These days, though, most of us just buy vadis from the store. The tough climate and limited resources led to the creation of this fantastic dish. The name "vadi" comes from the lentil or vegetable drops that are the heart of the recipe.
To prepare them, the mixture is made and then those little vadis are sun-dried for about 7 to 8 days under the gentle winter sun. This process is quite time-consuming and requires a lot of patience, which is one reason why this cherished preparation is slowly fading away.
One of the best things about vadis is that they can be stored for an entire year without any preservatives or chemicals.
There’s a wide variety of ingredients that can be used to make these vadis, including cucumber, petha (ash gourd), radish, pumpkin, bottle gourd, taro root, and lentils like moong (yellow lentil) and maas (black gram).
The most intriguing ones are called naal vadi, where the lentil mixture is stuffed into colocasia stems, coated, and then chopped into chunks, known as Uttarakhand naal vadi. The nutritional value of vadis varies depending on the vegetables used.

A generous amount of ghee and a sprinkle of pisyun loon (garlic-flavored salt) truly elevate this dish into something magical.
If you take a look at the picture, you'll see that lesu is a flatbread filled with a dough made from madua (finger millet) wrapped in whole wheat flour. It can also be enhanced with carom seeds for extra flavor.
There was a time when this roti was a staple in the hilly regions of Uttarakhand. It's quite different from other types of roti, being heavier and perfect for keeping warm during the chilly winters.
However, with the rise of modern cuisine and globalization, this incredibly healthy recipe is slowly fading away. Those fortunate enough to have grandparents often get to enjoy this dish regularly. Let’s not forget that our eating habits play a crucial role in maintaining a healthy body.

The term "Kachpak" beautifully captures the essence of this dish, meaning it's both raw (kachha) and cooked (paka) at the same time.
This dish is often prepared for community gatherings, making it a true celebration of togetherness. Since a single family can't possibly consume an entire goat, several families come together to share the meat. They divide the cuts among themselves, and the remaining parts, like the skin and offals, are cooked and enjoyed collectively.
Kachmoli makes for a fantastic bar snack! The meat is roasted over an open fire, giving it a delightful smokiness. By the time the skin is removed and cut into bite-sized pieces, it’s about 60 to 70 percent cooked, striking that perfect balance between tender and chewy.
To enhance the flavors, a mixture of raw mustard oil, red chili powder, salt, and sometimes fresh coriander leaves or pahadi lun (a type of salt made on a stone grinder) is added. The robust flavors of these fresh ingredients, combined with the smoky aroma and the chewiness of the skin, are what make Kachmoli truly special. Over time, this rare recipe has become a beloved favorite among locals.

Dish 7 Meetha bhaat/ Meethu baath/ Khuska
Meetha bhaat, also known as Meethu baath or Khuska, is a delightful dish made from red rice, which holds a special place in the hills of Uttarakhand.
This traditional sweet treat is truly one-of-a-kind, boasting a flavor that’s hard to match. In the past, meetha bhaat was a staple during community meals, often served as an amuse-bouche to kick off the dining experience.
The red rice, sourced from the high altitudes of the Himalayan region, is the star ingredient here. It’s packed with protein, antioxidants, vitamins, iron, calcium, and other essential minerals. Unlike regular white or brown rice, red rice has a higher bran content, making it a fantastic source of fiber.

