Got the smoker out for the first time this year. Smoked some salmon and chicken breasts. I used a fish cure on the salmon and just did the chicken breasts plain. Ran the smoker at about 250 the whole time. Pulled the salmon after about 2 hours and the chicken after 3. We had half the salmon for dinner with some cottage cheese for dinner. Going to have the rest of the salmon and some chicken for dinner tomorrow.

Made a delicious smoked beef roast for Easter lunch today. Used a JB's Prime Angus rub on a bottom round roast. Applied the rub late Saturday afternoon and let it rest in the fridge overnight. Got it in the smoker about 8am and had the temp at about 260 most of the time. After two and a half hours I pulled it off the smoker at around 135 internal temp. I wrapped it in some foil and put it in a cooler packed with towels until lunch at noon. It turned out a perfect medium rare.

It has been just an amazing weekend for smoking and drinking on the patio. Yesterday was the pulled pork for the Fantasy Draft Party in a few weeks. Today I am smoking some chicken to pull for the Fantasy Draft Party. I also have beef roast on there for dinner tonight.

Took about 14 hours to get to 203 internal temp. Got them pulled and in the fridge by about 10pm. It was a beautiful day for smoking. Can't wait for football season to start.

16 pounds of pork getting rubbed down with some JB'S all purpose rub. Fun tip, when you are seasoning your meat wrap everything you are going to use in press and seal. That way you don't have to wash your hands every time you want grab your mustard or seasoning. Then when you are done peal it off and throw it away.

Got my first smoke of 2016 in on Saturday. Also it was the first smoke on our new expanded patio. I kept the smoker on the old part of the patio because the concrete guy said the new part could stain until it is fully cured in a few weeks. It was a beautiful day for smoking, a little windy but it was from the south so the house broke the wind nicely. I did a beef roast and some chicken breasts. The beef was a little over for my taste but it takes a smoke or two to get the touch back. We had the beef Friday night and it tasted great and of course I used a little bit of JB’s Fatboy Prime Anus Rub on the beef. The chicken is going to be used in a meal or two this week then the rest will go in freezer for a later date.  You can also see my new cutting board with wells that I got. It worked great and kept the juices from the beef off the counter.
