I would be tickled to death when my grandbabies ask me to make my dipping sauce for chicken tenders, wings, their saucy fries, and fried anything really, even for fresh veggies ( my favorite is broccoli and carrots).
So I decided, now that I'm in my 90s, I better leave my children, children, children, and now the world a cookbook. This is a simple dipping sauce recipe that's been in my family year's.
Throughout the years I upgraded my recipe to here is the newest recipe:
âŞ
1 cup mayonnaise
1/4 cup chili sauce ( Heinz)
1 tsp Dijon mustard
1/4 cup ketchup
1 tsp garlic powder
1 tsp onion powder
2 1/2 teaspoons Worcestershire sauce
1/2 teaspoon ground black pepper
1/2 teaspoon Tabasco sauce
1/4 cup olive oil
Juice of one lemon
âŞ
Mix all ingredients well and store in refrigerator overnight.

Celebrating July 4th in Strange Times, Pt 2
Of a Too-hot Kitchen, the Sauce, the Meatballs, and the Tater Sallid.
I got goin' as soon as I felt caffeinated, glad I did, as far as time required to get things done. Had to tell my self not to lose focus or get distracted a few times, and things are done, except the oven-roasting of the chicken thighs slathered with The Sauce, which can happen about 5pm. By 1pm kitchen was too hot, so cooling breaks of running back to my room for five-ten mins and back out ensued.
First things first today: Start The Sauce & The Tater Sallid.
for The Sauce:
1 lg yellow onion, finely sliced, and then minced...very finely chopped!
Start clarifying that in about 2 tblspns butter over medium heat. Sprinkle in a teaspoon of salt and about the same in coarse-ground pepper.
6 -8 large cloves of garlic, finely minced, thrown into the pot with the butter and onion mix. Stir and don't let burn. You want extremely clarified onion/garlic bits, speckled with black pepper.
Once you get there, dump in 16 oz tomato sauce, stir and mix thoroughly.
Now pour in 1/2 cup Grandma's Molasses, stir in.
Add in 1 cup Heinz ketchup, and 1/4 cup white vinegar, stir vigorously.
Stir in 1 heaping teaspoon of coarse-stone-ground mustard.
Now pour in 1 cup strong black coffee. Stir it in until you've got a mixture that's pulling together.
Now keep on the back burner to "cook down" until it is a thick, viscous and clingy goo. Perfect for stickin' to da chicken.
Now throw on the potatoes to boil: 4 or 5 lbs of either red potatoes or goldens. You want a waxier tater for this, rather than a gritty one like a russet. Yeah...boil them quickly, salted water to cover by at least a couple inches. Twenty -thirty minutes tops. Until the skins are cracking. Drain and allow to cool for about 20 minutes.
While that's happening, hard-boil 4-5 eggs, depending on what size they are. These were tiny mediums, so I'm using 5. Bring to a boil, cover, remove from heat and let sit for 15 minutes. Voila. Peel.
Meanwhile, chop one big-ass RED onion, and 3 or 4 garlic dill pickles.
Once the taters have cooled some, hold them with a hot-pad in your palm, and roughly chop them. You want them still MOSTLY hot, but cool enough you don't hurt yourself. It's that mid-point that will give you the texture/feel you want.
Now, pour and sprinkle 2 handfulls of the dill pickle juice over the taters. Add the red onion, pickles and a jar of diced pimientos, plus some of the juice as well. Put the eggs in and the use a knife to rough-chop them as they sit atop the rest of the ingredients.
Now, add 1 1/4-1 1/2 cup HELLMAN'S or BEST FOODS MAYO. Period.
Now stir. Keep stirring, as you are folding all the ingredients together.
That's about the halfway point. Keep goin'...what you're lookin' for is this:
Now, Cover tightly and fridge for the rest of the day, until dinnertime.
Now make The Meatballs (which are tasty dipped in The Sauce!):
Do as you did for The Sauce, the clarified onion/garlic mix. Set aside to cool
In a big bowl, pour the following:
2 cups Progresso Italian Breadcrumbs
1 cup grated parmesan
1/2 cup finely chopped parsley
Stir to mix.
Take a 2-cup Pyrex measure, and pour in 1 cup cold water.
Crack in 4 eggs...use a fork and break the eggs up, and distribute through the water. Pour into the bowl and stir into the dry ingredients. Add the onions and garlic (now cooled down.)
