Noida: – The 8th Global Fashion and Design Week celebrated a unique fusion of fashion and culinary arts with its Food Festival, held in association with the Indo Iran Film and Cultural Forum, Indo DPR Korea Film and Cultural Forum, and Indo Japan Film and Cultural Forum of the International Chamber of Media and Entertainment Industry. This event brought together the rich and diverse culinary traditions of Korea, Iran, and Japan.
The third session of the festival, held on the first day, was inaugurated by Taku Hiroki, Senior Director of Research at JETRO, and H.E. Choe Hui Chol, Ambassador of DPR Korea to India, in front of an esteemed audience. Their presence underscored the importance of cultural exchange and the celebration of international gastronomy.
Dr. Sandeep Marwah, President of AAFT, proudly introduced the talented chefs from the AAFT School of Hospitality and Tourism. In Fasanjan stew, the meat (here, vegetable meat) is cooked with walnuts and pomegranate paste and it gets a great taste. You can change the taste of this delicious stew by choosing the amount of sugar you want. In addition, one to two glasses of fresh pomegranate juice can be used to make the stew sour and tasty. Northern Fasanjan is usually very sour, but in other parts of Iran, Fasanjan is often made into melas.
Necessary ingredients for 5 people
2 cups of walnuts
1 cup dry soybeans
2 medium onions
Pomegranate paste 5 tablespoons
Turmeric, salt and onion powder as needed
How to prepare Fasanjan stew with soy
first stage
To prepare delicious Fasanjan stew with soybeans, first pour soybeans into a bowl of water and soak for 1 hour. After the soybeans are well soaked, we take the excess water completely by hand pressure.
second stage
At this stage, we grind the soaked soybeans with one tablespoon of wheat flour, one tablespoon of wheat starch, three walnuts, onion powder, salt and turmeric and shape them into balls and store them in the refrigerator for 30 minutes.
third level
We put a pan on the heat and fry the soybeans. Next, take a suitable pot and put it on the heat with a little oil until the oil heats up well. Wash, peel and finely chop the onion.
The fourth stage
Then pour it into the pot and fry well until the onion becomes light and transparent. Add the ground walnuts to it and fry. Then we add the fried chickpeas to it and add two glasses of water to it.
The fifth stage
At this stage, we add a little salt and black pepper to the pot and put it on a gentle heat so that it boils slowly and the soybeans are cooked. After the kalglis are completely cooked, we add the pomegranate paste to the stew pot.
The sixth stage
In the final stage, we let the stew fall into the oil. If the pomegranate paste is sour, we can add a little sugar to the stew to soften the taste of the stew. At the end, we serve the prepared stew in a suitable dish next to the rice.

Potato Tahdig Recipe – Persian Rice With Potato Crust
Potato tahdig is one of the most attractive recipes of Iranian food and it’s so delicious. I have explained the bread tahdig in another post and I suggest you try that one too.
Potato is called “Sibzamini” in Iran, and Tahdig Sibzamini is popular in this region. Potatoes are placed at the bottom of the pot and become crispy and delicious. Join me to learn this delicious Iranian recipe together.
Rinse the potatoes and let them dry. Then, as shown in the picture below, cut them into thin layers. They should be thin enough to fry well. Tahdig (whether of bread or of potatoes) had better be of a thin layer.
Soaking the rice: Clean the rice well, then rinse it several times and soak it in water for a few hours. If you're short of time (say 10 minutes), you'd better soak the rice in warm water.
Boiling the water: In a non-stick pot, pour some water and put it on the heat. The amount of water should be enough for two knuckles to be above the rice. Bring the water to a boil.
Pour the rice in the boiling water.
Add some salt. As for 3 cups of rice roughly one tablespoon of salt will be enough. Stir a bit so as not to let the rice grains stick together.
