We’ve been playing around with allowing our Greek Feta Style cheese to age in a brine for a few weeks, just in order to develop its flavour and take on that lovely salty, creamy taste. The results taste great and we’ve been experimenting with different uses for it.. Pictured here is some of it crumbled over sliced figs + toasted sourdough, which was then drizzled it with @pbartisan’s orange blossom honea - yum! Would anyone be interested in buying a plain feta in brine in addition to our one marinated in garlic + herbs?
