forgive me if you dont know the answer to this but i saw your post about putting ghee on rice - i'm trying to learn how to make desi dishes (i myself am not desi, but i've had the pleasure of learning to cook from some desi community members), but i can never get my dishes to taste just right! do you have any cooking tips, or any reliable resources you use for recipes?
hi!! i posted my family's daal recipe a couple years ago and i just reblogged it (you can also find it here) and i explain the process of cooking it and list all the ingredients. based on my research it's quite similar to recipes called 'daal langar' or langar daal, the type of daal typically made for the langar hall of a gurdwara, although the main difference is the style of chili used as we use birds eye chilis which are more common in malaysia! but you can use the typical indian green chilis instead if you want
i'm punjabi so i don't want to make generalizations for cooking other regional food, but these tips hold true for north indian cooking in an overall sense
(1) you can't forget to add the tharka, it's the backbone to most dishes, and make sure the onions ginger garlic are fully cooked before you toss the tharka into the curry pot. whole cumin seed, black mustard seed, garlic ginger and onions - without that combo there will always be something missing from a dish.
(2) salt is everything, you need to be heavier with the salt than you might think, especially with thick curries you can add all the spices in the world to them but if they don't have enough salt it'll somehow taste like nothing. the spices are asleep in the pot without their salt, don't be afraid to be generous with salt to wake them up. when i say generous i mean that i use 2 tbsp of salt in my daal recipe. trust me.
(3) put ghee on everything. be generous with it, like with your salt. it goes on the rice, the bread, in curries and daals, in desserts, it goes everywhere
(4) ALWAYS WASH YOUR RICE!!!

[ID: A large, shallow bowl filled with a bright yellow curd and golden brown pakora garnished with cilantro. A small bowl of jeera rice with green cardamom, cinnamon, bay leaf, and cilantro sits to the right. End ID.]
Vegan Punjabi kadhi pakora / ਪੰਜਾਬੀ ਕੜ੍ਹੀ ਪਕੌੜਾ
Kadhi is a comfort food popular in north and central India and southeast Pakistan. The base of the dish is spiced curd or buttermilk, to which chickpea flour, vegetable fritters, and spiced tadkas (temperings) are sometimes added. Unlike the sweeter, thinner, and unadorned variations to the south, Punjabi kadhi is slowly reduced to a thick, creamy consistency and studded with onion pakoras.
Recipe under the cut!
Patreon | Tip jar
For the pyaaz ke pakore (onion fritters):
1 cup besan (chickpea flour)
2 medium yellow onions, thinly sliced
1/2 tsp table salt
1/2 tsp mirchi (ground red chilis)
1/2 tsp ajwain (carom seeds)
A couple cups of a neutral oil, for frying
For the curd:
1 cup (220g) unflavored vegan yoghurt
1/2 cup (60g) besan
1/2 tsp amchur (dried mango powder; optional)
4 cups water
In Punjab, kadhi is often made with full-fat buttermilk, and sometimes with yoghurt. Vegan yoghurt (I used oat) will provide a similarly smooth, fatty, slightly sour base.
Adding less water to the curd mixture will allow it to cook down faster if you’re short on time; but a long, slow simmer is more typical with this dish.
For the kadhi:
2 Tbsp neutral oil
Pinch hing (asafoetida)
1 medium yellow onion, chopped
2-inch piece (20g) ginger, minced
4 cloves garlic, minced
2 green chilis, chopped
2 tsp cumin seeds (jeera)
1/4 tsp fenugreek seeds (methi)
1 tsp ground coriander
1/2 tsp mirchi (ground red chilis)
1/2 tsp ground turmeric
1/2 tsp garam masala
3/4 tsp table salt, or to taste
Mustard oil is typical, but any neutral oil (sunflower, canola, vegetable) will work.
For the tadka (optional):
1 Tbsp non-dairy margarine
1 tsp cumin seeds
1 dried red chili
1/2 tsp mirchi
Instructions:
1. Start the pakore. Cut onions in half through the root and lay cut-side down. Slice thinly vertically (perpendicular to the root) and then cut the root off. Whisk together other pakora ingredients (except for the oil) in a large bowl; add the onions and toss well to combine. Cover and set aside for 30 minutes to allow onions to release moisture.
2. Make the curd mixture. Whisk yoghurt and besan together in a large bowl. Add amchur (or substitute apple cider vinegar) if the yoghurt you are using is not particularly sour, to taste. Add water and whisk until a smooth mixture forms. Set aside.
3. Make the kadhi. Heat 2 Tbsp of a neutral oil in a large pot on medium-high. Fry fenugreek and cumin seeds for a few minutes until they are fragrant and popping into the air.
4. Add hing and cook for 30 seconds. Add onion, chili, and salt and saute for 3-4 minutes, until onion is translucent.
5. Add ginger and garlic and sauté for 30 seconds to a minute, until no longer raw-smelling. Add coriander, mirchi, and turmeric and sauté another 30 seconds.
6. Add the curd mixture and stir to combine. Allow to come to a boil, then lower the heat to low and allow it to cook, stirring occasionally, for 30-45 minutes, until thickened.
7. Meanwhile, finish the pakore. Stir the onion slices to distribute any moisture they may have released. Add just enough water to hydrate all the besan and allow the pakoras to hold together.
8. Heat about an inch of neutral oil on medium in a large pan. Once hot, drop small handfuls of pakora mixture into the oil. Fry, flipping once, until golden brown on both sides. Remove onto a paper-towel-lined plate or wire rack.
9. Add pakoras to the kadhi, along with garam masala, and allow to simmer for another 5-10 minutes until kadhi is very thick and creamy. Remove into a serving dish.
10. Make the tadka. Heat margarine in a small skillet until sizzling. Add cumin seeds, chili pepper, and mirchi and heat until fragrant. Pour the oil, seeds, and chili over the finished kadhi and serve immediately.
Serve with roti, paratha, rice, or jeera rice.

