Chicken Marsala is a dish that doesn’t get the credit that it deserves. That’s usually because almost everyone has a bad marsala story from a restaurant, that’s made them steer clear of ordering it again. It’s really sad because when prepared correctly, it’s extremely flavorful, can be made with simple ingredients and definitely warrants being a staple in your repertoire.

I get so distracted with other dishes that I don’t make this as often as I should. The last time I made it was about three years ago. And while there are plenty of pricier brands available, I usually prefer Florio Marsala Superiore Dry. This coupled with chopped prosciutto really lends a wonderful depth of flavor to the sauce.

So tonight’s dinner is chicken marsala served over capellini (angel hair) pasta and roasted garlic parmesan zucchini and squash with tomatoes. I used the last of my wine, so lemme order another bottle before I forget.

He was a man of presence who commanded the attention of those around him while always being approachable. He was a man of obedience whose strict guidelines of his own imagery never wavered, often to the chagrin of those who wished to cast him as lest then what he felt he was. He was a man of dedication that allowed his character to determine his role and never faltering in his position of representation for our community.

In essence, he was a bad mutha….shut yo’mouth. And he was ours…..🙏🏾🕊️🙏🏾🕊️🙏🏾 Rest brother …

I was supposed to prepare this yesterday, but I just didn’t have the passion or the interest in cooking last night. One thing that I’ve learned over the years is that, if you don’t feel like preparing a specific dish at a certain time, don’t do it. The quality of the food is gonna be a direct reflection of the effort and passion that you put into it that day and you never wanna disrespect the craft like that

I was first introduced to stromboli as a kid when I would grab one from Sbarro’s. Tonight was the first time that I had made one in over a decade. I remember the last time, the flavors were there and it was really good, but it wasn’t presentable at all. 😂😂😂

The ingredients tonight were simple enough as this was filled with sandwich pepperoni, mortadella , smoked ham, soppressata, Italian sausage, mozzarella cheese, pecorino Romano cheese, mined garlic and finely chopped onions and peppers, just for texture.

This was cooked at 375° for about 45 minutes and then brushed with garlic butter and sprinkled with a little Parmesan cheese on top. I’m gonna try not to let another 10 years pass by before I make this again. 😂😂

Today is #NationalCheeseburgerDay and I wanted to have this condiment on hand to include with my burger today. Even without the holiday, it’s something that you always wanna keep in refrigerator because It’s a welcome addition to almost anything!

It’s my homemade candied jalapeño bacon jam made with fresh jalapeño peppers, apple cider vinegar, garlic powder, fresh thyme, ground turmeric, celery seed, brown sugar, thick cut bacon, onions, black pepper, minced garlic and cayenne pepper.

I’m sorry I don’t have the measurements but, it’s one of those things that once you’ve made it a few times, you just know what it’s supposed to look like. Once I’ve prepared mine and let it cool, I pulse it in the Ninja to get the consistency that like. As an added trick, if you like yours really chunky, grab some hot water and plump up a few golden raisins and toss it in the mixture before blending. It’s a game changer!