Draining the rice: Having half-cooked the rice, remove it from the heat and pour it into a drain. Rice grains ought not to be too soft, but rather firm. Do not put the lid on the pot. (cook until al dente)As for testing, when you take a grain of rice and place it under your teeth, the inside should still be slightly firm while the outside is cooked. Never allow the rice to cook and soften completely since in the next step they're going to steam and soften nicely.As a general rule, depending on the quality of rice it takes 3 to 5 minutes to get half-cooked. Of course, the cooking time depends on the grade of the rice and the gas heat; some sooner, some later (and some never these days!).
Pour the rice into the strainer.
To make potato tahdig, put a non-stick pot on low heat and pour some oil into it. As for a small pot, about 5 tablespoons would be enough. Once the oil is hot, place the slices in the bottom of the pot. You'd rather cover the entire bottom of the pot with slices, but don't worry if a small portion remains empty since those small parts would be well filled with rice. Fry them on both sides and sprinkle with salt.
Having fried them, pour the cooked rice on it (and let them be steamed together on a low heat). Put the lid on the pot and wait for the rice to cook and tahdig form on the bottom of the pot.
The time to steam rice depends on its quality, but generally it takes some 40 to 60 minutes for the rice to cook and the tahdig to form. In the first 5 minutes, turn the heat up a little bit (just a little) as to let the tahdig form, then turn the heat down so that the rice gets steamed.
After the required time, remove the lid and test the rice. If it's cooked evenly, it means it's ready. If you feel it's not cooked yet, put the lid on immediately so that the steam doesn't escape.
When your Persian rice with potato crust is ready, put it in a dish and then separate tahdig from the pot, cut it and put it in the dish (as a garnish).

Cleaning and maintaining white onyx requires extra care and attention to detail. Since it’s a porous, silica-based soft natural stone, it is slightly more susceptible to reactions with acids and to excessive moisture. Don’t worry though, if you get the right approach to cleaning and set out a regular schedule for it, it’ll be easy to take care of. Also, since it is slightly fragile, use white onyx with a backing that helps make it sturdier and protects it. This is especially important when it is used as a countertop or wall tile. A fiberglass backing for your white onyx surfaces usually helps protect it from abrasions and scratches. When cleaning the surface, use a soft microfibre cloth, and avoid using harsh abrasive cleaners that contain acidic substances, as they can erode the surface of the onyx. 4. Get the soap off: After getting the stains off with soap, rinse your cloth thoroughly, and then use it to wipe the surface clean to get the soap off. Remember to be gentle yet thorough with it, wiping it down at least twice so that it’s completely clean.
5. Pat it dry: Do not allow moisture to stay on the white onyx surface for too long as it can cause damage. Take a clean, dry towel and now pat off the wetness from the surface, letting it dry completely. Remember to pat gently and not wipe.

Hossein’s Persian Kebab Serves Ox Brain and Other Persian Delights
Have you ever eaten brains and liked it? I don’t think I’m going to turn into a zombie anytime soon, but I just ate ox brain for the very first time a few weeks ago at Hossein’s Persian Kebab. Honestly, I was a bit hesitant at first, but I was quite surprised that I really enjoyed this exotic Persian dish.
Hossein’s Persian Kebab and Shisha Cafe is one of the oldest pioneering Middle Eastern cuisine restaurants in Metro Manila serving authentic Halal-certified Mediterranean cuisine. You can find it along the busy Makati Avenue, right across Burgos Street. There’s ample parking space in front of the restaurant, so you can step right in to their newly renovated cafe and dining area and be transported to a fancy Middle Eastern experience.
Hossein’s has been a popular name in the industry for the last 37 years, having been established in 1985 by Chef Hossein himself and now with two other branches in Greenbelt and Bonifacio Global City. The restaurant is open from 11:00am to 3:00am, offering a fine dining ambiance with dishes ranging from Iranian, Arabian, Indian and Mediterranean cuisines.
The restaurant is actually divided into two areas, with the upper floor serving as the main dining hall while the newly-renovated Shisha Bar downstairs offering a more casual venue for those who want to smoke the shisha or enjoy some drinks and cocktails from the bar. The Shisha Bar opens starting at 5:00pm all the way until 3:00am.