Dal Makhani: The Creamy Delight of Indian Cuisine
When it comes to Indian cuisine, few dishes rival the richness and flavor of Dal Makhani. This creamy, slow-cooked lentil curry is a North Indian delicacy that has become a favorite among food lovers worldwide. Whether you’re a vegetarian or simply appreciate hearty, flavorful dishes, Dal Makhani delivers a satisfying experience that delights the senses. And now, you can enjoy this classic dish right at your doorstep by ordering from Dtandoor.com.au. Call (03) 9818 3327 to place your order today!
The Origins of Dal Makhani
Dal Makhani originated in the Punjab region of India and has been a staple dish in Punjabi households for centuries. Traditionally cooked with whole black lentils (urad dal) and kidney beans (rajma), the dish is slow-cooked for hours, allowing the flavors to develop and the texture to become luxuriously creamy. The word "Makhani" translates to "with butter," highlighting the dish's signature richness, often enhanced with cream and ghee.
Over the years, Dal Makhani has evolved from a humble home-cooked meal to a dish found on menus in Indian restaurants around the globe. Its unique blend of spices, lentils, and creamy texture makes it a go-to comfort food that pairs perfectly with naan, roti, or rice.
What Makes Dal Makhani So Special?
1. Slow Cooking for Rich Flavor
One of the hallmarks of Dal Makhani is its slow-cooking process. The lentils and beans are cooked for hours, allowing them to break down and release their natural starches, which thickens the curry. This method results in a deep, smoky flavor that simply cannot be rushed. The slow simmering also ensures that the spices—like cumin, coriander, and garam masala—infuse every bite with aromatic goodness.
2. Creamy Texture
The combination of lentils, beans, and a generous amount of cream gives Dal Makhani its signature rich and velvety texture. Whether you're eating it with naan or rice, each bite delivers a smooth and luxurious mouthfeel, complemented by the mild heat from the spices.
3. Perfect Balance of Spices
Dal Makhani is all about balance. The spices used in this dish are not overly hot but instead add layers of flavor. The use of cumin, coriander, ginger, garlic, and garam masala creates a complex and well-rounded profile that appeals to a wide range of palates.
4. A Vegetarian Delight
For vegetarians, Dal Makhani is an excellent source of protein and nutrients. The combination of black lentils and kidney beans makes this dish not only delicious but also highly nutritious. Packed with fiber, protein, and iron, Dal Makhani is a wholesome meal that can keep you energized throughout the day.
How to Enjoy Dal Makhani
Dal Makhani is traditionally served with a side of naan or basmati rice, making it a hearty and filling meal. Here are some classic pairings to enhance your Dal Makhani experience:
Naan or Tandoori Roti: The soft and chewy texture of naan perfectly complements the creamy richness of Dal Makhani.
Jeera Rice: Fluffy basmati rice infused with cumin seeds (jeera) adds an earthy flavor that balances the dish's creaminess.
Raita: A cooling yogurt-based side dish like cucumber raita helps to balance out the warmth of the spices in Dal Makhani.
If you're hosting a dinner party or simply craving an indulgent meal, Dal Makhani pairs beautifully with other classic Indian dishes such as Paneer Butter Masala, Tandoori Chicken, or Aloo Gobi.

