Mutton Biryani nee’ Pulao
“A life that touches others goes on forever”
Today, Feb 11th marks the second death anniversary of my mother-in-law, Mrs. Pushpa Bhutani. The recipe that I am sharing today was learnt by watching her make it and was practiced under her watchful eyes. It is nowhere near the original but the attempt to recreate it every time refreshes our memory of Mummy and each time, my husband loves to tell us about the original creator of the dish…Mathur aunty, their neighbour when they lived at Moti Bagh in Delhi. He tells us that whenever Mathur aunty made her famous mutton biryani, the fragrance would engulf the entire block of flats and the children would start salivating…in fact, it was a standing and an open invitation to all the kids in the neighbourhood to have their meal at the Mathur household that day…an invitation they never refused!
The idea of celebrating Mummy’s life and all that she meant to us came from my daughter, Ridhima.  She encouraged me to write this post and the credit for clicking all the pictures while I made the biryani goes to her.
My mother-in-law left us at a ripe age of 87 but for the last couple of years of her life she was quite oblivious to what was happening around her. Owing to dementia, her memory and communication became impaired but, at times, one could see a glimmer of recognition in her eyes when her loved ones were around.
She was a simple woman, a devoted wife, a mother who tried to do the best for her children, a loving grandmother and to me; she was a mentor in many ways. We had our moments of disagreement but I will always treasure the memories of her childhood that she shared with me, just before she slipped into her own world. May her soul rest in peace!
About the dish, if we go into the technicality, then this dish is not a biryani but a pulao, a rice preparation in which the rice is cooked in the stock with spices, meat or vegetables. Biryani, on the other hand, is a preparation in which the rice is cooked separately, then mixed/layered with meat or vegetables and cooked in its own steam. Let’s get to the recipe now…
MUTTON BIRYANI NEE’ PULAO
Ingredients: (Please note: The quantities are all approximations and can be modified as per taste)
1. Mutton pieces with bones , preferably loin chops & ribs – 1 kg (cleaned and washed) 2. Onions – 10 medium sized ones (sliced length-wise) 3. Garlic – 10 to12 cloves (peeled and chopped finely) 4. Ginger – Appox. 40 gms (peeled; half chopped finely and other half sliced into thin slivers) 5. Black peppercorns– 10 to 15 nos. 6. Cumin seeds – 1 tsp. 7. Black cardamom – 4 to 5 nos. 8. Cloves – 4 to 5 nos. 9. Cinnamon – 1 inch piece (2 nos.) 10. Bay leaves – 2 nos. 11. Salt to taste 12. Red chili powder to taste 13. Garam Masala – 1.5 tsp. 14. Refined Oil – 2.5 tbsp. 15. Basmati Rice – 500 gms. (appox. 2.5 cups)
For Garnish (optional): 2 Onions, sliced & fried till golden brown in colour
Method:
• Take a pressure cooker, add 1.5 tbsp. oil and let it heat. • Once it’s hot, add half the quantity of all the whole spices (#5 till #10). When the spices begin to splutter, add half the quantity of sliced onions, the chopped ginger and garlic. Fry till light brown. • Add the washed mutton pieces, a little salt, red chili powder and let it cook together for a while. • After about 10 minutes of cooking, add a cup of water and close the lid of the cooker. Allow at least 2 whistles to blow and then switch off the flame. Allow it to cool. • When cool, open the pressure cooker and drain the stock and mutton pieces in two separate pans. • Remove the bay leaves but leave rest of the whole spices along with the cooked mutton. • At this point, take the rice, wash it well (at least 3 times) and soak it in equal quantity of water, i.e. 2.5 cups. • Take a large bottomed vessel or kadhai (preferably with a well-fitted lid) and pour 1 tbsp. oil in it. When the oil is hot, put the remaining whole spices one by one in this order – black pepper, cumin, cloves, cinnamon and black cardamom. To ensure that they don’t get burnt, lower the flame when you add the spices. • Next add the remaining onions, garlic and sliced ginger. Fry till they turn light brown. • Add the mutton pieces and cook on slow flame till tender and well carmalised. Add salt, red chili powder and garam masala to taste. • When the meat starts falling off the bone, its time to add the stock that you had kept aside. • A note here about cooking rice – normally good quality basmati rice will require about half an hour soaking time and twice the amount of water to cook. • So, for the quantity of rice that we are cooking, we will need 5 cups of water. Measure the quantity of stock that you have and add the remaining water to the mutton to make it 5 cups. • Once the stock comes to a boil, add the rice, mix and cover it with a lid. • Cook the rice on low flame. Keep checking to see if its done but do not open the lid too often as the fragrance might be lost. • In case the stock has dried up and the rice is still not done, keep the pan/kadhai on an iron griddle/tawa and leave it on slow heat for a few minutes. • Open the pan only when ready to serve. • Biryani tastes best with Pudina/Mint Raita.

