These juicy turkey zucchini burgers are packed with flavor and moisture thanks to the addition of grated zucchini. They're a delicious and healthier alternative to traditional beef burgers, perfect for a light yet satisfying meal.
Ingredients: 1 lb ground turkey. 1 medium zucchini, grated and excess water squeezed out. 1/4 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1/4 cup chopped fresh parsley. 1 egg. 2 cloves garlic, minced. 1 teaspoon dried oregano. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 4 hamburger buns. Lettuce leaves, tomato slices, and other desired toppings for serving.
Instructions: Ground turkey, grated zucchini, breadcrumbs, Parmesan cheese, parsley, egg, garlic, oregano, salt, and black pepper should all be mixed together in a large bowl. Mix everything together well. Make burger patties out of the four equal parts of the mixture. Set the grill or pan on medium heat to get it ready. If you're using a skillet, add a little oil to keep things from sticking. For 5 to 6 minutes on each side, or until the turkey is cooked all the way through and the juices run clear! For one minute, or until they are lightly golden, toast the hamburger buns on the grill or in a pan. Put lettuce and tomato slices on the bottom half of each bun. Then add a turkey zucchini patty. Finally, put the top half of the bun on top of the patty. Enjoy it hot with your favorite toppings.

If you want to change the smoothie's sweetness or thickness, you can add more honey, cocoa powder, or almond milk. Once you're happy with the taste and consistency, blend for another 10 to 15 seconds to make sure everything is well mixed. Put the Chocolate Almond Banana Smoothie into a glass. If you want, you can decorate it with a banana slice or cocoa powder. Serve right away and enjoy!

Ingredients: 1 chayote squash, peeled and diced. 2 chiles such as jalapeo or serrano, diced. 1 bunch cilantro, chopped. 1 cup cooked brown rice. 4 cups vegetable broth. Salt to taste. Optional: lime wedges for serving.
Instructions: In a large pot, bring the vegetable broth to a boil. Add diced chayote squash and chiles to the pot. Cook until squash is tender, about 15 minutes. Stir in cooked brown rice and chopped cilantro. Simmer for an additional 5 minutes. Season with salt to taste. Serve hot, optionally with lime wedges for extra flavor.

Ingredients: 1 lb Italian sausage, casings removed. 1 cup brown rice, uncooked. 2 1/2 cups chicken broth. 1 medium zucchini, diced. 1 red bell pepper, diced. 1 yellow bell pepper, diced. 1 onion, finely chopped. 3 cloves garlic, minced. 1 tsp dried oregano. 1 tsp dried basil. Salt and pepper to taste. 2 cups canned white beans, drained and rinsed. 1/2 cup grated Parmesan cheese. 2 tbsp olive oil.
Instructions: Cook Italian sausage in a big skillet over medium heat until browned. As it cooks, use a spatula to break it into crumbles. Remove all but about 1 tablespoon of the fat from the skillet. To the skillet, add the minced garlic and diced onion. Simmer until the food is tender. Add the brown rice and stir until it toasts slightly, about one to two minutes. Add the chicken broth, salt, pepper, dried oregano, and dried basil. Heat through to a simmer. The rice should almost be tender after 30 minutes of simmering on low heat with a lid on the skillet. To the skillet, add diced zucchini, red and yellow bell peppers, and white beans. Mix everything together. Once the rice is cooked through and the vegetables are soft, cover and cook for a further 10 to 15 minutes. Drizzle the skillet with olive oil and scatter the grated Parmesan cheese over it. Toss to combine. Enjoy your flavorful Sausage Zucchini and Brown Rice Skillet while it's still hot!
