Dried beans are economical, tasty, have less packaging than cans and cartons and give you a great combination of carbs, protein and fibre. To help digestion, soak overnight. Before cooking, boil rapidly for 10 mins to remove toxins, then rinse. In a slow cooker with a timer, cooking beans is hassle free: cover with enough water and cook on high for up to 5 hours until soft (takes 3.5 in my Yum Asia rice cooker). Easy! Add to salads, curries, chilli, wraps and more! - - Did you know you can "water fry" with a good non-stick pan? That means you don't have to fry with saturated fats or potentially turn unsaturated fats rancid by cooking on high heat, avoiding this is better for your cardiovascular health. Vegan Frittata! I'm SO excited to share this! Been working on it since I received a request for "Vegan Omelette Bake". Have sourced the ingredients and today hit the sweet spot (recipe below). First I tried Orgran Vegan Egg but for this recipe it wasn't exactly as I wanted. This time I used Orgran Vegan *Easy* Egg (Asda, Ocado, online stores), and a better ratio of ingredients. This is a great transition recipe. Easy to make, easy to bake. --- Recipe (Serves 2) Orgran Easy Egg, 80g Engevita Nutritional Yeast + B12, 5g Mixed Herbs, 1 heaped tsp Cracked Black Pepper, 1/2 tsp Alpro Soya Light, 450ml Onion, 60g, diced 1/2cm Red Bell Pepper, 80g, diced 1cm Mushroom, 70g diced 1cm Baby Spinach, 50g, roughly chopped into strips Coconut Oil, 2 tbsp --- Method Heat Oven to 180C (fan assisted) Mix dry ingredients in a large bowl Add soya milk + whisk throughly Satuee onion in coconut oil in an oven proof pan Add + sautee pepper Add + sautee mushrooms Add + wilt spinach Pour in V.egg from bowl and roughly mix with veggies Cook for 1-2 mins until edges brown Place in the oven, middle shelf, cook for 20 mins, --- Serving Suggestion Serve with you favourite vegan sausages for a protein meal, or potatoes to boost carbs Add a dollop of Dr Will's Tomato Ketchup on the side (sugar free) --- Note Regular intake of Carrageenan gum (an ingredient in the Orgran Easy Egg) can affect the gut microbiome and gut integrity. Flavour burst in a bowl - Sweet & Sour Stir-fry! 🍲πŸ’₯ Recipe: - 1 pack cauldron tofu cubed - 1 large bell pepper, diced - 6-8 spring onions, cut to inches - 2 ripe tomatoes, slim wedges - 1 handful sugar snap peas cut to inches - 1 pineapple, cubed - 2 green chillies, finely chopped - 4 chubby garlic gloves, finely chopped - 1 heaped tsp cornflour, mixed in 200ml cold water - 1/2 tsp Chinese 5 Spice - 1/4 tsp red chilli powder - 2 dsp rice wine vinegar - 1 dsp tamri sauce - 1 dsp toasted sesame oil ... Brown the tofu, in 1 tbsp coconut oil, add and lightly stir fry the pepper, spring onions and sugar snap peas. Then add the pineapple, rice vinegar and tamari sauce and simmer for a few mins. Add the tomato wedges, chilli powder, Chinese spice, garlic, green chillies, mix and simmer for a couple of mins til tomatoes are soft. Add the cornflour liquid and stir for a minute until liquid from veggies thickens to a glaze/sauce. Remove from heat and stir in the sesame oil.