Tumblr media
Ingredients You'll Need:
Paneer: 250 grams, cubed
Green Peas (Matar): 1 cup, boiled
Onion: 2 large, finely chopped
Tomatoes: 3 medium, pureed
Ginger-Garlic Paste: 1 tablespoon
Cashew Nuts: 10-12 pieces, soaked in water
Kitchen King Masala: To add that authentic Punjabi flavor!
Cream: 2 tablespoons
Butter or Ghee: 2 tablespoons
Kasuri Methi (Dried Fenugreek Leaves): 1 teaspoon, crushed
Salt: To taste
Sugar: 1 teaspoon (optional, for balancing flavors)
Water: As needed
Let's Get Cooking:
Prepare the Gravy:
Heat butter or ghee in a pan. Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and cook for a minute until the raw aroma fades away.
Now, add the tomato puree and cook until the oil separates from the masala.
While the tomatoes cook, drain the soaked cashew nuts and grind them into a smooth paste.
Add the cashew paste to the tomato-onion mixture and cook for another 2-3 minutes.
Now, it's time to bring in the star of the show – Spyran's Kitchen King Masala! Sprinkle 2 teaspoons (adjust to taste) into the gravy and mix well. Let it cook for a minute to allow the flavors to meld.
Create the Shahi Base:
Lower the heat and stir in the cream. Mix until well incorporated.
Add salt to taste and a pinch of sugar if you prefer a slightly sweet undertone in your Shahi Matar Paneer.
Toss in the boiled green peas (matar) and let the gravy simmer for a couple of minutes.
Introduce the Paneer:
Gently add the paneer cubes to the simmering gravy. Be careful not to break them.
Sprinkle crushed Kasuri Methi over the paneer. This adds a delightful aroma and flavor to the dish.
Give everything a gentle stir, ensuring the paneer and peas are coated in the creamy Shahi goodness.
Finishing Touches:
If the gravy seems too thick, adjust the consistency by adding a splash of water.
Let the Shahi Matar Paneer simmer for another 3-4 minutes on low heat, allowing the flavors to meld together beautifully.
Serve and Enjoy:
Your Punjabi Style Shahi Matar Paneer is now ready to be savored!
Garnish with a drizzle of fresh cream and a sprinkle of chopped coriander leaves for that extra dash of freshness.

Best Food Delivery Service in Burnaby: Why Panjab Tiffin Service is the Top Choice for Authentic Home-Cooked Punjabi Meals
Tumblr media

Founded over five years ago by two passionate professionals, Panjab Tiffin Service was created to meet the needs of new immigrants, international students, and busy individuals in search of affordable, nutritious, and traditional Punjabi food.
In this article, we’ll explore what makes Panjab Tiffin Service a top choice for those looking for food delivery in Burnaby, why it’s especially valuable for students and professionals, and how it continues to serve the community with commitment and care.
Why Panjab Tiffin Service Was Created
Panjab Tiffin Service is more than just a meal delivery option—it’s a service built from a personal need for authentic, home-style meals. The founders, both with strong backgrounds in management and customer service, were inspired to start this business after moving to Canada. Like many new immigrants, they missed the comforting taste of "Maa ke haath ka khana" (mom’s homemade food). As they adjusted to the demands of their new lives, including long work hours and managing households, they realized they weren’t alone.
Many others, especially international students and new immigrants, faced similar challenges: balancing work and studies with daily tasks like cooking and grocery shopping. With few affordable, healthy food options available, many were forced to rely on fast food or processed options, which led to less-than-ideal eating habits. This experience ignited the vision to create a food delivery service focused on bringing the taste, quality, and nourishment of Punjabi home-cooked meals to others in Burnaby and surrounding areas.
What Sets Panjab Tiffin Service Apart from Other Food Delivery Services?
