COOK — All roads will soon be heading to Cook on Saturday, Dec. 1, to celebrate Trinity Lutheran Church’s Sixth Annual Lutefisk (pronounced “looootafisk”) & Meatball Dinner from 4 – 7 p.m.

Well, perhaps not exactly all roads, but at least many roads and many travelers will be headed here near our new lighted sign. Travelers won’t be coming here to just enjoy our delicious, aromatic fish from “The Men Behind the Fish.” Actually, most of them will also be seeking homemade lefse (pronounced lefsa), tasty, well-made and prepared by Trinity’s “Lovely Lutheran Lefse Ladies.”

Similar to other nationalities’ favorite staple food groups—American/Italian pizza and beer or American/Mexican tacos and guacamole—to true Scandinavians (especially Norwegians and Swedes), “eating lutefisk without lefse is like having a hug without a kiss.”

Yes, lefse is an essential, absolute traditional Norwegian and Swedish dietary food group that must be served with lutefisk!

You may ask, what is lefsa? What is its history? How is it made and served? What are some traditions and memories related to lefse? What are its alternative uses? These are all good questions, and while all of the answers to these questions are not the same, they’re definitely not FAKE NEWS.

Sometimes referred to as Norwegian America’s holy bread, lefse is traditional flat bread (also called kraatekake, lopse, lumpe, kline, klinge and other. (And you thought our English language is confusing.) It’s a flat, round wafer-like bread shaped thin and soft. Sometimes, it is thick and soft with some varieties being thin and crisp. Potatoes are the most common base material in this humble potato bread delicacy, but some recipes are made with yeast. (Are you still with me?)

While some Norwegian-Swedish Americans talk of family traditions extending five generations, Norwegian historians and senior academic librarians generally talk about potatoes arriving in Norway around 1750. The potato was a helpful addition to the Norwegian diet because of a rampant scurvy and vitamin C deficiency in Norway at the time; the potato is reputed to be a good cure for this. (While this may be true, I’ve personally never heard of mothers, Norwegian or other, lecturing their children to eat lefse so they won’t get scurvy.)

Numerous special (and sometimes secret) generational family lefse recipes exist, along with a growing number of publicly printed recipes on the internet, including YouTube videos. Lefse is also commercially available and can be purchased at supermarkets, specialty food stores and online.

While promising not to divulge their recipes or lefse-making secrets in this article, there are nevertheless some very accomplished Lovely Lutheran Lefse Ladies at Trinity Lutheran in Cook who, in total, have many decades of proven performance. Some started making lefse when they were only 10 – 12 years old, learning from their mothers and grandmothers. Others learned to make lefse in their 20s, 30s and later from friends and other parishioners.

Last year, some Bible Quest students at Trinity, ages 5 – 12 years old, were taught how to make lefse. The boys and girls were very enthusiastic. Some of the girls (around 8 years old) told the instructors that they already knew how to make lefse and “had been making it their whole lives.” Plans are to do this every year at Trinity so the tradition of making lefse can continue into future generations.

Lefse making is an art that takes a lot of preparation, skill and materials. Many people have their own unique ways of preparing and making lefse and feel their ways are the best. And, while the basic ingredients are usually much the same—basically real potatoes (often Russets but, sometimes, simply potato flakes), butter, whipping cream and salt, the processes or techniques may differ.

Some folks make lefse pieces as large as the entire grill, while others make the pieces smaller. The goal is uniformity in size and not letting pieces get overcooked on the grill. One lady said her kids liked to stand around and wait for the rejects so they could eat them.

Another lady mentioned that her 3-yearold grandson was napping one day while she was making lefse. When the little guy awoke and saw all of the lefse on the table, he said, “nummy, nummy, nummy.” She added that her grandchildren liked to bring lefse to school for snacks.

Utensils for making lefse are often pretty simple, consisting of a lefse grill, rolling board and cover, rolling pin and a lefse turning stick (a long wooden spatula, aka a “sword”).

Today, temperature-regulated grills (“lefse bakers” or takke in Norwegian) are becoming more common to ensure better efficiency and improved uniformity.

In the early days, traditional Norwegian bread was rolled out with a grooved pin and baked on round iron plates over an open fire. The baking process later evolved into using wood cook stoves. One lady commented she knew an amazing older friend who fried lefse on top of her wood stove and knew exactly when to put the next piece of wood in the stove to keep it hot enough.

Another lady told me that one of her earliest memories of lefse making was when she was 8 years old watching her mother rolling out the lefse dough with a rolling pin her dad had made. Her mother baked the lefse on a very hot cook stove so it became very crisp. The lady said that this process at their home started in the fall as soon as it was cold enough to require heat in the house and lasted until spring.

She added that her mother took a stick from the bottom of a window shade and shaped one end of it to use as a lefse turning stick. Further, she commented that the same recipes that were handed down from her grandmother, to her mother, to her and now to her daughters are still being used today. Like in many Norwegian and Swedish-American families, these recipes are very secret and very well protected.

To ensure that these guarded recipes are kept secret, I’m told that some grandparents tell their children their lefse dough will always become sticky and rough if they “spill the beans” and let the secret out. Perhaps the old fear of “loose lips sink ships” originated with Norwegians who transported lefse in their Viking ships … Hmmmm.

As many as there are different ways to make lefse, there’s an equally number of ways to serve lefse. One way to serve lefse is to serve it nude (no, not the server, but the lefse is served plain without any toppings or dressings).

A second common way around here is to fold it and serve it with butter and sprinkle it with sugar and cinnamon. A similar third way is to spread lingonberry jam, apple butter or turkey stuffing on top of the lefse.

For more adventurous lefse connoisseurs, there’s always the “works” — lefse pieces adorned with turkey, potatoes, gravy, yams and cranberries. (Well, I think you get the idea—almost anything goes on lefse that pleases your palate.)

In addition to being a favorite culinary delight, lefse has some very practical and useful purposes. For example, just to name a few, lefse can be given as a Christmas present to friends, for repairing soles on shoes, for missing shingles or tiles on houses, as flying discs, for dinner plates, for patching potholes and limitless other uses. Just use your imaginations.

In addition to lutefisk with white sauce and/or melted butter and lefse, our menu includes meatballs, potatoes and gravy, green beans, rutabaga, homemade bread, cranberries, pickled herring, desserts and more.
