Four Seasons Sheet Pan Pizza—Pizza Quattro Stagioni

The headnote says, "This pizza is a bit of a showstopper, maybe a bit of a show off too. It’s just so pretty to see a sheet pan full of four different pizza choices. If you’re like me, you’ll want a square of all four choices. If you’ve got picky eaters in your group, you could top one quadrant of the pizza with just plain cheese."

Serves 6

Olive oil cooking spray

2 tbsp (25 g) cornmeal

1½ cups (180 g) self-rising flour, plus more for working with the dough

1½ cups (375 g) plain Greek yogurt

1 (14-oz [400-g]) can petite diced tomatoes, drained

3 tbsp (75 g) tomato paste

3 tbsp (45 ml) olive oil, divided

1 tsp garlic powder

½ tsp crushed red pepper flakes, optional

1 tsp dried basil

½ tsp dried oregano

Pinch of sugar

Salt and pepper

3 cups (345 g) mozzarella cheese, shredded

4 oz (115 g) cremini or button mushrooms, thinly sliced

3 oz (90 g) prosciutto, thinly sliced

1 cup (170 g) marinated artichoke hearts, drained and thinly sliced

3 large Roma tomatoes, thinly sliced

10–12 small basil leaves

Preheat the oven to 425°F (220°C). Coat a sheet pan with cooking spray and the cornmeal.

For the dough, in a medium bowl, combine the flour and yogurt until a shaggy dough forms. Knead the dough in the bowl for a few turns, just until the dough forms a smooth ball. Turn out the dough onto the prepared baking sheet. Press the dough into the pan, sprinkling the top of the dough with a bit of flour as needed to prevent sticking, until the dough reaches the edges of the pan.

For the sauce, in a medium bowl, combine the diced tomatoes, tomato paste, 1 tablespoon (15 ml) olive oil, garlic powder, red pepper flakes, basil, oregano and sugar. Season to taste with salt and pepper. Spread the pizza with 1 cup (240 ml) of the sauce, leaving a 1-inch (2.5-cm) border all around. Spread the mozzarella cheese on the pizza.

For the assembly, in a small bowl toss the mushrooms with 1 tablespoon (15 ml) olive oil. Place the mushrooms on one-fourth of the pizza, creating a square area for each of the seasons. Place the prosciutto on one-fourth of the pizza, the artichokes on another one-fourth of the pizza and finally the tomatoes and basil on the remaining quadrant, tucking the basil underneath the sliced tomatoes. Drizzle the tomatoes and basil with the remaining 1 tablespoon (15 ml) of olive oil.

Bake the pizza for about 22 minutes, or until the cheese is melted and beginning to brown. Let the pizza cool for about 5 minutes before serving.

You got distracted immediately after walking through the doors. In your defense, rainbow capitalism is extremely appealing, even when you know it’s happening. Tim, who was scrolling through his phone while walking, bumped into you when you stopped in the middle of the entrance. 

“What?” 

You elbowed him excitedly. 

“Look, the pride section! I’m going to take a detour and I’ll find you later.”

Tim grabbed your hand before you could run off. “No way are you going without me. I do not own nearly enough pride merch.”

Hands connected, you made your way around the pride section. There was a set of gender neutral swim trunks that caught your eye, and Tim found socks with snails with bisexual shells on them. Or really you found them and threw them at him and he vowed to buy them and wear them as often as possible. For yourself, a set of turtle printed socks with your own flag on the shells. 

The two of you came to a stop in front of the t-shirt rack and you pulled out a black t-shirt, the words “love is love” stacked over and over on the middle of the shirt. 

“I’ve actually never been to pride.” 

Tim looked up from where he’d been searching for his size of a different t-shirt, where the words “love is love” was written only once but in the bisexual flag colors. 

“Me neither.” He pulled a shirt out and shook it out, holding it against his torso. “But Gotham pride is this weekend if, you know…”

You smiled. “Let’s go to pride.”

Tim smiled too, tossing a packaged progressive pride flag at you from a stand beside him. “Yeah, let's do it.”

That same year, the nation had received full independence from France. As the country entered a new post-colonial era, Sory photographed the vibrant youth culture that emerged. Spanning 20-some years, his collection of portraits features lovers kissing, smiling friends with a boombox, and style so fly it could belong in a high-fashion magazine from any era. 'Nosferatu' Nosferatu: A Symphony of Horror Released in 1922, Nosferatu is just a few years shy of its 100th anniversary, and somehow still manages to be creepy. Part of that effect may come from its on-location sets and beautifully framed shots, and Max Schreck’s performance as the titular monster certainly factors into its legacy. Yet another spooky aspect is the film’s soundtrack, which has been adapted and reimagined over the years. This Halloween, guests can head to the Music Box Theatre for a screening set to a live soundtrack from the Curse of the Vampire Orchestra, by Minneapolis composer Philip Shorey. MN Toy Posse Image courtesy event organizers MN Toy Posse Halloween Bash 3 What happens when you combine 70 toy sellers from all over the Midwest, hundreds of toy fans of all ages, and thousands of rare and unique toys and collectables? You get one giant posse. This weekend, the Minnesota Toy Posse will host its third-annual Halloween Bash toy swap. Posse founder Mark Seekamp started the group a little over three years ago on Facebook as a way to help connect people looking to buy, sell, or trade their favorite toys. He hadn’t planned on just how many people would want to join his gang. “We have more than 2,200 members, and it’s a really active group,” he says. And it’s not just about toys, either. “We’ve become friends and talk about our lives. People will post pictures when they have a baby, or we’ll just use it to meet up and go see a movie. December was focused mostly on getting Winter 2019’s quarterly out the door. Amazon’s Createspace is being absorbed by Amazon’s KDP Print, and this was our first stab at publishing a book through them. There was a sharp learning curve, as KDP Print publishing is far more restrictive than KDP ebook publishing.

None of this is visible in the numbers, since we don’t track time and effort in these metrics. But it was the most stressful publishing experience we’ve had in a long while. We got ours resolved in under a week, but there are people who have struggled for months with trying to get books published in the new platform.

Anyway, here are some more concrete data points.

As usual, I try to list costs for art and stories under the month that the stories run on the site rather than when I pay them. (This does not apply to special content for quarterlies, which does not have a specific month associated with it.) Sales are for sales when they take place, not when they’re actually paid out to me. Online book sales reflect the royalties given after the retailer takes their cut. Physical book sales represent gross income, not counting the cost of the physical book. Donations include Patreon, as well as other money sent to us outside of standard sales.

The main unusual cost incurred this month was the first wave of ordering copies of the quarterly for Patreon backers. Otherwise, it was a pretty mellow month.

We were open to submissions in December. We received 91 submissions: 45 regular submissions, 36 quarterly-exclusives, and 10 classified ads. Of these we accepted 23 (25.3%). This consisted of 10 regular submissions (22.2%), 4 quarterly exclusives (one was technically accepted as a regular submission instead) (11.1%), and 9 classifieds (90%). Our all time acceptance rate is 34.7%.