Crumble in a pound of ground beef and a pound of hot Italian Sausage. Now comes the fun part. Be four again and squish and squish until it all comes together as a solidly distributed mix.
Form into balls and bake at 350 for about a half hour and you get this:
Did I mention they're killer dipped in The Sauce?
lulz. OK. SO: Meatballs? Check! Sauce? Check! Tater Sallid? Check! It's about ten til four. I'm gonna shoot for a seven-seven-thirty eat time, so I'll start roasting the chicken about 5pm.
Which means I got an hour to CHILL in THE AC.
Will follow up with Pt 3 later.
Y'all chill.

Gluten-Free Ketchup & Ranch Dressing: Healthier Alternatives and Uses
In the world of condiments, ketchup and ranch dressing have long been staples in many households. However, for those with dietary restrictions or who simply want to make healthier choices, finding suitable gluten-free options is crucial. In this guide, weâll delve into the benefits and recipes for gluten-free ketchup and ranch dressing, exploring how these alternatives can fit into a healthier lifestyle without compromising on taste.
The Rise of Gluten-Free Ketchup: A Healthier Choice for All
What Is Gluten-Free Ketchup?
Gluten-free ketchup is a variant of traditional ketchup that is specifically made without any gluten-containing ingredients. Gluten is a protein found in wheat, barley, and rye, and individuals with celiac disease or Gluten Free Ketchup sensitivity must avoid it to prevent adverse health effects. Gluten-free ketchup ensures that people with these conditions can still enjoy the tangy, sweet flavor of ketchup without worry.
Benefits of Gluten-Free Ketchup
Digestive Health: For those with celiac disease or gluten intolerance, gluten-free ketchup is essential to avoid symptoms like bloating, diarrhea, and stomach pain. Switching to gluten-free options helps maintain digestive comfort.
Reduced Inflammation: Some individuals experience inflammation and joint pain from consuming gluten. Gluten-free products can help reduce these symptoms and contribute to overall well-being.
Inclusive for All Diets: Gluten-free ketchup is not only for those with gluten sensitivity but also for anyone looking to incorporate more diverse and health-conscious options into their diet.
Ingredients to Look For
When shopping for gluten-free ketchup, it's essential to check the label to ensure it meets gluten-free standards. Look for:
Tomatoes: The base ingredient in ketchup, usually in the form of tomato paste or puree.
Vinegar: Typically distilled vinegar or apple cider vinegar. Ensure it's gluten-free.
Sugar: Used to sweeten the ketchup, but check for any gluten-containing additives.
Spices and Seasonings: Many ketchups include spices for flavor. Make sure these are gluten-free and not mixed with gluten-containing agents.
Popular Gluten-Free Ketchup Brands
Heinz Simply Heinz: Known for its classic taste, Heinz offers a gluten-free version that retains the rich flavor of their original ketchup.
Annieâs Organic Ketchup: A great option for those who prefer organic products, Annieâs ketchup is both gluten-free and made with natural ingredients.
Primal Kitchen Organic Ketchup: This brand emphasizes clean ingredients and is gluten-free, paleo-friendly, and made without added sugars.
DIY Gluten-Free Ketchup Recipe
If you prefer making your ketchup at home, here's a simple recipe:
Ingredients:
1 can (6 ounces) tomato paste
1/2 cup apple cider vinegar
1/4 cup honey or maple syrup
1/4 cup water
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
Instructions:
In a bowl, combine all the ingredients and mix until smooth.
Transfer the mixture to a saucepan and heat over medium heat.
Simmer for 10-15 minutes, stirring occasionally, until the ketchup thickens.
Let it cool before transferring to a bottle or jar. Store in the refrigerator for up to 3 weeks.
Creative Uses for Gluten-Free Ketchup
As a Dip: Use it as a dip for fries, chicken nuggets, or roasted vegetables.
In Recipes: Incorporate it into recipes like meatloaf, barbecue sauces, or marinades.
On Sandwiches and Burgers: Add it to your favorite sandwiches and burgers for that classic ketchup taste.
Ranch Dressing: A Classic Favorite Reimagined
What Is Ranch Dressing?
Ranch dressing is a creamy, tangy dressing made with buttermilk, sour cream, mayonnaise, and a blend of herbs and spices. It is often used as a salad dressing, dip for vegetables, or a condiment for various dishes. Like ketchup, ranch dressing can be modified to be gluten-free, making it suitable for those with dietary restrictions.
