Summer Vegetable White Bean Soup
It's almost here - summer that is! The gardeners are chomping at the bit, checking their tender plant starts for sign of growth. So far, I've planted onions, carrots, celery, dill, parsley...too early to use them in this cooking but in a few weeks - a different story. The dill weed adds a nice pop of flavor to your tried and true bean soup - who would have thought? Try this savory soup - see what you think.
3 T. oil
1 onion, diced
2 carrots, sliced thin
4 stalks celery, sliced thin into crescents
3 T. garlic, minced
2 T. tomato paste - optional
1 t. Italian herb mix
1 t. Hungarian paprika
dash chili flakes - use a light hand!
dash salt
dash pepper
4 c. vegetable broth
2 cans Cannellini beans, drained, mash one can as thickening
2 c. kale, remove/discard stems, cut in ribbons with kitchen scissors
1 T. dill weed
2 T. white wine vinegar
In a deep fry pan, saute onions, carrots, and celery to caramelize. Add garlic, tomato paste, Italian herbs, paprika, chili flakes, salt, pepper, and vegetable broth - stir in well to mix flavors. Add beans, kale, dill weed, and vinegar. Simmer 15 - 20 min. to blend flavors.

Growing up, Piper Mommy would put a lot of effort into researching traditional holiday meals in the US. One of my favorites was having corned beef and cabbage with potatoes for St. Patrick's Day accompanied by homebaked soda bread. . This Cheesy Creole Chicken Penne Pasta Bake with Artichokes is a tasty and comforting dish made with soft chicken, salty artichokes, a mix of cheeses, and a little Creole seasoning. It's a great meal for busy weeknights or getting together with family.
Ingredients: 2 cups cooked penne pasta. 2 cups cooked shredded chicken. 1 can 14 ounces artichoke hearts, drained and chopped. 1 cup shredded mozzarella cheese. 1 cup shredded cheddar cheese. 1 cup grated Parmesan cheese. 1 can 14 ounces diced tomatoes, drained. 1/2 cup chopped green bell pepper. 1/2 cup chopped onion. 2 cloves garlic, minced. 1 tablespoon olive oil. 1 teaspoon Creole seasoning. 1/2 teaspoon dried thyme. 1/2 teaspoon dried oregano. Salt and pepper to taste.
Instructions: Preheat oven to 375F 190C. In a large skillet, heat olive oil over medium heat. Add onions, bell pepper, and garlic. Saut until softened, about 5 minutes. Stir in diced tomatoes, Creole seasoning, thyme, oregano, salt, and pepper. Cook for another 2 minutes. In a large mixing bowl, combine cooked penne pasta, shredded chicken, chopped artichoke hearts, and the sauted vegetable mixture. Mix well. Transfer the pasta mixture to a greased baking dish. Sprinkle shredded mozzarella, cheddar, and Parmesan cheese on top. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the pasta is heated through. Serve hot and enjoy!

13 Bean Soup
Heartwarming - belly warming too as this is a hearty filling meal to ladle up for the whole family or to take on the go as a work lunch to microwave.  Does well as a make ahead meal if you do your cooking on the weekend.  The 13 bean blend is in the bulk bins at my favorite grocer or bagged with the other dried beans.  Freezes well, too for plan ahead cooking.  See what you think...
2 c. 13 bean mix
7 c. water
4 c. vegetable broth
1 bay leaf
3 carrots, sliced thin
2 c. celery, sliced thin
1 lg. onion, diced
1 t. pepper
1 t. salt
1 - 15 oz. can tomato sauce
1 - 14.5 oz. can diced tomatoes with liquid
2 T. garlic, minced
Optional: 1 bunch epazote leaves - dried or fresh
In a large soup pot, add beans, water, vegetable broth, and bay leaf.  Cover, bring to a rolling boil.  Add epazote (optional), carrots, celery, onion, pepper, salt, tomato sauce, diced tomatoes and garlic.  Turn down to simmer for approx. 2 hours until the beans are tender.

Shrimp fra Diavolo with Penne is a delightful Italian-American dish featuring succulent shrimp cooked in a slightly spicy tomato cream sauce, served over al dente penne pasta. This dish bursts with flavors and is perfect for a cozy dinner with loved ones.
Ingredients: 1 lb penne pasta. 1 lb large shrimp, peeled and deveined. 2 tbsp olive oil. 4 cloves garlic, minced. 1/2 tsp red pepper flakes. 1 can 28 oz crushed tomatoes. 1/2 cup heavy cream. Salt and pepper to taste. Fresh parsley, chopped for garnish. Grated Parmesan cheese optional, for serving.
Instructions: Cook penne pasta according to package instructions until al dente. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes. Saut for about 1 minute until fragrant. Add the shrimp to the skillet and cook until they turn pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside. In the same skillet, add crushed tomatoes and season with salt and pepper. Bring to a simmer and cook for about 10 minutes, stirring occasionally. Stir in heavy cream and simmer for an additional 2-3 minutes until the sauce slightly thickens. Return the cooked shrimp to the skillet and toss with the sauce to coat evenly. Add the cooked penne pasta to the skillet and toss until the pasta is well coated with the sauce. Serve hot, garnished with chopped parsley and grated Parmesan cheese if desired.
