Current mood: I miss the phrase “everything worth doing is worth doing poorly”

For y’all that don’t know me that well, I fuck up a lot and I’m the embodiment of self destructive behavior, and that’s because I was raised to be a perfectionist.

Many people are like that and it’s okay to be, but I find a lot of perfectionists won’t attempt stuff if they don’t think they can do it perfectly. Like origami or art. They don’t don’t give themselves time to learn how to do it properly and quit immediately after starting, and this is what the phrase is for

One of the things I used to struggle with was brushing my teeth. It sounds gross as hell and it is, but I spent an entire year once without brushing my teeth because I couldn’t commit myself myself to spend the full 4 minutes of brushing, then using floss, then mouthwash for at least 30 seconds; 3 times a day and also after snacks too.

So I spent a year without brush my teeth, chewed gum constantly, then I had to get a ton of cavities filled at the end of it. Plus I had braces at the time too and those had to be taken off early.

But when I learned that phrase, it clicked with me. Brushing a day and for 30 seconds is better than nothing. Then when I got okay with that, a minute. And it kept progressing like that until I got to where I am now, a minimum of brushing 2 minutes 30 seconds in the morning and at night as well as using mouthwash, and then flossing at night too.

I’m not doing it perfectly, but I haven’t had a true cavity in two years (one of my teeth near the back got chipped pretty severely, and the other one near the front just got a little chipped). It’s a lot less painful to let myself be less than perfect, but still try as I can.

And I apply it to other things too. Like if I’m cooking; I don’t have to do the recipe to the letter if that stresses me out. I can throw together a bunch of random things, taste it along the way, and see if I like it. I just discovered today that if you wash the potatoes before cutting them and not after, then boil them in just a tiny bit of water and some spices, the potato starch thickens the water and spices up into a sauce. I made potatoes and gravy without even trying, and it tasted amazing.

If you can’t bring yourself to cook a wholeass meal, a few bites of something here or there is better than nothing. If you can’t finish an assignment on time and you don’t get an extension, turn in what you have!! Some points are better than a zero.

If you can’t bring yourself to take a shower, wipe yourself down with a wet rag, or at least change your clothes.

If you can’t get out of bed for hours at a time, sitting up from time to time will at least keep you from getting stiff and sore.

If you want to but can’t text someone back because of anxiety or depression, tagging them in this post is better than ghosting them, or sending them the fried shrimp code I’ll put at the bottom of this

If you cant bring yourself to exercise for an hour a day, do two minutes of stretching, or do lunges when you walk around your house to get something.

If you want to bake a cake, it’s okay to use the box mix too. I actually have a cheat for that- instead of oil, use melted butter (real butter works best) and add an extra egg to it; or you can replace the eggs and oil with stuff like apple sauce or any fruit or veggie purées out there. You can even just use soda for them too and the carbonation will make it rise (about 1/2 cup apple sauce = one large egg)- and it’ll taste the same as made from scratch, or sometimes even better

If you want to have a plant, but you can’t water it every day, succulents work great!! They’re desert plants so they only need water once every 7 to 10 days, and some of them even less.

If you want to take a moment to cry but don’t want it to drag out for too long, schedule little breaks in your day or week or month or year (everyone’s different) to focus on your crying. The more you cry, the less time it takes to actually cry. And crying is a form of self expression, as well as a natural response to pain of every kind, whether you realize it’s there or not. It’ll physically help you to let it out.

If you want to save up for something you’ve wanted but can’t seem to ever afford it, get yourself a piggy bank and every time you have spare change, put it in there. It doesn’t have to be a lot, and the piggy bank doesn’t have to be complex, it can be a disposable waterbottle. Just put what you can and keep saving, and by the time it’s full, it won’t feel like you’re spending money on that thing you want because you won’t see a single difference in your bank account or paper money. You’ll see a container of coins. A few pounds of metal in exchange for something that might bring a smile to your face, and it’ll be worth it.

If you want to draw something, draw it out. It doesn’t have to be perfect the first time. Draw it out as you can and then keep drawing it over and over again. Eventually, you’ll be able to create your vision.

