A vegan twist on the classic Italian dish, Tofu Cacciatore replaces the traditional meat with tofu for a hearty and flavorful meal. It's packed with vegetables and simmered in a rich tomato sauce infused with herbs and spices.
Ingredients: 1 block firm tofu, drained and pressed. 2 tablespoons olive oil. 1 onion, chopped. 2 bell peppers, sliced. 3 cloves garlic, minced. 1 can 14 oz diced tomatoes. 1 can 6 oz tomato paste. 1 cup vegetable broth. 2 teaspoons Italian seasoning. 1 teaspoon dried oregano. 1 teaspoon dried basil. Salt and pepper to taste. Cooked pasta or rice, for serving.
Instructions: Take the tofu and cut it into cubes. Warm up the olive oil in a big pan over medium-low heat. Cut up some onion and bell pepper and add them. About 5 minutes of cooking will soften the food. Cut up some garlic and add it. Cook for one more minute. Add the tomato paste, vegetable broth, oregano, basil, salt, and pepper, along with the diced tomatoes. Put the tofu cubes in the pan and slowly stir them around to cover them with the sauce. Simmer for 15 to 20 minutes, stirring every now and then, until the sauce gets thick and the tofu is warm all the way through. Put it on top of rice or cooked pasta. Enjoy your tofu cacciatore that is vegan!

Enjoy a rich and creamy vegan mushroom risotto that will satisfy your cravings without making you give up your coffee shop habit. Arborio rice, earthy mushrooms, and a rich coconut cream base make this dish very tasty.
Ingredients: 1 cup Arborio rice. 4 cups vegetable broth. 1 cup sliced mushrooms. 1/2 cup chopped onion. 3 cloves garlic, minced. 1/4 cup nutritional yeast. 1/4 cup coconut cream. 2 tablespoons olive oil. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: In a large skillet, heat olive oil over medium heat. Add onions and garlic, saut until translucent. Add mushrooms and cook until they release their juices. Add Arborio rice and toast for a few minutes. Pour in vegetable broth gradually, stirring continuously until rice absorbs liquid. Once rice is cooked and creamy, stir in nutritional yeast, coconut cream, salt, and pepper. Garnish with fresh parsley before serving.

Delicious vegan pumpkin waffles that are perfect for a cozy breakfast or brunch. These waffles are flavored with warm spices and pumpkin puree, making them a delightful autumn treat.
Ingredients: 1 1/2 cups all-purpose flour. 2 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1 tsp ground cinnamon. 1/2 tsp ground ginger. 1/4 tsp ground nutmeg. 1/8 tsp ground cloves. 1 cup unsweetened almond milk. 1/2 cup pumpkin puree. 1/4 cup maple syrup. 2 tbsp melted coconut oil. 1 tsp vanilla extract.
Instructions: Mix the flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves in a large bowl with a whisk. Put pumpkin puree, maple syrup, melted coconut oil, and vanilla extract in a different bowl. Mix them together. Mix the dry and wet ingredients together until they are just barely mixed. Be careful not to mix too much. Follow the manufacturer's instructions to heat up your waffle iron and lightly grease it. Put the right amount of batter on the waffle iron and cook it until it's golden brown and crispy. You can top it with maple syrup, fresh fruit, or vegan whipped cream while it's still warm.

It's easy to make these homemade peppermint patties, which are a delicious vegan treat that will satisfy your sweet tooth.
Ingredients: 2 cups powdered sugar. 2 tablespoons coconut oil. 1 tablespoon almond milk. 1/2 teaspoon peppermint extract. 1 cup dairy-free chocolate chips.
Instructions: In a bowl, mix powdered sugar, coconut oil, almond milk, and peppermint extract until a smooth dough forms. Roll the dough into small balls and flatten them to form patties. Place the patties on a parchment-lined baking sheet and freeze for 30 minutes. Melt chocolate chips in a microwave or double boiler. Dip each frozen patty into the melted chocolate, ensuring it's fully coated, and return to the baking sheet. Refrigerate until the chocolate sets, about 15-20 minutes. Enjoy your vegan peppermint patties!

I converted to veganism back in 2013 when I was only 18. I was not driven to veganism because I had watched videos on animal abuse or because I thought pigs were too cute to be eaten, but because at the moment my life was a complete chaos. Back then I realized if I couldn’t control every aspect of my life, I could at least control what I ate. Though I don’t regret my decision, I did get sick about 1 year into my then- new lifestyle. I hadn’t educated myself on the nutrition my body needed or the supplements that were needed. I was lucky enough that my illness was nothing but low iron and low potassium and though today I highly encourage everyone to try going vegan I MOSTLY encourage everyone to educate themselves before jumping into this lifestyle.
