Toni made pancit today using @noevilfoods chicken! And before you say it—yes, it’s possible to be Filipino and vegan. Culture is about coming together and creating memories with your family and loved ones. It has absolutely NOTHING to do with killing others for food. Does your culture encourage and respect mass slaughter and killing the only planet we have? I didn’t think so! Our tastebuds are not more important that someone’s entire life. So yes, you can be Hawaiian, Mexican, Filipino, Korean, Japanese AND be vegan! Because chances are, you already agree that killing others for NO REASON is a bad thing. See? . I've been away for a while. My bad. But I've made lots of changes to my life and diet. I'm starting on my zero waste journey which I have been obsessing over for a while. I also cut out saturated fat and started working out. Oh yeah, your girl is stepping her game up. ANYWAY, Last night I was craving something salty so I revamped Avant Garde Vegan's Fish & Chips recipe. Let me just say, wow. https://youtu.be/bdcCaqCDg74 First off, I added some spice to the dry mix. His recipe calls for salt only but I'm trying to get crazy so I added: • Nooch (duh) • Garlic salt • Old Bay (aka my old BAE) • Turmeric (for color) • Cracked black pepper (because it loves turmeric) I also baked them instead of deep fried. Yes another sacrilege I don't care how you feel about LOL. I said I was gonna cut out saturated fat and I MEANT IT!! They turned out pretty good and crispy, which was all I cared about. Next time I'm actually going to use beer in the batter… I had beer in my fridge but NO BOTTLE OPENER. Such is life in a XVX household.

Vegan Shopping List
When people find out I’m vegan, they almost always ask “What can you buy if you can’t buy animal products?!”
I got tired of trying to explain that I survive off fruits, veggies, nuts, seeds, beans etc. So I made a list of everything I keep in my house in a perfect world. And now I’m sharing it with your perfect world, lol.
Keep in mind a few things as you read this:
I made this list almost 3 years ago when I was actively transitioning and my husband was not. The “fake meat” stuff (the stuff that people usually say is the reason veganism is too expensive and therefore they won’t try it) isn’t the greatest or healthiest purchase. Latey, this list is more like just fruits and veggies and vegan milks. So if you see things like “butter” or “milk” on there, just assume they are vegan versions. After all, I made this list for myself so I didn’t really need to write “vegan milk, vegan butter etc.”
Feel free to use this list as a starting point for your own vegan journey. Add to it, take away veggies you don’t like, but most importantly, give it a try! You never know what you’re capable of until you give it a real go.

Sunday Pancakes




I used to love Alton Brown's Buttermilk Pancakes. Being a pancake aficionado, I refuse to let a silly thing like animal products get in my way of enjoying some flapjacks.
So I just veganized his recipe! Which means I also had to veganize buttermilk and egg yolks for baking. Which means this is actually 3 recipes for the price of 1!
Brunch hard, friends. Don't let anything hold you back from living according to your values...especially your love for pancakes.

Gyros
I have never sacrificed taste being vegan. Yeah, I used to enjoy paying for someone to cut a LAMB’S THROAT so I could have a so-called cultural dish called Gyros. I still crave the flavor so I just make it without innocent baby parts! It’s a win/win!

Breakfast Crunch Wraps

A little fancy brunch recipe that fills you WAY up. Only takes about 30 minutes.
Also, my husband described this dish as "PERFECT" sooooo yeah 🤙🏼 Big flour tortillas 2 potatoes Veggie broth/bouillon Salsa of your choice Guacamole of your choice Taco seasoning Black salt Miso paste Iced coffee Nutritional Yeast Optional Liquid smoke Vegan cheese 1. Chop potatoes into small pieces. Leave the skin on if you like. A little fiber never hurt anyone! Just wash them really well 2. Boil the potatoes in veggie stock. SUPER IMPORTANT to infuse the flavor into those bad boys 3. When the broth is almost evaporated, stir in the taco seasoning, black salt & nutritional yeast (aka nooch) 4. In a small dish, mix miso paste with a splash of coffee and a drop or two of liquid smoke. This adds some killer "smoked meaty" flavor! 5. Mix the miso/coffee into the potatoes and wait for them to get soft and the broth to evaporate. Mash them slightly so they kinda "glop" together. I know you know what I mean by that. 6. Spoon the potatoes onto a tortilla. Add guac, salsa, vegan cheese, more nooch, basically whatever you want! 7. Fold the tortilla over in a crunch wrap fashion and place on a medium heated pan with the folded side down. This will seal the wrap so all that good stuff stays inside 8. Flip the crunch wrap over and grill the other side 9. Eat that thing and thank me later
