Use a little at first, then add more when you are sure you like the flavor.
To substitute dry herbs for fresh, use ¼ teaspoon powder or 1 teaspoon crushed for 1 tablespoon fresh chopped herbs. Some herbs and spices are expensive.

yes
1 yellow onion
3 cloves garlic
ginger about 1 inch
2 tsp salt
1 Tbs ground cumin
1 Tbs ground coriander
1 tsp turmeric
1 Tbs curry powder OR 1/8 tsp of the following, fenugreek, clove, cinnamon, bay, mustard, cardamom (most curry blends are redundant on the cumin coriander turmeric, but are easier to buy than all the other spices separately)
cayenne and black pepper to taste
1 bunch collard greens
1/2 bag frozen spinach
1-2 cups broth of any kind
1/2 cup coconut cream or 1/2+1/2
cilantro
block of paneer
ghee or oil or butter
sauté your chopped onion, garlic,and ginger in ghee until soft. don’t worry about fine chopping it will all get blended later. then add spices, the measurements here are estimates because i measure it with the cap lol. let the spices bloom in another spoonful of ghee but don’t let them burn, when you see small bubbles add 1 cup of broth (i use chicken, but it can be vegetable) and scrape the bottom of the pot. then add your chopped collards and spinach, and cook for 20-30 min until the collards are completely soft.
then, purée with immersion blender. if you only have a regular blender then you need to let the greens cool off first. if it’s not blending you can add more broth, but it should be as thick as your blender can tolerate, like applesauce not soup. return to the heat to cook off some of the liquid while you cube the paneer and chop cilantro. you want it to be a little thicker than the desired end result because the cream will thin it, when it looks like the consistency of marinara add the paneer and cream and take off the heat- if it’s going to be a while before you serve wait on the cream because if you cook for too long with the cream it will split. garnish with cilantro
i’ve also made this with dandelion or mustard greens, and with firm tofu instead of paneer. not really an authentic recipe but whatever you’ve got works + most important part is 50/50 spinach and bitter greens or it will be bland

i'm super bad at cooking and never know where to start because every recipe out there asks for ingredients i simply don't have at home so do you perhaps know what basic ones would be good to stock up on? like eggs and stuff...especially when it comes to spices i have no idea what is okay to use
Haii o/ very honored that you sent me an ask, and ofc I’ll do my best to help! This reply got a bit out of hand so. Long text under the cut. Behold. Feel free to reach out in asks or dms or whatever with any future questions (@ everyone tbh).
Food is, of course, very subjective, so my idea of a perfect list of foods to keep a stock of will not be universal, but I hope this will, at least, give you some ideas if anything.
First of all, I usually mentally break down my typical weekday recipe into vaguely carbs source - protein source - veggies, buy a couple of options for each category and just switch them around for variety. My standard set is
rice / pasta (usually spaghetti re:shapes) / glass noodles
eggs / chicken / tofu / bacon
random pack of frozen vegetables, bell peppers, eggplants, tomatoes, cucumbers, leafy greens. garlic and onions too
I have an option of making egg fried rice with chopped up bacon and added frozen vegetables one day, then blending the leftover vegetables with bell peppers and tomatoes to use as pasta sauce with chicken and spaghetti the next day, then branching out and making eggplant tofu stir fry with glass noodles, then using whatever eggplant tofu stir fry i had left as rice balls filling and making myself a quick vegetable salad on the side… And all those things are easy to make and don’t need much fussing around.
Other options to consider would be potatoes (you can roast them with whatever, boil, fry, etc), buckwheat (my wife doesn’t like it otherwise I’d use it more often), kidney beans and chickpeas for your carbs*; fish and meat for your proteins (those are. a bit too expensive for me usually); carrots, cabbage, leeks etc.
The list looks long, but, again, you just need to pick out a couple of things from each group and throw shit in a pan so to speak. And a lot of them are easily soup-able (boiling water chicken potatoes carrots rice? boom soup. etc), which is another easy base recipe to exploit.
Now to the matter of spices. Salt and pepper are obvious enough, but a good thing to look for are, especially if you are just getting into cooking, spice blends. Something something French Herbs™ something something Taco Seasoning™ something something Seven Spice™ something something Garam Masala™. There’s a lot of different ones, but they are, essentially, a formed flavor profile in themselves, so you don’t need to worry about mixing spices and herbs that might not go well together, and by paying attention to contents you can learn for yourself what individual seasonings are commonly used together.
Also, everyone, hold your judgement real quick and trust me with this, but ooh I always save leftover flavor packets from instant ramen and reuse them in other dishes. Egg fried rice just doesn’t taste right without suspicious red powder courtesy of shin ramen… It’s probably MSG my beloved or something…
While I’m at it, bouillon cubes are handy to have, you can use them for soups, crumble them up in other recipes. Adding one to the water you’re cooking rice in is a great hack at making it more flavourful.
In general, while I do actually have way too much spices (and keep buying more… very excited about my newly acquired dried tarragon…), the ones I’d advise to have for an average person would be:
Salt (ideally both coarse grain and fine grain, but fine grain only serves you just right)
black pepper (both in a mill/grinder and peppercorns), red pepper flakes
paprika, garlic powder, ginger powder
bay leaves, dried oregano, basil, thyme, dill, cinnamon, coriander, cardamon, cumin, turmeric, sumak....
I really got a bit carried away by the end, but. You don't actually need to buy all of them and at the same time, just start with whatever couple of things you'd need for whatever you are cooking and let your collection build up over time, since spices aren't something you need to buy often anyway 👍
Other things I think it’s nice to have in stock in your kitchen would be flour and baking powder, vinegar (distilled vinegar, rice vinegar… I like to have balsamic vinegar too but it’s so expensive it’s ridiculous ngl), soy sauce, cooking oil of your choice (I use sunflower oil, olive oil and sesame oil), panko or breadcrumbs, starch (i have potato starch, cornstarch and tapioka starch, I would suggest just getting cornstarch at first).
* going to clarify here that while beans are often brought up as a source of protein, most are rich in complex carbs, excluding edamame and green beans for example. And since I mostly often cook beans with meat, they check out my daily carbs in my head.