You have to do something poorly before you can do it perfectly. Be gentle with yourself and you’ll get there. And if it helps, think about it like rain. Just one drop in a bucket won’t make a difference by itself, but repeated drops over time will fill it up well enough.

Brioche Loaf Recipe

Ingredients

½ cup warm milk

2 ½ tsp active dry yeast about 9 g

2 tsp honey

5 large eggs You can also use 4 large eggs

1 yolk from a large egg. Use 2 egg yolks if using 4 large eggs.

2 tsp vanilla

2.1 oz granulated white sugar 5 tbsp

17.6 oz AP flour 4 cups + 2 tbsp (Spoon and leveled)

1 ½ tsp sea salt fine grind

8.8 oz unsalted butter very soft, roughly divided into four portions (1 cup + 2 tbsp)

Instructions

DAY ONE

Making the dough

Measure all the ingredients.

Add the milk, yeast and honey into the mixing bowl and whisk gently to combine. Set aside for 10 minutes to allow the yeast to activate.

Add the eggs and yolks, and whisk gently to break the egg yolks.

Add the vanilla, sugar, flour and sea salt, and mix to form a scraggly dough.

With the dough hook attachment, knead the dough on speed 2 or 3 for about 3 - 5 minutes.

Add the first portion of butter, in increments, after the first 5 minutes of kneading. Allow the butter to be mixed well into the dough. This should take about 2 minutes.

Repeat with the other 3 portions of butter, kneading the dough for about 2 minutes after each addition. Make sure to stop the mixer to scrape down the sides of the bowl (and the bottom if needed) between kneading as well. You will have incorporated all the butter in about 9 - 10 minutes of kneading time.

Once all the butter is incorporated, scrape down the sides of the bowl (and bottom if needed), and knead the dough for a further 5 - 15 minutes on speed 5 or 6.

The dough will have been kneaded enough when it can be lifted fairly cleanly off the bottom of the bowl when picked up with the dough hook. It will be very soft and tacky to the touch, but shouldn’t stick to your fingertips. Rather than going by time, knead the dough until you have reached this consistency.

Flour your work surface, and turn the dough out onto the floured surface. Lightly flour your hands and the surface of the dough to prevent the dough from sticking to your palms.

Fold in the edges of the dough towards the middle and gently press them into the dough (see pictures in the post for more information). Carefully flip the dough over, and then with the heel of your palms, shape the dough to form a tight ball.

Carefully pick up the dough ball and place it back in the mixer bowl (or another large bowl).

Let it rise until it has doubled in size, in a warm place (72°F), for about 1 hour.

Turn the dough out onto a lightly floured surface, and press down gently to deflate the dough with your hands. Fold in the edges again as before towards the middle and press them in. Carefully flip the dough over (seam side down now). Tighten the dough into a ball with a smooth, taut surface (using the edges of your palms). Transfer the dough into the mixer bowl again.

Cover and let it chill in the fridge for at least 8 hours, or up to 24 hours.

DAY TWO

Shaping and baking the bread

Remove the chilled dough from the fridge. The dough will be much easier to work with now.

Butter and dust two 8.5 x 4 inch, standard loaf pans with flour. (You can also use 9 x 5 inch loaf pans).

Keep a bowl of flour, a pastry brush and a dough scraper/cutter ready as well.

Turn the dough out onto a lightly floured surface. Deflate the dough by flattening it lightly. Measure the weight of the dough, and then divide it into two EQUAL portions, using the dough cutter or a sharp knife.

Now you've got two dough portions to make two brioche bread loaves.

Shaping the loaves

Nantaise brioche loaf

Weigh one portion of the loaf and divide it into 8 equal portions.

For each portion (with the smooth side down), fold in the edges towards the middle as before. Carefully flip the dough over, and using a cupped palm, roll the dough portion on your work surface until you have a smooth dough ball (see pictures in the post for more details). Repeat with the other dough portions to get 8 smooth dough balls.

Place the dough balls in the loaf pan in a zig-zag manner. This will likely be a fairly snug fit.

After arranging the dough balls in the loaf pan, flatten them slightly. Then cover the pan with plastic wrap and set aside.

Braided brioche loaf

Divide one portion of the dough into 3 equal portions.

Flatten each portion into a small rectangle. Then tightly roll up the rectangle to form a tube. Using your palms, and a back and forth motion, roll out the dough into a 14 inch long bread rope. Apply light but even pressure to get a bread rope with even width.

Repeat with the other two portions.

Now you have three 14 inch long bread ropes. Bring the ends of the three ropes together and pinch to seal. Braid the dough, while being careful to avoid any loose folds and to not stretch the dough ropes at the same time. Once braided, the bread loaf should be a little longer than the length of the pan (about 9 - 10 inches).

Pinch to seal the other end. Using your palms, press down the ends of the bread to flatten them against the work surface. Tuck the flattened ends to get a lovely, rounded loaf.

Carefully transfer this to the buttered and floured bread pan. Flatten slightly to fit the loaf pan.

Cover with plastic wrap and set aside.

Regular bread loaf

Follow the same shaping instructions as for my white bread loaf in this recipe to form a regular bread loaf shape.

Proofing the bread before baking

Proof the bread in the covered loaf pans for about 2 hours at room temperature, or until doubled in size, and almost reaching the top of the pan. Preheat the oven to 325°F/163°C before baking the loaves.

Once doubled in size, brush the tops with an egg wash. Optionally, you can also sprinkle some Swedish sugar pearls on top for a sweet crunch.

Bake in preheated oven until golden brown on top and the internal temperature registers 190°F/88°C. This can take about 35 - 45 minutes.

Remove from the oven and let the bread loaf cool slightly - about 5 minutes.

Carefully flip the bread loaf out of the pan, onto a cooling rack. Let it cool completely. Store in an air-tight container.

Tips & Tricks

Notes on the dough: This dough is very soft and wet. Make sure you read the FAQ section and the post for information on the dough consistency, and how it changes after kneading. If you can't find an answer in the post or FAQ section, let me know. Please take your time kneading the dough while adding the butter (as recommended in the recipe). Notes on yeast

If you have access to fresh yeast, use 18 g of fresh yeast.

If you have access to instant yeast, use 4.5 g of instant yeast.

Notes on proofing: In winter, or if you don't have a warm place to proof the dough in your house, turn on the oven light, and keep the bowl inside the oven. The heat from the light will warm the oven sufficiently to help with the proofing. Use a metal bowl to make this proofing process go faster. Proofing times will vary depending on the temperature of the dough, environment and the type of yeast you use. So rather than going by time, go by sight and feel.

If you make a small indentation in the dough with your fingertip and it bounces back slightly, then it's ready to be baked.

If the indentation stays, it's starting to over-proof, so bake it as soon as possible.

If the bread deflates when poked with a finger, then it has over-proofed.

Strawberry-Lavender Buttermilk Cake

4 whole eggs room temperature

2 egg yolks room temperature

1¼ cups buttermilk, shaken

2 tsp. pure vanilla extract

3 cups cake flour, sifted

2 cups sugar

1 Tbsp. plus ½ tsp. baking powder

1 tsp. baking soda

½ tsp. salt

1 cup unsalted butter, cold and cut into small even pieces

Strawberry Lavender Compote:

2 cups fresh strawberries washed, hulled and sliced

½ cup sugar

1 Tbsp. lemon juice

1 tsp. dried culinary lavender

pinch of salt

Vanilla Whipped Cream Filling:

2 Tbsp. cold water

2 tsp. unflavored gelatin

1¾ cups whipping cream, cold, divided

¼ cup icing/confectioners sugar

1 tsp. pure vanilla extract

inch of salt

Whipped Lavender Frosting:

¼ cup whole milk

1 tsp. dried culinary lavender

3 sticks + 2 Tbsp. unsalted butter, softened and cut into cubes

4 cups icing/confectioners sugar, sifted

1 tsp. 5 pure vanilla extract

pinch of salt

few drops purple gel color

Preheat the oven to 350° F. Butter the bottoms and sides of three 8-inch round cake pans, line bottoms with parchment round, butter the rounds and dust with flour.

In a large measuring cup with a spout, lightly whisk the eggs, yolks, 1/4 cup of the buttermilk and the vanilla. Set aside.

In the bowl of an electric mixer fitted with the paddle attachment, whisk together the flour, sugar, baking powder, baking soda and salt. With the mixer set to low speed, add the cold butter one piece at a time, about 10 seconds apart. Continue mixing on low speed until all of the butter has been blended and there are no clumps. Mixture should have a fine crumbly, cornmeal-like texture.

Add the remaining 1 cup buttermilk to these dry ingredients, and mix on medium speed for 4 minutes. Scrape the sides and bottom of the bowl to ensure all of the ingredients are well incorporated. Reduce the speed to low and gradually add the egg mixture; once the mixture has been added, increase speed to medium and beat for 1 minute, but no more. Gently fold batter once or twice to ensure the egg mixture has all been incorporated.

Divide batter evenly among the 3 prepared pans (use a kitchen scale to ensure 3 even layers). Place two of the cake pans on a baking sheet and bake until a cake tester or wooden toothpick inserted into the center comes out with a few crumbs but no batter, about 28 minutes. Repeat with the final layer. Let the layers cool in the pans for 10 minutes, then loosen sides with thin metal spatula or knife, and carefully turn out onto wire racks, peel of the paper liners, and let cool completely.

For the strawberry lavender compote, In a small saucepan over medium heat, combine 1 cup of the strawberries, sugar, lemon juice, lavender and salt until the berries start to break down, stirring often, about 10 minutes.Lower the heat and simmer until compote coats a spoon, about 15-20 minutes.Remove from heat and let cool down slightly. Using an immersion blender and pulse a few times, or use a handheld masher. Stir in remaining fresh strawberries. Keep covered and chilled for up to 3 days. 

For the vanilla whipped cream filling, In a small stainless steel bowl, place the cold water and sprinkle with the gelatin. Let sit for at least 10 minutes. In a small saucepan, bring 1/3 cup of the cream just to a simmer, then stir into the gelatin mixture until the gelatin has dissolved. Refrigerate, stirring frequently, until cool but not set, about 8 minutes. (Be careful to keep your eye on it, or you'll end up with Panna Cotta!) In a chilled stainless steel mixer bowl with a chilled whisk attachment, beat the remaining whipping cream, icing/confectioners' sugar, vanilla and salt until it thickens just slightly and soft peaks begin to form, about 1 minute. Very gradually add the gelatin mixture and continue beating until medium-firm peaks form. Keep covered and chilled until ready to use.

For the whipped lavender frosting Add the lavender blossoms to 1/4 cup (59 ml) whole milk, cover, and refrigerate overnight (or at least several hours). Strain into clean bowl/glass.In the bowl of an electric mixer fitted with the paddle attachment, whip butter for 8 minutes on medium speed. Butter will become very pale & creamy.Add sifted icing sugar, vanilla, salt and lavender milk, and mix on low speed for 1 minute, then on medium for 6 minutes. Frosting will be very light, creamy and fluffy. Tint with a few drops of purple gel color.

To assemble, trim any dark edges or crust from cake layers with a very sharp serrated knife. Place your first cake layer, face-up, onto a cake stand, plate or 8-inch round foil cake board. Fill your pastry bag with about 1-1/2 cups of the Whipped Vanilla Frosting and pipe a dam around the perimeter of the cake layer (this will keep our compote and Vanilla Whipped Cream Filling in place). 

Spread about 1 cup of the cream filling on top of the cake layer and spoon a few tablespoons of the compote and berries inside of the dam. Gently spread the filling using a small offset spatula.Repeat until you come to your final cake layer, which you will place face-down. If you find the cake too soft and unstable, put in refrigerator for a few moments to firm it up, then resume. If you see any spots where the compote is peeking through or starting to ooze out, use your piping bag to squeeze more frosting over it, between the layers. Use your clean offset spatula to carefully smooth the frosting so it's flat against the cake.Cover the entire cake gently with plastic wrap, and then, once covered, use your hands to carefully ensure the cake is lined up straight and flattening any lumps or bumps of frosting. Chill for at least 30 minutes.Once cake is stable and chilled, apply an even layer of lavender frosting to the entire cake, to seal in crumbs. Chill again until frosting is firm, about 30 minutes.Place cake plate/board with cake onto a turntable, if possible. Be sure your remaining frosting is smooth and fluffy, working it with a rubber spatula for a few moments. You can even warm in microwave for a few seconds to soften it up. Apply a final layer of frosting to the cake. Top with fresh non-toxic flowers, strawberries, or decoration of your choice.Keep cake refrigerated for up to 2 days, but serve at room temperature. Remove flowers before eating.