Every year, January 13, people in biting cold, light fire, sing folk songs including the ones celebrating the spirit of Dulla Bhatti – the legend, who saved girls from abduction, and helped them get married. This merriment is also a site for some lip smacking delights, so we share a few recipes, which are sure to brighten your mood up. Gazak ice cream, caramel popcorn Ingredients: 250gms vanilla bean ice cream, 150gms peanut gazak , 20gms corn, 100gms sugar and 1 gm saffron. Method: Fine crush 100gms peanut gazak in a blender. Keeping some aside for the garnish, mix the rest of it with saffron and vanilla ice cream in a bowl and refrigerate for two hours. Keep the pan on a medium flame and add some corn and sugar in it. Cover the pan until they pop and keep it aside. For the plating, take out two scoops of gazak and saffron ice-cream in a bowl and garnish it with gazak and caramel popcorn. Sarson ka saag and Makke Ki Roti Sarson ka saag Ingredients: 150gms sarson saag, 150gms spinach, 30gms green chillies, 30gms ginger, 100gms tomato puree, salt (as per taste), 40gms desi ghee, 5gms jeera, 5gms kitchen king and 5gms deggi mirch. Method: Wash the spinach and boil it in a cooker. After it’s perfectly boiled, put it in a mixer to prepare its puree. Take a pan, add then some ghee, ginger and green chillies. Add tomato puree and let it cook for a while. Then add the pureed spinach and cook it. Season it with salt and deggi mirch. B0057XSX7M, B072NDTTTG Makke Ki Roti Ingredients: 100gms makki ka atta, 50gms mashed potatoes, 3gms kasoori methi, salt ( as per taste), pinch of deggi mirch and 20gms desi ghee. Method: Take makki ka atta and boiled mashed potatoes, green chillies, chopped coriander leaves, dried kasoori methi and salt. Knead the makki ka atta with mashed potatoes and other ingredients. Just add a few drops of hot water while kneading the dough and let it rest in the fridge for 30 mins. Take out the dough and divide into desired size and with the help of rolling pin roll out the roti. Now put this on the tawa and apply ghee on both sides. Til ke laddoo Ingredients: 500gms Sesame seeds (Til seeds), 500gms Nolen gur, 250gms desiccated coconut, 100gms honey. 250gms roasted peanuts, 200gms roasted cashew nuts, 10gms cardamom powder and 70gms desi ghee. Method: Keep a flat nonstick Kadai on medium heat. Add sesame seeds in it and dry roast them till the seeds change color. Remove and keep it aside. Dry roast the peanuts till they’re brown and keep them aside for cooling and ground them into a coarse mixture. In the same pan, dry roast the desiccated coconut till it is golden brown and keep it aside, and then repeat the same process with cashew nuts. Mix all the ingredients together with cardamom powder and keep it aside. B07RL5X1PB For the jaggery syrup, heat the kadai and add the powdered jaggery with one cup of water and keep stirring till all the lumps are mixed and reaches a soft boiled stage — which means when you add a drop of jaggery syrup on the table it has to stay in the shape of a drop and not spread. Once you remove the jaggery out it should be sticky and have the soft ball shape. At this point switch of the flame, add the dry roasted mixture carefully and mix well. After waiting for a few minutes, apply some ghee on to your palm and start making small balls and keep it on a plate to retain its shape. New Delhi: Inspired by the growing use of its video conferencing app Meet - 30 lakh new users joining the platform daily - Google on Wednesday announced to make its premium video meeting app free for everyone in social distancing times.
The free availability of the Meet app will roll out globally including in India in the coming weeks.
"With Google Meet becoming free for everyone, individual users will be able to host meetings with up to 100 participants and the meeting length is going to be 60 minutes, but we are not enforcing it until September 30," Smita Hashim, Director, Product Management, Google Cloud, told IANS.
According to Hashim, Google Meet is secure and reliable and overtime, "we expect our Hangouts users to switch to Google Meet".
"We make certain essential services free. For Google Meet, we do not have plans to monetise it. We hope video conferencing will continue to be an essential service," she said, adding that the company plans to bring more changes to the layout of Google Meet in the future.
Since January, Google has seen Meet's peak daily usage grow by 30 times.
Meet is currerntly hosting 3 billion minutes of video meetings and adding roughly 3 million new users every day.
"As of last week, Meet's daily meeting participants surpassed 100 million," informed Javier Soltero, Vice President & GM, G Suite.
