COMBO
Smoked ham, pepperoni, Italian sausage, roasted onion, pizza sauce, and mozzarella cheese.
BARBEQUED CHICKEN
Barbequed chicken thighs, roasted onions, roasted red peppers, mushrooms and mozzarella cheese.
Specialty pizzas run from $17.95 (small) to $32.95 (large).
If one of these choices doesn’t sound appetizing, build your own with the traditional pizza menu. Start with a mozzarella cheese pizza and add any of the many toppings they have to offer.
Kilauea Bakery also offers calzones, homemade hearty soups and stews, a panini of the day, an organic baby greens salad, as well as large pizza slices.

Hawaii - Land of Rainbows
“Aloha is more than a greeting or salutation. It is a condition, a way of life, a mind-set and an attitude.“
Hawaii is everything you dream about and more! I’ve had the pleasure to visit Oahu and Maui already. Kauai is next on my list. I want to share some of my tips and impressions while I can’t wait to go again myself!
Places To See & Things To Do
If you’re travelling to Hawaii, you’re hopefully a nature lover because this place will blow your mind! Make sure to have cash on you for entrance and parking lot fees. Also: different from what you’re used to, places such as blowholes and cliffs are not necessarily fenced off. Don’t endanger your safety for the best selfie!
OAHU
Makapu’u Point, Kalanianaole Hwy, Waimanalo Great views of the coastline and the ocean. There’s also a tiny lighthouse that you can spot on your way up, just follow the trail!
Diamond Head, Diamond Head Rd, Honolulu Diamond Head is a volcanic tuff cone, close to Honolulu. You can even walk there if you want. The hike is easy, an about two hour roundtrip and you’re rewarded with a beautiful view from the top. Entrance fee: $1 per person or $5 per car. Cash only!
Manoa Falls, parking lot located at the end of Manoa Road, Honolulu Getting to the falls requires a short hike through the surrounding rainforest. Definitely touristy, but that also means that the trail is well-maintained and it’s easy to find. It’s so crazy, though! You take a twenty minute drive from Honolulu and then you’re standing in the middle of a rainforest #mindblown Bring rain coats/umbrellas!
North Shore That’s where the surf action is at! Definitely worth the track across the island. If you’re there around November/December definitely keep a look-out for the Vans Triple Crown of Surfing. You’re chance to watch the world’s best surfers in their natural habitat! Parking is an issue during that time, use public transportation or the hourly shuttle from Turtle Bay Resort if possible!
Football Game at Aloha Stadium, 99-500 Salt Lake Blvd, Aiea Loved the atmosphere! I don’t have the opportunity to watch football games at home so I enjoyed it a lot. And the team from the University of Hawaii sure has the best name: Rainbow Warriors!
Snorkeling at Hanauma Bay, 7455 Kalanianaole Hwy, Honolulu The area is pretty crowded with tourists but once you put your snorkeling gear on and your head under water you understand why this place is so popular. I’ve never had the opportunity to see so many different kinds of fish (and pretty large ones, too!). Make sure to not step on the reefs. It’s a nature preserve and reefs are very fragile ecosystems (Don’t worry, though! You will get an introduction beforehand telling you all about that). You can rent snorkeling equipment and they have lockers for your valuables (for a fee).
MAUI
Ali’i Kula Lavender Farm, 1100 Waipoli Road, Kula You can smell the lavender scent from the foot of the mountain. Such a serene place, it’s like wellness for your mind and lungs. You can just wander around the farm or do a guided tour. They also have a small shop where you can buy everything lavender-related. How about lavender jam?
Haleakala National Park Very popular to watch the sunset from the summit at 10,023 feet! I went there during the day and it was just as stunning. The ground is a rich red-brown, rocks strewn all around – it’s like walking on the moon. It was pretty cloudy but when it cleared up, it was possible to see all the way to the ocean. Due to the elevation, the temperatures are quite chilly up there. Be sure to pack some warm clothes!
