Cabbage with Lentils/Black Gram/Split Peas
Ingredients
Cabbage, finely chopped - 3 cups
Chilli pepper, finely chopped- 1/2 or one whole
Onion/Shallots, finely chopped - 1/4 cup
*Lentils/black gram/ split peas - 1/4 cup
Turmeric Powder - 1/4 tsp
Oil - 1 tsp
Salt - as needed
Steps
Heat oil in a pan (medium high to high flame)
Add mustard seeds
When it crackles, add the lentils/black gram/split peas stirring until they are brown
Add the cabbage, onions,turmeric and pepper, mix well (2 minutes)
Reduce heat to low, cook for 5 minutes, covered
After 5 minutes, increase the heat to Medium-high/High
Add salt, stirr well for two minutes, then turn off the heat

Swiss Chard/Amaranth/ Kale/Spinach with Lentils or Split Peas
Ingredients
1 bunch of Swiss Chard or Amaranth or Kale or Spinach - finely chopped (can use the stem and leaves)
1/2 or 1 whole Chilli pepper - finely chopped
Yellow Split peas or lentils - 1/4 cup
1/4 cup Onion/Shallots - finely chopped
1/4 tsp Mustard seeds or cumin seeds
1 tsp Oil
Salt
Steps
Boil lentil/split peas with water and salt, cook until they are soft (takes about 15-20 mins)
Once the lentils / split peas are almost cooked, heat the oil
Add Mustard/cumin seeds, once they crackle, add onions, chopped leaves, and chilli peppers
Stir well, cook in low to medium flame for 5-7 minute
Add the boiled lentils/split peas
Mix well and cook for 5-7 minutes covered in low flame
Add salt as needed

Eggplant with spices
Ingredients
1 big eggplant
I onion chopped
1/4 tsp turmeric
*1/4 tsp chilli powder or/and black pepper
*1 chopped green chilli
1/4 tsp mustard seeds (May be replaced with cumin seeds)
1 tbsp oil
1/4 - 1/2 tsp salt
Steps
Mix chopped eggplant with salt and the turmeric powder
When the oil is hot, add mustard seeds
Saute onions with green chilli for 3-4 minutes in medium flame
Add chilli powder, mix for 30 sec to 1 min
Add the eggplant and turmeric mixture
Cook for 10-15 minutes, covered, in low flame, stirring every five minutes
Serve with rice
*adjust the amount or omit one of the ingredients to adjust the spice level