Dish 8 Bedu Roti /Beru Roti
Bedu Roti, also known as Beru Roti, is a delightful dish made from whole wheat flour, filled with a savory mixture of urad lentils, green chilies, cumin seeds, coriander seeds, fresh garlic, fresh ginger, and a pinch of salt.
These ingredients are ground into a coarse paste using a sil batta, which is then stuffed into the roti. I have a soft spot for Dal Kachori, and this stuffing reminds me of it, so I can’t wait to enjoy this dish! In Uttarakhand alone, there are over 30 different types of bread, some of which are sadly fading into obscurity.
Here are a few that I know of, but there are many more recipes and grains that have been lost over time. Some of the breads include Madua Roti, Bedu Roti, Chauuaa, Seeda Roti, Lesu, Raii Roti, Roat, Lagdi, Chillad, Laggad, Ganrea Roti, Ugal Ki Roti, Bagdad Rot, Chau (Chaulai) Ki Roti, Jau Roti, Dhani Gyu Roti (which has wheat seeds resembling coriander seeds), Daulitya Roti, Swale, Gahat Paratha, and Dunglu, to name a few.
Bedu Roti is typically enjoyed with a generous dollop of ghee, jaggery, and a sprinkle of pisyun loon (garlic-flavored salt). It pairs beautifully with both vegetarian and non-vegetarian dishes.
Making this dish is quite time-consuming, which is why it’s losing its place in Uttarakhand's culinary scene. The cuisine of Uttarakhand is characterized by its high energy, nutrition, warmth, and a vibrant explosion of flavors and colors, leaving you with a mouthwatering sensation long after your meal is over. This dish is also rich in fiber, making it great for digestion!

Dish 9 Bedu ki Sabji
Bedu ki sabji, also known as Himalayan wild fig, Wild fig, Timla fruit, junglee anjeer, bendu, khemri, and bedu, is a dish that holds a special place in the heart of Uttarakhand.
In fact, it’s so significant that there’s even a folk song dedicated to it! From what I know, Uttarakhand boasts over 30 different types of bread, though sadly, some have been lost to time, and others are on the verge of disappearing.
Here’s a glimpse of a few breads I’m familiar with, but there are many more recipes and grains that have faded away. This delightful fruit, known by various names like wild fig, timla fruit, junglee anjeer, bendu, khemri, and bedu, is truly remarkable.
The beloved Uttarakhand folk song "bedu pako bara masa" beautifully captures the essence of this fruit. Typically found in the forests, it’s regarded as a celestial fruit packed with incredible health benefits.
The ripe, juicy ones are enjoyed fresh with pisyun loon (a garlic-flavored salt), while the raw ones are perfect for making vegetable dishes, chutneys, and pickles. The ripe fruit contains a whopping 45-50% juice, and a fully grown bedu tree can yield up to 25-30 kgs of fruit! Bedu is not just tasty; it also boasts impressive medicinal properties, making the entire plant valuable, not just the fruit.
It’s beneficial for lung diseases, digestive issues, nervous system disorders, blood pressure, hypertension, and urinary problems.
Plus, it’s a fantastic source of minerals, phosphorus, Vitamin C, antioxidants, and essential fats. Preparing this dish is quite a labor of love. From foraging for the fruit in the forests to boiling and peeling the figs, it’s no wonder this dish is slowly fading away.
When it comes to taste, you might say it’s reminiscent of pahadi chicken—absolutely finger-licking good! Nowadays, only a handful of households in the high Himalayas still make this dish. Uttarakhand’s cuisine is incredibly diverse and deserves to be explored properly so that future generations can enjoy these amazing delicacies. When raw, this fruit is green, but it turns purple and pulpy when ripe, and it’s widely used in Ayurveda.

There’s a rich history behind Almora’s famous Bal Mithai. The art of making chocolate and Bal Mithai made its way to Almora from Nepal in the 7th or 8th century, and it has evolved ever since.
Born from a passion for food and cooking, this delightful mithai has captured the hearts of people of all ages. However, over time, the khas khas was swapped out for sugar balls, which are much cheaper, leading to the loss of this authentic dessert's charm.
Shri Joga Ram Shah from Laal Bazaar in Almora is the mastermind who popularized Bal Mithai across Almora, then Uttarakhand, and eventually all of India.
Falsima village in Almora district is renowned for its milk and dairy products, which made it easier for him to create such historic desserts.
There are stories that suggest Bal Mithai and chocolate were exchanged with British officers on Christmas Eve, and some accounts even say these sweets were sent all the way to Britain.