Kitchen Witchcraft: Orange Bitters for happiness, health, and prosperity
Here we are in dreary January (again). The days are short and there is nothing left but monochrome colors. All life seems to have been skimmed off of the world - or at least all of the serotonin. I'm SAD - it's the SAD time of the year.
It also happens to be citrus season. Of all of the cures for the sads, citrus (and a ready application of the vitamin C it brings) remains the best cure* for a (mild) case of the sads. With this in mind, my partner and I decided that our seasonal batch of house bitters this year would be orange flavored.
Of all of the citrus that I have tried, orange is the one that I like the least out of season but one of the ones that I love the most come January when nothing else is edible. Orange has some of the cleansing properties of the other citruses while also adding the sweetening properties of happiness and abundance. This is the energy that I wanted to harness to help bring us into the new year with a positive attitude and a bright outlook on life.
This recipe was loosely adapted from the book Bitters: A Spirited History of a Classic Cure-All with Cocktail Recipes & Formulas by Brad Thomas Parson which is a nice primer on the basics of bitters making. I changed the bittering agent (I do not care for Gentian root) and the base spirit from white liquor to brown since I will be adding my orange bitters primarily to cocktails made with brown liquor.

Zest three oranges 1/4 cup chopped dried orange peel 4 Cloves (abundance) 8 Green Cardamom pods, cracked (happiness) 1/4 tsp Coriander Seeds (healing) 4 tbs Wild Cherry Bark 1/4 tsp Allspice Berries (abundance) Wild Turkey 101 1 cup water 2 tbs Rich Syrup 2 jars with secure lids Making bitters is super easy - it is simply a long-form alcohol infusion. For the first two weeks, you infuse all of the herbal ingredients in the liquor and then you strain them out and use them to make a strong tea which you steep for another week. Then, you combine the liquor, strained tea, and rich syrup. From there, you bottle and your bitters are ready to use.
This recipe calls for regular shaking of the infusion - this is where I add the majority of my magic to the recipe. As I revisit my concoction to shake it daily, I focus on adding the energy of happiness, health, and abundance for the new year in. I also did a ritual where I burned an orange candle that had been dressed with a powder made from the base ingredients over the jar to further empower the spell.
Cocktail bitters can be applied in various ways. They can, of course, be used in the creation of a cocktail but they can also be added to water or another beverage, or simply taken on the tongue. The bitter agents in this concoction will soothe minor stomach upsets while they liven your mood.
A few notes about the ingredients in this recipe: As always with recipes, the quality of the ingredients will affect the potency and flavor of your final product. It is important to use organic orange peel if you can for this recipe since pesticides tend to accumulate in the peels of the fruit. I used Wild Turkey 101 for the infusion but any overproof liquor will do. You could substitute another bittering agent for Wild Cherry bark, the original recipe called for Gentian root.

