Thank you for tuning in everyone! I know it has been a little while since my last post, things have been crazy here in my foodie household. This past weekend was full of delicious food! I definitely spoil my boyfriend on his weekends. I came up with some new waffle concoctions and delicious pho and ended the weekend with a special drunken mango treat. I started the weekend off craving waffles and bacon. Ever since I got my waffle maker, I have been addicted with seeing what I could throw in there. When I woke up I was hungry, tired, and craving foods that can quickly turn any kitchen into a disaster. Just as my brain was trying to wake up while dreading the though of breakfast cleanup, I cam up with a thought. What if I threw bacon in the waffle maker with my waffle mix? Brilliant! I continued on to make my Gluten-Free waffles like normal, except this time I put uncooked bacon on the bottom of the waffle iron prior to pouring the batter in. What came out next was so delicious! It took every bit of effort to not munch on the waffles while preparing the rest of the breakfast. Once the waffles were done, I topped them with sunny-side up eggs, fresh cut mango, more cooked bacon, and a Bacon Pepper Jam and Ghee reduction.
These waffles were packed with protein and extremely filling! After eating these up, my boyfriend and I didn’t think of food for the rest of the day. The next morning I decided to prepare dinner in my slow cooker because it was my “Lazy Sunday”. I was really craving a hearty and healthy soup with noodles. So I threw in a bunch of ingredients and ended up with a delicious pork pho (Recipe to come in a bit!). I ended up mixing mine with White Yam Noodles because they are simply guilt free and tasty.
Finally, we finished the night off with a tasty treat. We only had a small amount of Pink Moscato left, so I decided to try something new. I diced up some very ripe mango and threw the chunks into two wine glasses. I then proceeded to top off the mangos with splashes of lime and the wine. These drunken mangoes turned out amazing!
Now for the main reason for this post… For those of you who know me well, you know all about my crazy addiction with…Tortilla chips and salsa! One of the most difficult aspects of switching over to a healthy lifestyle has been giving up my yearlong cravings for chips and salsa. Up until recently, I have been faring pretty well on my own by munching on homemade sweet potato chips, grapes, and even carrots. That is until my boyfriend decided to start eating quesadillas! The smell of the tortillas alone set me off on all these crazy daydreams about my favorite moments shared with a bowl of chips and salsa. Many of you may think that sounds crazy, but those of you who are ��foodaholics” (or fellow foodies) know what I am talking about. After days of denying myself this simple craving, I finally broke and decided to make it work for me.
This is when I came up with this crazy idea to look around for any ingredients that I could blend up and turn into a crunchy, delicious chip. Evidently this led me to my new favorite discovery! The concoction that I came up with was a cross between a pita chip and a tortilla chip. Eureka! My new favorite snack and I now have this intense urge to stockpile the ingredients as if the Apocalypse is going to happen at any moment. I am now going to walk you through this delightful and addicting journey. Please keep your taste buds and nostrils pointed at the screen the entire ride. I do have to warn you though, I may just entice you to join my healthy tortilla chip cult!
First things first, I had to figure out what ingredients to use. I ended up finding cans of chickpeas and black beans. I threw a can of each in the blender along with two eggs, Garlic Garlic Seasoning and equal parts Arrowroot Powder (cornstarch can be used if not following a strict diet) and Coconut Flour. I used about a quarter cup of each. I then proceeded to blend up this mixture. The most difficult step of making these chips was figuring out how to make them look like chips. I decided to flatten them out with my hands since I didn’t have a rolling pin and I cut them into triangles with a pizza cutter. The reason I did this on foil is because I just literally threw the foil in the oven so that it would be easy cleanup! I also brushed Roasted Garlic Infused Oil on the top of the chips for extra crispness. You will want to make sure the oven is heated up to about 400 degrees.
Depending on the oven I left them in there for about fifteen to twenty minutes, until they were golden brown. While I waited on the chips to cook, I decided chips aren’t complete without salsa! I bought so many fresh mangoes from the market that I went ahead and made a mango salsa with a jalapeno diced very small, diced onion, and a splash of apple cider vinegar combined with Tastefully Simple’s Simply Salsa Mix, which you can always replace with chili powder and garlic powder. I let the salsa marinade in the fridge while the rest of the chips cooked.
Once the chips are done cooking, try not to eat them all in one sitting like I did! (Don’t judge me, I have been deprived of my chips and salsa for over a month!) This chip and salsa snack is too good to eat just one. Enjoy! I will post the full recipe below!

The other day when I was shopping with my Boyfriend, I was trying to figure out something easy to make for dinner that would leave me with TONS of leftovers. I saw this rump roast on sale and instantly thought of the trillions of possibilities. Fast forward a few days later, I woke up in the middle of the night with a great idea. Balsamic crock pot roast with apples and onions. I was sold! I love making roasts in my slow cooker because it makes clean up easy. Plus, all I have to do is throw everything in and forget about it for the rest of the day. How awesome is that?! I use my crock pot for soups, chili, roasts, and fruit butters. Anything I can throw in there, I do! Plus, I recently came up with my own slow cooker marinara sauce and we made Paleo Pizza with it later that night… Let me tell you, it was so good that I was so sad when there wasn’t any more left over. It’s definitely going to be one of the next recipes I post!
Before we get started on this delicious food journey together, I want to take this time to give a shout out to Tastefully Simple for producing such tasty and high quality products. Ingredients:
1 (3 lb) Rump Roast
3 Medium Apples (Diced)
1 Large Onion (Diced
1 Cup Chicken Broth
1/2 Cup Aged Balsamic Vinegar of Modena
1/2-1 Cup Unsweetened Apple Juice
1/4 Cup Apple Cider Vinegar
1 Capful Rustic Herb Seasoning
1 Capful Garlic Garlic Seasoning
To Taste Salt and Pepper
1-2 TBS Arrowroot Powder (Cornstarch for non-paleo)
Directions:
Step One: Dice up the apples and place in the crock pot (You can peel them if you prefer)
Step Two: Dice up the onions and also place into the crock pot.
Step Three: Now go ahead and place whatever choice of beef you decided on for this dish!
Step Four: Combine the remaining ingredients and whisk thoroughly.
Step Five: Pour the mixture over the beef in the crock pot and spread remaining seasonings on the beef around. (When I poured the sauce over, some of the seasonings were on the very top of the roast)
Step Six: Turn on the crock pot to low and let cook for 6-8 hours depending on size of crock pot and beef!
Step Seven: Take a break, relax, and enjoy the aromatic smell of this amazingly effortless meal while it cooks.
Step Eight: When it is done, you can either remove the meat and slice it. What I did was removed the beef and shredded it.
Step Nine: Once the beef is shredded, go ahead and mix the arrowroot powder (many of you may have cornstarch) and whisk it in with the sauce and let it cook for another 5 to 10 minutes.
Step Ten: Mix the beef in with the thickened sauce mixture and serve however you like! I poured mine over a baked sweet potato!