Benefits of Gluten-Free Ranch Dressing
Digestive Comfort: Ensuring that ranch dressing is gluten-free allows individuals with gluten sensitivity or celiac disease to enjoy it without discomfort.
Healthier Options: Many gluten-free ranch dressings are made with natural ingredients and fewer additives, contributing to a healthier diet.
Versatility: Gluten-free ranch dressing can be used in various ways, from salads to dips, adding flavor without compromising dietary needs.
Ingredients to Look For
When selecting gluten-free ranch dressing, check the label for:
Buttermilk and Sour Cream: These ingredients provide the creamy texture.
Mayonnaise: Ensure it's made without gluten-containing ingredients.
Herbs and Spices: Commonly used in ranch dressing include dill, parsley, garlic powder, and onion powder. Verify that these are not mixed with gluten-containing agents.
Popular Gluten-Free Ranch Dressing Brands
Hidden Valley Original Ranch: Known for its classic ranch flavor, Hidden Valley offers a gluten-free version that maintains the same great taste.

Fireflyâs Glow 2/?
Part 1Â | Part 2 You are Here
A/N: This chapter gave me a helluva time, but here ya go with the promised literal box that I almost scrapped. TW: Spiders - Iâve bolded the first two words that start and end that section if youâd like to skip. This should be the last of the main whumpy bits - I struggle a bit with that I think, but I have LOTS of ideas for the angst and H/C.Â
For @tsarinatorment and @janetm74 for the prompt :)Â and with thanks to @godsliltippy and @gumnut-logic for the support as I whined about this chapter, and then @bonsaiiiiiii who wanted a tag for more pocket!Gordon.Â
*Nervously sends out to the ether*

Part 2
Gordon pressed his hands against the smooth glass.
âWhat is all this, Fuse?â Gordon asked, hoping his voice carried enough to be heard, though it echoed around the small containment. âWhat did he do to me? Are my brothers okay?â
Gordon was not expecting much of an answer, and it was rather obvious what happened to him. But the surprise in Fuseâs expression softened for a moment all the same, visible even through the distortion of the glass, and Gordon could recognize the conflict behind the silent pause. Â
âI shouldnât be talking to ya,â Fuse said.
âFuse. Please?â
âMmm. Theyâre fine. He only captured you.â The bottle shook briefly under Fuseâs hand as he peered through it at Gordonâs hopeful expression. âAh, shit, fine. Okay, so theyâre coming. The Hoodâs nervous â packing quickly.â
âWhere are we?â
Fuse shook his head. Thatâs all Gordon was going to get. From afar, Gordon heard Havoc call her brother, and Gordon could see the momentary panic in the larger, obtrusive eye. The larger man hastily placed Gordonâs bottle back on the shelf and turned to answer her, even as Gordon pled for him to wait.
âFuse! Donât leave me here.â
But the man was gone. Gordon slammed his fists against the transparent walls of the makeshift prison with a frustrated growl, even as it gave the smallest of trembles under his hands. A little to close for comfort there. In his swift exit, Fuse had placed the vessel nearer the exposed side of the shelf â shifting off balance there would be a dangerous topple.
Okay, Gordo, time to regroup.
Heâd still learned a few things. First â this wasnât a main location and that explained the instability of his container if the intent was for it to be temporary. And heâd learned that his brothers were coming! That meant he wasnât going to sit around and wait for the Hood to take him away to a new base or safe house. He needed to give his brothers the best chance of finding him. Â
One thing at a time. First, he needed to escape.
So no toppling out; how about toppling in? Gordon turned to investigate the new space his positioning afforded him. It would at least get him onto the shelf if he could put the right amount of pressure in the right place.
He carried with him a lot of important life lessons from his brothers. This one was from John: smacking the bottom was not actually the prime spot to get the ketchup out of a Heinz 57 glass bottle. And because it annoyed his older brother, he used to keep hitting the bottom anyway, even though he knew John was right. So, he would aim for where the 57 would be. His container wasnât quite the same shape, but he could make a well-educated guess. He knew for sure that his reach was too low, so heâd need to jump.
Gordon gave his non-injured right foot a test bounce.