Road to Hana The Hana Highway is 64.4 miles long, connecting the cities of Kahului and Hana. It takes you about five hours to go there and back without any stops, so plan for more time and make sure to bring enough food and drinks. Last chance to buy what you’re missing for the road is in Paia, for example, at the Hana Picnic Lunch Company, 99 Hana Hwy. This will keep your brain cells working and you will need them on this winding, sometimes only one lane wide road. With all the bridges you have to cross, there are some major Jurassic Park-vibes going on. Make sure to stop at the Upper Waikani Falls (around mile marker 19)!
Horseback Riding at Ironwood Ranch, 22 Hui A Naplili, Lahaina They offer amazing tours around the area. Our guide was super nice and knowledgeable about the landscape and the plants growing there. Horses were well-nurtured and in a good condition. They are probably so well-cared for because of their famous namesakes: Meet Justin Bieber and Lady Gaga everybody!
Fleming Beach, Lower Honoapiilani Rd, Lahaina All you need for your day at the beach: Nice secluded area, sand, shade & the ocean!
Nakalele Blowhole, Honoapiilani Highway (Hwy 30, between mile marker 38 & 39) This place very much is a spectacle of nature; the ocean crashing against the cliffs created ragged rock formations. The blowhole is just the cherry on top! Be sure to not get too close. This is best admired from afar.
Historic Walking Tour, Lahaina If you’re interested in the history of Hawaii, you can do a free walking tour. Just find the map online and then discover the city and the tales of Hawaiin kings and queens on your own.
Food & Drinks
Hawaii is not the cheapest place in the world as a lot of the food has to be imported but there are still a lot of great places that won’t ruin your vacation budget. Be sure to take advantage of being on a tropical island: give the pineapples and bananas a taste and try the fresh fish and the homegrown coffee!
OAHU
Island Vintage Coffee, located in the Royal Hawaiian Center, 2301 Kalakaua Avenue #C215, Honolulu One of my absolute favorites! Amazing choice of dishes, always fresh, always delicious. And you haven’t lived if you haven’t tried their coffee (Kona coffee is what it’s all about, peeps!) Also my first time trying a Poke Bowl. Loved it! Beware: Food is only served until 3 pm! Recommendations: Original Acai Bowl, Breakfast Plate, Shoyu Salmon
ABC Store, Honolulu You can probably find one around the next corner. They are literally everywhere! Great to grab a quick snack and something to drink for your day at the beach.
Giovanni’s Shrimp Truck, 66-472 Kamehameha Hwy, Haleiwa People rave about this place! Even though I’m not much of a sea food person myself, I had to try it. Just went for the ‘Shrimp Scampi’ and it was nothing short of amazing! Cash only!
Matsumoto Shave Ice, 66-111 Kamehameha Hwy, Suite #605, Haleiwa Yes, there are loads of tourists there. Is it worth it? As you can’t leave Hawaii without trying shave ice: Definitely! Just order your favorite rainbow colors in ice form.
Surf N Turf Tacos, 2310 Kuhio Avenue, Suite #100, Honolulu The place is small but don’t let that fool you: It has one of the best fish tacos!
Heavenly Island Lifestyle, 342 Seaside Avenue, Honolulu Great décor to float your vacation boat, outdoor & indoor seating, the friendliest staff! Local and organic food and they have amazing & inexpensive drinks as well!
MAUI
Paia Fish Market Restaurant, 632 Front St, Lahaina Fresh fish every day! One of the perks of being on an island. Try the ‘Cajun Style.’ Super tasty!
Aloha Mixed Plate, 1251 Front St, Lahaina Great selection of food and drinks! What makes this restaurant so special is the torch-lit outdoor seating, directly by the ocean.
Bad Ass Maui, 671 Front St, Lahaina Another place for your Kona coffee cravings and it is as good as its name suggests. The shop is quite small so keep your eyes open. You can also do some shopping while you’re at it: mugs, clothing, hats… whatever is still missing in your souvenir collection!
I hope I could induce some excitement with this little compilation. It’s also worth mentioning that the people are so, so friendly. Everyone is relaxed, even in places such as Honolulu, which can get really busy. You have the impression you’re a long way away from the mainland (both literally and mentally).