"Your Meet data is not used for advertising, and we don't sell your data to third parties," he said in a statement.
Starting in early May, anyone with an email address can sign up for Meet and enjoy many of the same features available to our business and education users, such as simple scheduling and screen sharing, real-time captions, and layouts that adapt to your preference, including an expanded tiled view.
"Beginning next week, we'll be gradually expanding its availability to more and more people over the following weeks. This means you might not be able to create meetings at meet.google.com right away, but you can sign up to be notified when it's available," informed Soltero.
Google said it does not allow anonymous users (without a Google Account) to join meetings created by individual accounts.
"Through September 30, we're providing G Suite Essentials and all of these advanced features free of charge," the company added.

When Mahatma Gandhi, the father of the nation, visited Ghorghat village in Bihar’s Munger district in 1934, the villagers wished to gift him a lathi.The Mahatma said he would accept it only under one condition — the villagers would have to stop making lathis in the interest of the nation as it was the Britishers’ weapon of choice against unarmed freedom fighters.At that time, Ghorghat made and supplied lathis all across north India. The villagers readily agreed and Gandhi accepted their gift. Ever since, the village celebrates a ‘lathi mahotsav’ to commemorate the gifting of a lathi to the Mahatma.Their decision, however, did not stop the colonial rulers as they found other sources.Lathi-charge regularly made headlines during the colonial rule-- and it continues to do so 72 years after Independence, most recently as the anti-Citizenship Amendment Act (CAA) protests intensified across the country.The lathi was introduced by the British in the late 19th century and used extensively from the 1920s to the 1940s to crush dissent and disrupt protest marches by freedom fighters.“It was given to the colonial constabulary as most of them came from the peasant classes. They were specially trained in the use of lathi through proper drills. The lathi became a symbol of the British Raj,” says historian Anirudh Deshpande.In 1928, police officer James Scott lathi-charged a protest march led by Lala Lajpat Rai —hailed as the Lion of Punjab — against the Simon Commission. Rai suffered severe head injuries, which led to his death. But it had no sobering effect on the colonial police, and its use of the lathi as a weapon against freedom fighters only increased. In the 1930s, the British came up with a lathi drill for the police that consisted of commands such as “jabbing” (hitting people in the gut), “cutting” (targetting the neck and head).“There was a massive lathi-charge on the freedom fighters during the Dandi March led by Mahatma Gandhi,” says Deshpande.So brutal was the use of the lathi that Henry Noel Brailsford, a British left-wing journalist wrote an essay “India under the Lathi”, describing how the country was witnessing a repressive reign of lathi.“During the struggle for Independence, nationalists passively accepted the blows that the colonial police rained down on them, as a form of satyagraha. Their cause – the overthrow of the colonial state – was just, and this made the injustice of the assault on them more unjust,” he wrote.

It showed defiance of the youth in the face of the lathi’s tyranny.The lathi first originated as a martial art weapon in ancient India—and continues to be part of sports, drills, and parades.It has not just been a weapon of the police, but also many zamidars (feudal lords) who hired lathaits (men trained in lathi fights), often using them to keep a leash on tenants (worker- peasants), to grab land and collect rent. The more lathaits a zamindar had, the more powerful he was. Lathi’s significance in rural India is summed up by the popular adage — jiski lathi, uski bhais (The one who wields the lathi owns the buffalo).“The lathi was an integral part of peasant life. Trained ‘laithats’ from Bihar and UP were employed by zamindars in Bengal,” says Deshpande.The lathi continues to be a symbol of farmers’ power too in modern times – many farmer organisations and other outfits have often taken out what they call ‘Lathi Rallies’.An outdated weapon?Many believe that the police lathis should be replaced with shorter, lighter batons across the country. A case in point would be the recent riots in Hong Kong, when security forces were seen using arm-length batons.But Prakash Singh, former DGP of Uttar Pradesh Police, believes that as of now there is no perfect substitute to the lathi yet. “A policeman will have to get very close to a protesting crowd to use a baton, which is dangerous in Indian conditions. In India, the mobs are huge and violent,” says Singh. “But yes, the police should follow the proper drill of using the lathi. We were trained to move together in a formation when dispersing a mob. It helps push back the crowds without much danger to policemen. Lathis are not supposed to be used to beat individual protesters.”The Delhi Police says it has been phasing out the old wooden sticks since 2013. Today, it has about 85,000 polycarbonate lathis, and about 15,000 bamboo ones.Deepak Mishra, former special commissioner of Delhi Police, said that the Delhi Police switched to polycarbonate lathis due to supply constraints. “There wasn’t enough supply of bamboo lathis , which mostly came from northeastern states such as Assam and Tripura, so we shifted to polycarbonate lathis,” he said.However, a senior Delhi police officer, who asked not to be named, said one of the main reasons for phasing out the bamboo lathis is to reduce the chances of injury. “The impact of bamboo lathi sometimes may result in fatality if the person is hit hard on the head. Its impact is visible on the body as it leaves scars on the skin,” said the officer.But police constables still swear by “the good old’ bamboo lathi”.