It wouldnât be enough. Gritting his teeth, he lowered his left foot to the floor and launched himself upward to the imaginary 57 before he could think about the pain. His body collided with the opposite side of the container, and he started to slide back to the bottom even as the vessel tipped and then fell to its side with a delicate bounce against the wooden shelf, though it did not shatter.
Dazed, his breath came in gasps and fogged the glass below him.
Keep. Moving. Gordo.
He crawled his way to the opening and out, then stood.
There was little in this room that would give away that there was a prison below and that it was a hideout for the Hood and the Chaos Crew. Overlooking the space as he was now, it appeared to be a simple, lightly decorated lounge room with a mahogany coffee table in the center and a beige reclining couch across from him. Â
There was an empty cup on the coffee table, so this place at least seemed lived in. Behind him the wall was brick, even though the rest of the room was painted an off-white to complement the furniture. As he glanced over the side of the shelf, he saw that the dark stone extended all the way from the floor to the ceiling. The lingering scent of dusty wood smoke around the area told him his shelf was actually a fireplace, but the part he cared about was the stone. The cut was intentionally rough and uneven to give a rustic appearance to the inside of the home. He could climb down that.
The cold of the rock permeated his fingerless gloves where he dug his nails into a groove and swung his body to the left so his feet could find purchase on the ridges.
The descent was cautious and slow going without the safety net of a rope or a grapple or a spotter at his disposal. He felt the strain in his legs, his arms, his core, even his fingers, as he descended. Virgil â and he felt a pang in his chest thinking about him laughing that awful cackle â would be having a conniption fit if he knew what Gordon was attempting, especially with his ankle throbbing as it did.
He knew his position left him vulnerable, and as he approached the last few rocks before the floor, he was already planning his next move. He needed a rope â if he could get to the couch there was a blanket he could pull a thread from and repurpose. He also needed to hide. It depended on how close his brothers were.
Resources first? Hide first?
He never had the opportunity to decide.
âTheyâre here! Move!â
With an angry shuffle of feet, the floor vibrated, and though the stone held firm in Gordonâs capable hands, the shelf above him did not. The container, which he had so precisely calculated how to topple, finished its roll as it tumbled off the shelf into a free fall above him. Time moved quickly and ever so slowly all at once, Gordonâs terrified eyes wide as he followed its plunge toward the ground. And he couldnât escape it, couldnât move, couldnât watch â
It shattered.
It landed beside him â too close - with a shower of glass that hurled shiny, translucent daggers into his hair as he ducked his face into the space between his arm and his chest in attempt to protect himself. But the accompanying sound of breaking glass hitting hardwood reverberated in a devastating banshee scream that consumed his body, and he fell stunned, his head spinning, his ears ringing, the soundwaves crippling him even as they coursed through him and carried his own screech aloft.
âNice try.â Female. Havoc. He felt her grab him by his waist between her fingertips and raise him up. He blinked blearily at the blood that ran down his wrist, lacking the energy to fight or even look up at Havoc and Fuse at all.
âIs he ok?â
âDoes it matter?â She fumbled to unlatch a box at her side. âWe need to go.â
His vision started to clear enough for him to realize he was headed back into the darkness, and sure enough, the light disappeared once again with a definitive click of the latch somewhere above him.
~*~
The Earth deserved to be loved, appreciated, and respected â she gave live, she could take it away. But to be honest, the Universe was trying to kill him today. He was not sure what he did to upset her so much. After surviving in a cell for who knows how long, escaping the height of a fireplace, and then somehow managing to dodge an incursion of broken glass shards with only a few scratches up his arm, he knew he was either incredibly unlucky or quite lucky indeed (depending on how you spun it).
But this was getting ridiculous.
Spiders were not in his preferred field of study, but he knew enough to recognize the giant wolf spider, family Lycosoeidea, that shared his current space. It was the eye structure that gave it away. Two large black orbs dominated the hairy brown face, with four smaller eyes in a row below. Though he could only see a sliver of them from this angle below the creature, he knew there were two more medium-sized eyes above the main ones. Eight in total over three rows. Â
In any other situation, Gordon would have carefully captured her in a cup and taken her outside to feast on the pests there. Though wolf spiders would generally only bite humans when provoked, their venom could still be quite painful, and cause swelling and irritation. These, however, were not normal circumstances.
Here she was dangerous; half his size, but still giant. She was as much as prisoner as he was, and who knows how long sheâd been in here without food. Â And worse, unlike their other arachnid cousins who relied on vibrations and movement to see, wolf spiders with their eight eyes could see quite well. Â
Hers were locked hungrily on him. At the bottom of her elongated jaw, two fangs pointed inward, poised to strike into Gordonâs sides. Â He had no human size to counter her venom; a bite would be his death.
Heâd had enough of that already. And this time he had resources.
When Havoc released him into the box, heâd hit the contents of it hard, and everything was unsteady enough to jostle as she moved. Feeling around, a light was the first thing he found, small enough for him to hold in his arms and attached to a ring of a keychain. He was able to hit the power button with the palm of his hand. It wouldâve been his thumb if he was the right size.
Next there was a pair of snips, which was about the same size as himself but clearly intended for delicate cutting based on the proportions of the dangerous edges and the grip.
A small, thin sewing pin there was as well, and a spool of wire. This was a portable diffuser kit for explosives, he realized.
Then, drawn by the light, came the eyes.
In the time it took for him to take stock of the tools around him, the world around them lurched again. He landed on his backside, and the spider was tossed to the other side of the kit. The movement gave him the extra seconds he needed to scramble for the sewing pin and to raise it upward like a rapier just in time to pierce the spiderâs cephalothorax as she came down with a cry.
God, he felt that.
He shimmied out from under the creature with a wheeze, the world around him still sliding back and forth with Havocâs run.
~*~
His heartrate settled, and he lugged the keychain light into his lap where he could easily reach the power button with his hands and started flickering morse code into the container walls, not even sure if the light would reach around the edges of the box.
Gordon had started by counting, but after a while all thought became the sporadic shifting of his dark world and the distorted CPR of his hands hitting the button, and he realized he had no idea how much time had passed since he was thrown into the box. Surely, they were long gone from the safe house by now.

The world toppled, hurling him against firm metal as it spun away from the echo of Havocâs groan.
He ducked his head between his knees, bracing for a crash landing that never came, though he felt the connection of the box landing in a new set of hands.
âWhatâs so important in here, I wonder?â He heard a voice say.
A voice that prompted all the adrenaline in his veins to dissipate in an instant, the voice of the clouds in the sky. Brother. Protection. Light flooded his chamber, and Gordon, covered in blood and ichor, wearily looked up at his much larger, cleaner, human-sized brother.
He stood up with a groan and brandished the sewing pin like a sword before sliding it to his side where heâd wrangled a piece of wire into a makeshift belt.

Healthy Low Carb Recipes
Hmm. When you think about âlow carbâ some images that come to mind are celery sticks with cottage cheese, boiled spinach and flavorless chicken. But in reality, low carb is unprocessed, whole food thatâs good for your gut (internally), your waistline (externally) and your taste buds. Letâs get cooking!
Low(er) carb jicama nachos
Serves 2-4
Ingredients 1 large jicama, peeled and sliced into 1/8-inch slices 1 pound ground turkey, beef, tempeh or tofu, browned and drained 2 Roma tomatoes, diced 1 small sweet onion, diced 1 cup cashew nut âcheeseâ Âź cup minced pickled jalapenos Âź cup minced olives
Place the jicama slices in a single layer on a large serving platter.
Spread the cashew nut cheese evenly over all the slices.
Sprinkle the remaining ingredients over the slices and serve!
While this recipe isnât the lowest carb appetizer out there, substituting jicama for traditional tortilla chips cuts down on the overall carb count and adds fiber to the mix.
Warning: Itâs messy! If you donât want to deal with falling toppings, then slice the jicama into matchsticks and mix it with all the remaining ingredients to form a âslawâ and serve it with a fork.
Grilled ribeye steak with bleu cheese crumbles
Serves 1-2
Ingredients 16 ounce ribeye steak 1 tablespoon olive oil 1 teaspoon Kosher salt 1 teaspoon coarsely cracked black pepper Âź cup crumbled bleu cheese
Put a cast iron pan in the oven and heat the oven to 500 degrees.
Remove the pan and put it on the stove at high heat for 5-6 minutes.
Season the ribeye on both sides with the olive oil, salt, and pepper then sear it for one minute on each side.
Put the pan in the oven for two minutes, flip the steak over and bake for another two minutes.
Remove the steak from the pan and let it rest for three to five minutes. Top with the crumbled cheese and serve.