Hossein’s Persian Kebab brings the ambiance of the Middle East from the lands of the Levant to the architectures of old. Hossein's restaurant is the gateway of the Philippines to the culinary experience of the Middle East, North Africa and South Asia. It acts as a bridge of the old world of West Asia to the Philippines, bringing all these and authentic ingredients to the country.
We were hosted that evening by none other than Chef Hossein himself and his son Arash. When Hossein Sohrabi Langroudi first moved to the Philippines in 1978, he didn't speak any English, let alone Filipino. Determined to pursue his studies, he then hired an English tutor—a student from the University of the Philippines, who would later become his wife, the mother of his four children, and the co-founder of his historic dining institution.
For generations, cooking has been part of Chef Hossein’s family—it’s tradition, handed down from generation to generation, from mother to daughter and in turn daughter to son. Chef Hossein showcases his culture, Persia’s history and his family’s tradition to the dining table, serving delicacies that he has learned since childhood and adding his own modern twist while incorporating cuisine from Arabia, the Mediterranean and India.
The Shisha Bar and the entire ground floor was recently renovated during the pandemic and now it looks much prettier and colorful. I tried smoking the shisha once before, but this time I will be skipping this part and leaving it to the experts. Guests can choose to dine upstairs or here at the Shisha Bar which I recommend.
Arash Sohrabi Langroudi or Ash as he likes to be called, introduced us to Hossein’s Mediterranean specialties that evening. Ash grew up here in the Philippines so he is as Pinoy as we all are. He also told us stories about his father’s adventures in Iran and their many experiences here in the country.
We started with some colorful cocktails from the bar like the Blue Hawaiian. They also have other whiskeys, spirits, and beverages to choose from.
For appetizers, the Chef Mezze (P1050) is the best choice for big groups. This platter consists of their best-selling appetizers - hummus, moutabal, tzatziki, samosas, and tabbouleh salad served with two pita breads.
You can’t go to a Mediterranean restaurant without having a shawarma, so I ordered this huge Beef Shawarma (P335). This serving is actually good enough to share. You can also try their version of Beef Shawarma Salad.
The Beef Dopiaza (P515) is a South Asian dish inspired by the Mughals where meat is carefully cooked in low heat in a rich and thick curry sauce with generous amounts of onions and a melange of Pakistani and Persian herbs and spices. There’s also the Butter Chicken (P550) that has chicken slathered with thick gravy made of butter, fresh cream, and ground spices.
One of the highlights that evening was the Roasted Lamb Ribs (P3700). This is Hossein’s special lamb ribs marinated in a signature blend of Persian, Arabian and Indian spices. It is delicately cooked in charcoal fire and served with a fusion of Persian and Indian gravy.
If you can’t decide which dishes to order, then just for the Supreme Kebab (P3550). This is a Persian platter with a combination of Shishlik Kebab, Lamb Kebab, Shrimp Tandoori, and Saffron Chicken.
You can’t go wrong with this platter because it has all the best barbecues and kebabs in one plate. Everything is so flavorful and you can really taste the different spices. It is also served with saffron and biryani rice for a complete set.
This is what I was waiting for, the Ox Brain (P550)! This Middle Eastern specialty has ox brain sautéed in spices with a dash of lemon. I didn’t really know what to expect at first, but when I took a bite I immediately fell in love with it. The texture is a bit in between tofu and chicken, but it comes with a salty flavor that is good as an appetizer or a main dish. It also came with pita bread which you can eat with the ox brain.
For dessert, we each had their Baclava (P99), a pastry dessert made of layered filo pastry, filled with chopped pistachio nuts and sweetened with syrup or honey. We would like to thank Chef Hossein and Ash for welcoming and hosting us at their beautiful restaurant. Hossein’s Persian Kebab has been an institution in Metro Manila for the last four decades and it continues to be a well-loved destination for old and new customers alike. I’m definitely going back for more ox brain.