“It is wrong to assume that crowd control is the only use of lathis. Over the years I have used it to deal with unruly rickshaw pullers and auto drivers creating traffic jams. The bamboo lathi instills a fear, and my waving it menacingly more often than not resolves the problem, ” says a Delhi police constable not wishing to be named.Guarding with lathiKunwar Vikram Singh, chairman, Central Association of Private Security Industry ( CAPSI), says that the lathi is the most important tool in the private security guard’s kit—in most cases their only weapon.“In the past, guards on night duty used to move with a lantern in one hand and a lathi in other. For security guards, it is mostly an instrument of defence and not attack. Lathi is part of our training manual for security guards. The ideal length of a lathi is the height of the person using it for better manoeuvre,” says Singh.And like the police constables, most private security guards will tell you how a bamboo lathi helps them scare away the trouble makers. “I make sure that I whack the lathi on the ground every few minutes in the night to convey to potential thieves that I am armed and awake. The sound of big solid lathi hitting the ground keeps them away,” says Rajesh Singh, who is posted as a guard in a market in Noida. “I will feel very unsafe without it.”The lathi businessThere are wholesale traders on the outskirts of the city in places such as Bawana , Najafgarh, and Chhatarpur who sell lathis. They say they procure their lathis from Meerut , where there are some units that manufacture lathis.Deepak Gupta, who runs BambooMart in Samaypur Badli says that while police may be phasing out bamboo lathis, private security agencies still buy a lot of them.“Polycarbonate lathis have not affected our sales. Our lathis cost ₹50 to ₹80 depending on the size and quality,” he says.Anuj Gupta, owner of Roorkee-based GM Trading Company that supplies polycarbonate lathis to Delhi Police, says, “Bamboo lathis had many other issues such as finding a straight lathi of the right weight and thickness. Polycarbonate lathis do not have such issues. To make polycarbonatnate lathis, long pipes are cut into size as per demand. A handle and support are fixed and the lathi is ready,” said Anuj Gupta. British Airways is exploring the possibility of using 3D printers to create aircraft parts in the future. The 3D printers would be located at airports around the world to reduce delays for customers and emissions caused by transporting items. The airline’s innovators predict that non-essential cabin parts will be first on the list to be generated, including pieces of tray tables, entertainment systems and toilets.

While those components do not impact the safe operation of the flight, they can reduce the number of seats or toilets available for customers, and cause delays as engineers wait for the parts to be flown to wherever the aircraft is. New Delhi: Inspired by the growing use of its video conferencing app Meet - 30 lakh new users joining the platform daily - Google on Wednesday announced to make its premium video meeting app free for everyone in social distancing times.
The free availability of the Meet app will roll out globally including in India in the coming weeks.
"With Google Meet becoming free for everyone, individual users will be able to host meetings with up to 100 participants and the meeting length is going to be 60 minutes, but we are not enforcing it until September 30," Smita Hashim, Director, Product Management, Google Cloud, told IANS.
According to Hashim, Google Meet is secure and reliable and overtime, "we expect our Hangouts users to switch to Google Meet".
"We make certain essential services free. For Google Meet, we do not have plans to monetise it. We hope video conferencing will continue to be an essential service," she said, adding that the company plans to bring more changes to the layout of Google Meet in the future.
Since January, Google has seen Meet's peak daily usage grow by 30 times.
Meet is currerntly hosting 3 billion minutes of video meetings and adding roughly 3 million new users every day.
"As of last week, Meet's daily meeting participants surpassed 100 million," informed Javier Soltero, Vice President & GM, G Suite.
"Your Meet data is not used for advertising, and we don't sell your data to third parties," he said in a statement.
Starting in early May, anyone with an email address can sign up for Meet and enjoy many of the same features available to our business and education users, such as simple scheduling and screen sharing, real-time captions, and layouts that adapt to your preference, including an expanded tiled view.
"Beginning next week, we'll be gradually expanding its availability to more and more people over the following weeks. This means you might not be able to create meetings at meet.google.com right away, but you can sign up to be notified when it's available," informed Soltero.
Google said it does not allow anonymous users (without a Google Account) to join meetings created by individual accounts.
"Through September 30, we're providing G Suite Essentials and all of these advanced features free of charge," the company added.