Ceasar salad with grilled shrimp
Serves 2Ingredients 1 pound
Diced romaine lettuce 1 cup croutons ½ pound large shrimp, peeled and de-veined Âź â ½ cup full-fat ceasar dressing (to taste) 1 tablespoon butter Cracked black pepper, to taste
Melt the butter in a large saucepan over medium heat.
Add the shrimp and cook until pink. This usually takes only a few minutes. Donât overcook the shrimp because the texture will turn rubbery.
In a large bowl, toss the remaining ingredients and top with the shrimp.
Traditionally, ceasar salad is served with anchovy fillets mixed in. If you love them, substitute them for the shrimp. If you hate them, go with the shrimp or make the salad without any protein.
Tangy dipping sauce
Serves 4
Ingredients 1 cup no sugar ketchup (Such as Heinz 57 sweetened with Splenda) 1/3 cup low-sodium soy sauce 1 tablespoon Tabasco hot sauce (or a brand of your choice)
Combine all ingredients and serve as a dipping sauce for chicken, beef, tofu, jicama âfriesâ or celery root âpotatoâ chips.
If youâre not a spice-loving maniac, you can leave out the hot sauce.
Now youâre hungry, right? Yeah, we are too. The cool thing is, low-carb doesnât mean starvation. You can eat full-fat foods, such as cheese, avocados and butter, because theyâll help to make you feel full and satisfy your taste buds. So what are you waiting for? Fire up the grill!

New Jersey Sloppy Joe 4 sandwiches Ingredients Coleslaw ½ pound green cabbage, shredded Ÿ cup white vinegar 1 teaspoon granulated sugar kosher salt black pepper Russian Dressing ½ cup mayonnaise 3 tablespoons Heinz chile sauce (or 3 tablespoons ketchup + ½ teaspoon Worcestershire sauce + ½ teaspoon chile powder) 3 tablespoons pickle relish 1 teaspoon hot sauce 1 teaspoon onion powder kosher salt Sandwich Assembly 1 loaf unsliced rye bread, ploughman-style or boule ½ pound sliced turkey, ham, roast beef, pastrami, or tongue (pick two) Ÿ pound swiss cheese 2 tablespoons butter, slightly softened INSTRUCTIONS Coleslaw Combine the cabbage, vinegar, sugar, and ½ teaspoon salt in a medium bowl and massage it with your hands to break down the fibers. Season well with black pepper and toss. Set aside for at least a few hours, ideally overnight (in the refrigerator). When you're ready to assemble the sandwich, drain any excess liquid from the slaw. There will be leftovers. Make another sandwich tomorrow. Russian Dressing In a small bowl, whisk together mayonnaise, chile sauce, relish, hot sauce, and onion powder. Season with salt to taste. There will be leftovers. Sandwich Assembly If using a ploughman-style loaf of rye bread, work horizontally and slice three Ÿ-inch pieces from the center of the loaf. If using a boule, work vertically and slice three Ÿ-inch slices from the center of the loaf. Lightly butter one slice of bread, then, working from the outside in, lay on folded pieces of your first meat so that the folded edges hit the very outside of the bread. The exact amount will depend on the size of your bread. Repeat with the second slice of bread and second meat. Lay a few spoonfuls of coleslaw over each meat-covered slice of bread, fanning out the slaw with a butter knife or offset spatula so it reaches all the way to the edge of the bread evenly. Dollop a few spoonfuls of Russian dressing over the coleslaw on each slice of bread, then use the butter knife or offset spatula to evenly spread the dressing to the edges. Lay cheese evenly over the Russian dressing on both slices of bread. Place the first layer of the sandwich over the second layer. Butter the third slice of bread, then place it, butter side down, over the top layer of the sandwich. If using ploughman-style bread, cut the sandwich into thirds or quarters lengthwise, then once crosswise to make even squares. If using a boule, slice the sandwich into three pieces by making two diagonal lengthwise cuts. If you want to keep the sandwich from getting sloppy too quickly, you can stick each section with a cocktail toothpick.

