This is interesting because these wines have been around for almost 200 years yet have not had much time in the spotlight until recent history. The most famous ice wines are from Germany, however many other countries such as Canada, Austria, and even Australia have been known to produce ice wines of their own. Because Canada is much colder and is capable of more consistent freezing temperatures has actually surpassed Germany in the production of ice wine.
Ice wine is a dessert wine that is made from frozen grapes. Only the water freezes in the grapes, so when they are pressed frozen, the juice that is extracted is very concentrated and very sweet. This freezing must happen before fermentation, and the grapes need to be pressed frozen, otherwise the water will melt in the grapes and you will not have the concentrated juice required for ice wines.
Natural ice wines require a hard freeze to occur after the grapes have ripened. In Canada, this temperature is a minimum of 17 degrees Fahrenheit while in Germany this temperature is 19 degrees. This means that the grapes must remain on the vines for several months after a normal harvest and risk being lost to rot if there is no freeze. At the other extreme, if the freeze is too severe the grapes can not be harvested and pressed. Because the fruit must be pressed while it is still frozen, pickers must work late in the night or early in the morning and work while the cellar workers must work in unheated spaces to ensure the grapes do not thaw.
Sometimes wine makers prefer to use cryoextraction. Cryoextraction is a mechanical freezing that is used to simulate the effect of the natural frost that occurs so that grapes can be picked sooner and made into wine. In Germany and Canada, wine created this way can not be called ice wine, only wines which have been frozen naturally are allowed to be called as such.
Whereas regular wines might take days or weeks to ferment, ice wines can take months due to the higher sugar content. Even though it is normal for the sugar content in ice wine to run from 180 g/L up to as high as 320 g/L ice wine remains very refreshing because of the high acidity. Ice wine usually has a medium to full body, with a lingering finish while the nose is oftentimes reminiscent of peach, pear, honey, caramel, and green apples depending on the varietal grape. Pineapple, mango, and even lychee are quite common aromas with white varietals however this list is by far not exhaustive.
Because the juice from the grapes is more concentrated than regular wine, there is a much smaller yield. It is for this reason as well as the methods used that make ice wines more expensive than table wines. Ice wines can cost as much as $300 a bottle, which is why it is often sold in half bottles for as little as $50. Grapes that have insufficient brix (sugar) content can not be made into ice wine and are therefore usually sold under the label “special select late harvest” or “select late harvest” at a fraction of the price of true ice wines.
When to drink ice wine is a matter of personal taste. Some people believe that ice wine improve with age and supporters claim that the very high sugar level and high acidity preserve the content for years after bottling. There are then others who believe that with age the wine loses its distinctive acidity, fruitiness, aroma, and freshness. Being that ice wines are very versatile in this, when you decide to drink your ice wine depends on when you feel it tastes best.

Tim Tam is a brand of Australian chocolate biscuit made by Arnott's. It consists of two malted biscuits separated by a light chocolate cream filling and coated in a thin layer of textured chocolate. In the 1990s, Arnott's cast N'fa as a wish-granting genie and Cate Blanchett as the lucky recipient of those wishes, who asks for... "a packet of Tim Tams that never runs out". In October 2006, Arnott's partnered with the National Breast Cancer Foundation to launch a limited 'pink' edition to coincide with that years pink ribbon campaign. Advertising in 2012 responded to a fan's Facebook post, wishing that Tim Tams grew on trees. Arnott’s “planted” a Tim Tam orchard in Martin Place, Sydney on 2 May 2012. The campaign generated more than 475,000 views on Tim Tam's YouTube channel and the brand experienced a 23% baseline sales uplift over the campaign period. In 2016, to advertise the mocktail flavours, Arnott's recruited Sophie Monk to feature in television advertisements as the face of the range. History of the Tim Tam The biscuit was created by Ian Norris, who was the director of food technology at Arnott's. During 1958, he took a world trip looking for inspiration for new products. While in Britain, he found the Penguin biscuit and decided to "make a better one".

Britain's Penguin Biscuits Tim Tams went on to the market in 1964.  They were named by Ross Arnott, who attended the 1958 Kentucky Derby and decided that the name of the winning horse, Tim Tam, was perfect for a planned new line of biscuits. Apart from Penguins, similar include "Temptins" from Dick Smith Foods, New Zealand's "Chit Chats", Australian Woolworths' home brand product "Triple Choc", the Coles brand "Chocolate Supreme" biscuits, and various similar "home-brand" products marketed by British supermarkets. In 2003, Arnott's sued Dick Smith Foods over their Temptin' brand of chocolate biscuits, which Arnott's alleged had diluted their trademark as a similar biscuit, in similarly-designed packaging. The case was settled out of court.

Dick Smith's Temptin' Biscuits Pepperidge Farm, a sister company of Arnott's, began importing the Tim Tam to the United States of America in 2008. The biscuits are still "Made in Australia" and packaging in the United States bears the slogan "America's Favorite Cookie." In 2017, an additional flavour, dark chocolate-mint, was produced for and introduced only in the American market.

Arnott's introduced toffee apple and pineapple flavours to the market in June 2016. In October 2016 they added a mango variety to the range, and in February 2017 they launched four new flavours—choc mint, salted caramel & vanilla, coconut & lychee and black forest—in partnership with Gelato Messina. It’s funny how polar the answers to this question can be. Despite the huge range of sweet wines available, people usually have quite strong opinions on the subject. We have come a long way from the those grotty sweet wines of the 70’s, considered the height of sophistication and class.
I’ve been fortunate enough to try some amazing wines from Sauternes, Barsac and Monbazillac in France, Ice Wine from Austria, Tokaji from Hungary, Sweet Riesling from Alsace, Beerenauslese from Germany and some excellent blends and Noble Rot based wines from the USA, Australia and New Zealand. On the fringes you might even consider Pedro Ximenex Sherry from Spain, Muscat de Beaumes de Venise from the Rhone Valley or dare I even say it, sweet red wine….
The beauty of these wines are that they can be drunk chilled on their own or they make an excellent accompaniment to desserts or cheese. If you are feeling adventurous then the occasional starter and main course certainly do benefit from a sweeter drop, after all who can forget the pairings of Sauternes and Foie Gras followed by Gewurztraminer and Curry. Okay it sounds pretty gross together but believe me they do go well and with a Pedro Ximenex and ice in a tumbler as an aperitif you could blow out on sweet wines throughout the whole meal.
I jest, it would be pretty full on but for those of you who claim not to like sweet wine I beg you to think again. The subtly and complexity of some of these wines is amazing and whilst we cannot all afford Chateau D’Yquem (the 2000 vintage from Dan Murphy’s is currently retailing at $999) we can afford the many alternatives on the market and still enjoy the benefits.
They don’t have to be heavy and liquid sugar, a taste that quite rightly puts a lot of people off so do try some of the following:
