I am fascinated by the restaurant industry. Maybe it’s because I like to eat, whether at home or out and about. I like trying new things, new spins on old favorites, and completely innovative items. It probably explains why I loved watching The Bear so much on Hulu. When food preparation is done properly—meaning not fast food—there’s a certain magic that happens.
But what about when the magic is done robotically? It is a trend these days that I have been writing about for a few years, from a concept Carl’s Jr. in California that could cook and assemble burgers without human involvement, to Chipotle’s desire to automate burrito bowls and salads.
Last year Sweetgreen, purveyor of salads and healthy bowls, introduced its in one location. Essentially, customers tap a screen to indicate which ingredients they want in their bespoke creations, and the machine spins and turns the bowl, spitting out cheese, walnuts, or whatever you instructed it to do.
And now comes news that the test, which grew to two stores, is now ready for limited deployment. It plans to include it in seven new restaurants being built this year, and three to four retrofits of existing locations.

With some states pushing for higher minimum wage laws, automation becomes increasingly cost-efficient. California is mandating that all fast food workers receive $20 an hour, starting next month. Oddly enough, Panera has a handy little carve-out that exempts it, but I’ll save that for another blog.
As for Sweetgreen’s salad machine, it costs $450,000 to $500,000 to install in a new build, but somewhat more in a retrofit. Each installation can save the labor expense of 14 back-of-house workers for an entire year, which means that in subsequent years, it promises to pad their bottom line significantly.
Please note, though, that there will still be humans working there, just not as many. The machine needs to be reloaded. Someone has to put finishing touches on the orders. Hosts and hostesses will still be needed.
The machinery also addresses health concerns. Instead of having multiple employees crafting your salad, much like your custom burrito at Chipotle, automation can help control the spread of germs. And it is a far cry better than the self-serve salad buffet of Sweet Tomatoes, which went under during COVID. Because COVID. They are trying to come back, though, and I bet it won’t be business as usual.
Another benefit is standardization of serving amounts of each ingredient. This kind of control can have cost savings at minimum, but also ensure that all customers are treated equally. Of course, there is the possible downside of not being able to request just a pinch of this, or a handful of that. Some people may like more walnuts and fewer beets than the standard amount, for example.
Back at the two Sweetgreens with the Infinite Kitchen, margins are up 7%, and sales per ticket up 10%. Customers must like the new technology enough to spend more money.
More broadly, the continued automation of restaurants may be disturbing to some, because it signifies the need for less labor. In addition, there is a certain intangible impersonalization of the process, even if the machine is creating a salad to your specifications. It’s like one of those automated pet feeder systems that dispense a set amount every day at a certain time. No telling if your pet minds the lack of human interaction.
It reminds me of efforts far back into the last century to put as much as possible into vending machines. The Automat was viewed as the restaurant of the future, but as we know now, it didn’t stick.
Meanwhile, we won’t know for a number of years if all this automation in the 21C is going to stick, either. Customers may grow weary from all this, and want to go old-school once more. Our social consciousness may also change such that we start to dislike machines putting people out of work. Of course, this is the story of the industrial and post-industrial eras. We’ve been doing this a long time.
As for me, I’ll definitely try this one on for size if I learn of one along my route to wherever. I just want to see it spitting out ingredients onto my lettuce bed. Make it look like a work of art, an array of colorful fruits and veggies, and I’ll call it good. I doubt they would go this far on The Bear, but then again, you never know. We’ll find out when Season 3 debuts.