A lesson in North Americaâs dearly loved 5th taste sensation â umami! Slow roasted tomatoes âketchup â is high in this fifth taste sensation. In Asia they love their umami rich soy sauce! (The other 4 are sweetness, saltiness, bitterness, sourness.) Many years ago when I worked as a journalist for the magazine division called Specialty Publications of the London Free Press, I covered the London Rib Fest. I was lucky enough to have the rib contest winner share his award winning sauce recipe with me for a story in one of the mags. I have revised the recipe over the years and it always gets rave reviews from rib lovers. Its hard to believe such a simple recipe can produce such a delicious rib sauce. This is my husband Shawnâs favourite ribs, tonight for dinner. Super high in umami...slow simmer ketchup. Hence why this recipe was a winner. 2 cups Heinz No Sugar ketchup 1/4 cup white vinegar 1 small sweet onion minced 1 whole bulb of garlic, cloves peeled and minced. 1 tablespoon compliant hot sauce Pepper to taste. (No salt) as there is enough in ketchup Put all the ingredients in a blender and purĂŠe. Place the sauce in a pot and simmer for an hour on low. Coat almost cooked ribs with sauce to caramelize. Serve ribs with extra sauce. (Use the extra sauce on top of your meatloaf!) Baked Beans for July 4th
I was thinking about which "real American" foods to serve on July 4th. Not just the usual icons: burgers, apple pie, lemonade. I wanted something that represented the "mongrels" that we are: Americans may be tribal in some ways, but we are also an odd mix-and-blend of a zillion cultures.
And so is American food.
For example, some say that Baked Beans are originally from France -- some sort of easy version of cassoulet. But the countries where they eat baked beans the most are English speaking: England, Ireland, Canada and Australia.
And yet ... baked beans are also a favorite in Holland and Hong Kong.
And of course beans themselves are native to South America, so who knows?
The original Puritan colonists in New England made baked beans often and for the same reason as observant Jews make cholent -- the dish cooks slowly in a pot so there's no work to be done during the Sabbath. Baked beans have been popular ever since, and particularly so after the canned versions first came along at the turn of the 20th century.
Green labelled Heinz Vegetarian baked beans were a standard item at my house when I was a kid.
So, baked beans it is.
I like making my own because when they're homemade I can season the beans the way I like, make them spicy or not, use more or less sugar (or sugar substitutes such as honey or maple syrup), make them vegetarian or with meat.
I recently had a couple of slices of flanken left over, so I decided to use them in a new recipe.
My husband usually likes my cooking and there are some dishes he thinks are so good he brags to people about them. Like my recipe for Carrot Soup with Harissa and Coconut.
These beans? He told me several times that they are among the best foods he has ever tasted. In fact, one night he only had baked beans (and a few of the chunks of flanken in them) for dinner.
So, this recipe is a yes for July 4th.
Baked beans take time. But you can make them several days ahead. They last for a week in the fridge. If you don't have flanken you can use chuck, smoked turkey or some kind of sausage.
BAKED BEANS FOR THE FOURTH OF JULY
1 pound dried navy or great northern beans
water
2 tablespoons vegetable oil
6-8 ounces beef chuck or flanken , cut into chunks
1 medium onion, sliced
1/3 cup dark brown sugar
1/3 cup honey
1/3 cup ketchup
1/2 teaspoon salt
1 tablespoon powdered mustard
Place the beans in a large saucepan and cover them with water. Bring the water to a boil over high heat. Lower the heat and cook for 2 minutes. Remove the pan from the heat and let the beans soak for one hour. Drain the beans and return them to the pot. Cover the beans again with water and bring to a boil over high heat. Lower the heat and simmer for 45 minutes. (Alternatively, cover the beans with water and let them soak for at least 8 hours.) Drain the beans and place them in an oven-proof casserole. While the beans are cooking, heat the vegetable oil in a sautÊ pan over medium heat. Add the meat and cook for 5-6 minutes, turning the pieces occasionally, until they are browned. Remove the meat from the pan and add to the beans. Add the onion to the pan and cook for 2-3 minutes to soften. Add to the drained beans and meat. Place the brown sugar, honey, ketchup, salt and mustard in a bowl and mix thoroughly to blend the ingredients. Stir in 2-1/2 cups water. Pour the mixture over the beans and meat. Cover the casserole and put it in the oven. Set the temperature at 300 degrees and cook the beans at least 5 hours, or until they are tender.
Makes 8 servings

Fresh and satisfyingly umami, itâs a gourmet experience, but donât let that stop you from slathering it on your burgers and grilled cheeses, or using it as a dip for fries.