He said that he was craving Aztec soup.
Because he is my dad, of course I made it!!
Now, I'm sharing just because I'm saving MY recipe here and for the ones who would like to eat some decent fucking Mexican food.
INGREDIENTS FOR THE 3 LITERS OF SOUP.
6 big tomatoes
4 garlic cloves
1 big ass onion
2 chiles guajillo (dried mirasol)
2 chiles de guisar/ancho (dried Capsicum annuum)
120g of chile chipotle
1 chicken leg (or just a chicken bone... any bone)
2 chicken breast
carrots to taste
potatoes to taste
Cucurbita to taste (that green veggie)
2 Avocados
Fresh cheese to taste (when I mean fresh, I mean; go and buy it from your local market, not the shit that has probably 6 months in a fridge, this needs a cheese that breaks once you slightly press it between your fingers) if you can't get it, use mozzarella.
15 tortillas (please use tortillas made of CORN, but if you don't have them... well then the dish you will prepare can't be called "Aztec," but hey, you have my permission to use bread or even those shitty nachos BUT YOU CAN'T USE DORITOS... or I'm personally chasing you over and murdering you.)
Spices
METODOLOGY!!
1) Bring half a liter of water to boil, turn the energy down (fire or ignition WHATEVER!), and add there the dried chilis (this will help them soften.) Leave them to rest. (just look how sad they look and how happy they turn after a nice hot bath 🥺✨ if you are weak and can't tolerate spicy food take away the seeds and the little veins, Omacatl is going to curse you without friends bc of your puny palate.)
2) In a pot, add 2 liters of water, add salt to taste, and put there the chicken; (as it cooks, take away all the foam.) Cook medium-high heat for 35 min.
3) Cut the tomatoes and the onion into big chunks, and peel the garlic cloves (do it with your fingers pretend they are the eyes of your enemies and release some anger.)
4) in a very hot comal (or if you are basic, in a nonstick pan,) put your tomatoes and onion to cook, DO NOT USE OIL!! just let them cook on a hot surface.
k: omg!! they look burnt!! are you sure is that the right way???
c: STFU YOU WEAK HUMAN, THEY NEED TO LOOK LIKE THIS if they don't look like this you are doing it wrong; if you don't do it like this the nearest Mexican human corpse is going to haunt you down.
5) Take away the chicken from the broth, and put it in a bowl.
6) Take away from the jacuzzi those dried chilis and put them on the mixer, add the cloves of garlic, tomatoes, and onion you just cooked, the 120g of chipotle chilis, and now my fellas, dear colonizers reading this, pay attention, this is crutial THIS IS WHAT MAKES IT TASTE GOOD:
add a pinch of:
salt, black pepper, cinnamon, powder of cilantro seeds, brown sugar, thyme, AND 3 PINCHES OF DELICIOUS GLORIOUS CARAWAY. Add a liter of water and mix it well, once looks as homogeneous as it can be, pour it into the chicken broth.
Just look at how pretty that looks!!! That looks like decent food, that looks like something my ancestors would be proud of!!! *honestly I got some tears after tasting this, ABSOLUTELY DELICIOUS!!!*
7) Use any method you like to make eatable those chunks of meat, I like to separate the meat with my hands.
8) Add the meat again to the chili-spicy/broth and add the minced veggies
9) cook for 40 min, low heat.
10) Mince the coriander
11) If you are a cool decent human cut the tortillas into small rectangles and fry them until they are hard 🔥😏 2 to 3 tortillas per serving. If you are not cool use your shameful nachos.
12) TIME TO FUCKING SERVE AND TASTE THE FRUIT OF YOUR 3 HOURS OF WORK!!
In a bowl, serve the meat and veggies, add some chili broth, put in the center your tortillas, around the tortillas the cheese, on top the minced coriander, and decorate with slices of avocado.

now listen to me closely. i am speaking directly in your ear. go buy an entire 6 pack of chicken thighs and then trim & chop them up into bite sized pieces and then marinate them in AT MINIMUM greek yogurt lemon juice turmeric powder cayenne garam masala cumin coriander ginger garlic and if you so desire some chilis as well (i diced a couple thai chilis up very finely and added them in) and then after marinating for at least an hour or so saute finely diced onion in a generous amount of butter and then add more garlic and ginger and more of previously mentioned spices and also peppers or chilis if you want and then add crushed tomato and heavy cream and chickpeas and chopped cauliflower and then sear the chicken on the side before adding to the pot and then let simmer until chicken & cauliflower are both finished cooking through. and then serve over rice. got that?

I cooked off some washing soda today and mixed it with baking powder, baking soda, salts, coriander seed, cardamom seed, and arrowroot for the laundry. It smelled nice, and the clothes scrubbed up great. I didn't even need to add in any borax to strip them.
The clothes are still out to dry on the line, so we'll have to wait until I bring them in to see how they're faring. My big hope is that it doesn'tcome out too starched, some of my clothes have come in with brittle fibers from the detergent I was buying, so my hope is the arrowroot (and the dash of pomace I tossed in lol) will be effective fabric conditioners, and the laundry powder mix and vinegar I tossed in will hopefully do a solid job at cleansing the fibers without damaging them.
The spare towel came out genuinely brighter in color than it went in at least, which I'm rather excited about.
