Indulge in the exotic flavors of coffee and cardamom with this creamy and aromatic ice cream. The subtle warmth of cardamom perfectly complements the rich, bold flavor of coffee, creating a delightful frozen treat that's perfect for any occasion.
Ingredients: 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 4 egg yolks. 3 tablespoons finely ground coffee. 1 teaspoon ground cardamom. 1 teaspoon vanilla extract.
Instructions: In a saucepan, heat the heavy cream, whole milk, ground coffee, and ground cardamom over medium heat until it just starts to simmer. In a separate bowl, whisk together the egg yolks and granulated sugar until pale and creamy. Slowly pour the hot cream mixture into the egg yolks while whisking constantly to temper the eggs. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon about 5-7 minutes. Do not let it boil. Remove the mixture from heat and stir in the vanilla extract. Strain the mixture through a fine-mesh sieve into a clean bowl to remove any solids. Cover the bowl with plastic wrap, pressing it directly onto the surface of the mixture to prevent a skin from forming. Chill the mixture in the refrigerator for at least 4 hours or overnight until completely cold. Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer the churned ice cream to a freezer-safe container, cover, and freeze for at least 4 hours or until firm. Serve the coffee cardamom ice cream scoops and enjoy!
