In 2019, Khachapuri was granted the status of an intangible cultural heritage site of Georgia [ The filling for khachapuri can be varied, it is cheese, egg, meat. A single Khachapuri recipe does not exist - in each region of the country, the dish is prepared in its own way. But despite all this, it is easy to distinguish the Ajarian version, for example, from the Imereti or Megrelian - in the characteristic form of khachapuri in the form of a boat with cheese filling and an egg. Ingredients for the filling: Imereti cheese - 1 kg drinking water - 150 ml eggs - 8-10 pcs. To submit: cream butter - 100 g For the test: flour - 1 kg + 2-4 tbsp. l for rolling dough drinking water - 250 ml milk - 250 ml -dry yeast - 1 tbsp. l sugar - 1 tsp. Salt - 1 tsp vegetable oil - 1 tbsp. l Step-by-step recipe for making rolls: Step 1 Make dough for Ajarian khachapuri. To do this, sift flour into a large bowl through a frequent sieve. Pour in warm water mixed with milk, add yeast, sugar, salt and vegetable oil. Step 2 Stir all the ingredients until you get an uncooked dough of uniform consistency. Cover the bowl with khachapuri dough with a clean towel and place in a warm place for 1.5-2 hours. Step 3 When the dough in the bowl rises, knead it with your hands and knead. Cover with a towel and let rise again for 1-1.5 hours. The dough should become lush, airy. Step 4 While the dough is coming, prepare the filling for the Adjarian khachapuri. Imereti cheese grate in a large bowl on a coarse grater. Mash it with your hands or pusher. Pour in water and mix until a thick slurry is obtained. Step 5 Put the dough on a table dusted with flour. Divide it into portions of approximately 200 g and form balls. Leave on for 10 minutes at room temperature. Step 6 Roll each ball into a small circle. Then roll the edges on both sides towards the center, fasten and pinch the ends. Spread apart to get "boats". Step 7 Fill the resulting boats” with the cheese stuffing prepared earlier and place on a baking sheet lined with baking paper. Place the khachapuri in the oven, heated to 240 ° C, for 15 minutes Step 8 Then remove the baking tray with Adjarian khachapuri from the oven. For each, release 1 egg. Place in the oven for another 2 minutes. Serve on the table, distributing pieces of butter over the khachapuri. Adjarian khachapuri is eaten with hands, not with a fork with a knife. He must begin to eat from the edge of the "boat." Break off the tail and mix the cheese stuffing with the egg. Bon Appetit!
