Indulge in the richness of this vegan chocolate banana cake, layered with a decadent caramel filling and sprinkled with crunchy cacao nibs. It's a guilt-free dessert that satisfies your sweet cravings!
Ingredients: 3 ripe bananas. 1 cup almond flour. 1/4 cup cacao powder. 1/4 cup coconut sugar. 1/4 cup maple syrup. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. 1/2 tsp baking powder. Pinch of salt. 1/4 cup cacao nibs. 1/2 cup Medjool dates, soaked and pitted. 2 tbsp almond butter. 2 tbsp coconut cream. 2 tbsp coconut oil, melted. 1/4 tsp sea salt.
Instructions: Preheat oven to 350F 175C. Grease a round cake pan with coconut oil and line the bottom with parchment paper. In a blender, combine bananas, almond flour, cacao powder, coconut sugar, maple syrup, melted coconut oil, vanilla extract, baking powder, and a pinch of salt. Blend until smooth. Fold in cacao nibs into the batter. Pour the batter into the prepared cake pan and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely before removing it from the pan. In a food processor, blend soaked and pitted dates, almond butter, coconut cream, melted coconut oil, and sea salt until smooth to make the caramel layer. Once the cake has cooled, spread the caramel layer on top. Refrigerate the cake for at least an hour before serving to allow the caramel layer to set. Slice and serve. Enjoy!

This vegan take on traditional street food, Bang Bang Cauliflower Tacos, makes your mouth water. Crispy baked cauliflower florets are covered in a creamy and spicy sauce. They are then put into soft taco shells with fresh toppings to make a tasty and filling meal.
Ingredients: 1 small head of cauliflower, cut into florets. 1 cup all-purpose flour. 1 cup almond milk or any plant-based milk. 1 teaspoon paprika. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. 1 cup panko breadcrumbs. 1/2 cup hot sauce adjust to your spice preference. 1/4 cup vegan mayonnaise. 1 tablespoon maple syrup. 8 small taco tortillas. 2 cups shredded lettuce. 1/2 cup diced tomatoes. 1/4 cup diced red onion. 1/4 cup chopped fresh cilantro. Lime wedges for garnish.
Instructions: Preheat your oven to 425F 220C. In a bowl, whisk together the flour, almond milk, paprika, garlic powder, onion powder, salt, and pepper until you have a smooth batter. Dip each cauliflower floret into the batter, letting the excess drip off, and then coat it in the panko breadcrumbs. Place the coated florets on a baking sheet lined with parchment paper. Bake the cauliflower in the preheated oven for about 25-30 minutes or until they are golden and crispy. While the cauliflower is baking, prepare the sauce by mixing the hot sauce, vegan mayonnaise, and maple syrup in a bowl. Adjust the spiciness and sweetness to your liking. Once the cauliflower is done, remove it from the oven and drizzle the sauce over the crispy florets. Toss to coat them evenly with the sauce. Warm the taco tortillas in a dry skillet or microwave until they are soft and pliable. To assemble the tacos, place a generous portion of the sauced cauliflower onto each tortilla. Instructions: Mix the flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves in a large bowl with a whisk. Put pumpkin puree, maple syrup, melted coconut oil, and vanilla extract in a different bowl. Mix them together. Mix the dry and wet ingredients together until they are just barely mixed. Be careful not to mix too much. Follow the manufacturer's instructions to heat up your waffle iron and lightly grease it.