Hi, beautiful people, today is such a lovely day the babies are sleeping the teens are off doing god knows what but I’m not going to stress about it *makes mental note to text Fiona as soon as this is over* the house is quiet and I have a craving for cake. (ˆڡˆ) This layer cake delights with its classic pairing of lemon and blueberry. I’m a big fan of light whipped cream cheese frosting, adding fresh blueberries on top it creates a tangy treat sure to be a crowd-pleaser this is also me trying to be cute and match my kitchen. I’m going to do my best and make this as easy as possible for you guys, but I want to get in every little detail too. Let’s begin, shall we!?

Lemon and Blueberry Layer Cake + Cream Cheese Frosting

Makes a three-layer 15cm (6”) cake and serves 6-10 people

Ingredients

Lemon and Blueberry Cake

250g unsalted butter, softened

300g (1 1/3 cups) caster sugar

1 tsp vanilla paste

Zest of 1 lemon

4 large eggs, at room temperature

300g (2 cups) plain flour

2 tsp baking powder

¼ tsp fine sea salt

100ml whole milk

180g fresh blueberries

Cream Cheese Frosting

200g cream cheese, softened

100g unsalted butter, softened

480g (3 cups) sifted icing sugar

1-2 tsp lemon juice

Decorations

125g fresh blueberries

Icing sugar (to lightly coat cake)

Lemon zest (optional)

Instructions

Lemon and Blueberry Cake

Preheat oven to 170°C (150°C fan-forced) and grease or line two 15cm (6”) cake tins with greaseproof paper.

Place butter, sugar, vanilla and lemon zest in a free-standing mixer with paddle attachment and beat on medium speed until light and fluffy.

Add eggs, one at a time continuing to beat on medium speed until light and airy. Scrape sides of bowl down with a spatula after each egg to ensure ingredients are well combined.

In a separate bowl, sift together flour, baking powder and salt, then add 1/3 of these dry ingredients to the batter and beat on low speed to combine.

Add 1/3 of the milk to the batter, then continue to alternate adding the dry ingredients and milk and beating on low speed until combined. Take care not to overbeat.

Divide batter evenly between cake tins, weighing the tins to ensure equal volume, then divide blueberries evenly between tins, pressing them in gently below the surface.

Bake in preheated oven for approximately 55-60 minutes, or until a cake tester comes out clean.

Allow cakes to cool completely on a wire rack. For easier assembly, chill cakes 30-60 minutes.

Cream Cheese Frosting

Beat cream cheese, butter and sifted icing sugar until light and smooth.

Add lemon juice to the desired flavor, but take care not to add too much as you don’t want the frosting to become too soft.

If the frosting is a little soft – refrigerate for 15-30 minutes to firm slightly before assembling the cake. When ready to use, place frosting in a piping bag with a large round nozzle.

Assembly

Assembling this cake is easiest when the cake and frosting are both slightly chilled.

Level each cake by slicing off the cake domes, then cut them in half lengthways to yield four cake layers in total. Use the base of one layer for the base of the cake, and the base of the other layer (turned upside down) for the top of the cake to avoid crumbs in the frosting.

Place icing sugar in a large plate or tray, and gently run the sides of each cake layer in icing sugar, dusting off excess. This gives the white-washed appearance of the finished layer cake.

Place the first layer on a round cake plate or turn-table and pipe a layer of frosting on the top, starting at the periphery and working your way in, then place the next cake layer on top and gently press down. Repeat frosting and applying each layer, smoothing the top layer of frosting with a palette knife.
