Low Carb Peach Cobbler

Ingredients:
2-3 sliced peaches
2-3 Tbsp of sweetener. I used Swerve brown sugar.
Crumble Topping
1/2 cup almond flour
3-4 Tbsp sweetener. I used Swerve brown sugar.
1/4 cup melted butter
1/2 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp baking soda
Directions:
Preheat oven to 300 degrees.
In a round baking pan or skillet, place sliced peaches to cover entire bottom of pan.
Sprinkle sweetener over peaches and set aside.
In a bowl, combine all crumble topping ingredients.
Sprinkle crumble topping over peaches.
Bake for 25-30 minutes or until golden brown and bubbly around the edges.
Remove and let cool for ten minutes.
Serve with keto/low carb ice cream.
Devour!

Beet and Truffle Goat Cheese Salad with Cilantro Tahini Dressing

Ingredients:
1 bunch of beets
Handful of pecans or nut of your choice
Goat cheese
Salt and pepper
Dressing Ingredients
1 bunch of cilantro
1-2 garlic cloves
2 Tbsp tahini
3 Tbsp olive oil
1/4 cup water
2 Tbsp sour cream
1 lime
Salt
1 tsp ginger
Directions:
For the dressing blend all together and store in fridge.
For beets cut off the tops. Save leaves.
Place whole beets in air fryers and set at 375-400F for 30 minutes. Poke with a fork and once tender remove and let cool.
Remove beet skin and slice.
For the beet greens cut off stems and wash.
Add beet greens to a bowl.
Top with beets and toasted pecans and I crumbled marinated black truffle goat cheese with a little of the truffle oil on top.
Salt and pepper and drizzle dressing over salad.
Devour!

Keto Peanut Butter Cookies

Ingredients:
1 cup peanut butter. I love Teddie鈥檚 brand!
1/2 cup sweetener. I use Swerve or monk fruit.
1 egg
1 pan
Parchment paper
Directions:
Preheat oven to 375F
Mix all ingredients in a bowl.
Roll into cookie size balls. Place on parchment paper.
Press top of cookie flat with a fork.
Bake for 12 minutes.
Try to let cool and devour!

Snickerdoodle Muffins

Ingredients:
4 oz cream cheese
4 eggs
1 tsp vanilla
2 cups almond flour
1/4 cup coconut flour
3/4 cup sweetener (Swerve or monk fruit)
2 tsp baking powder
1/4 tsp salt
1/4 unsweetened vanilla almond milk
4 Tbsp butter
1-2 tsp cinnamon
3-4 Tbsp sweetener (Swerve or monk fruit)
Directions:
Preheat oven to 325 F.
Put muffin liners in 12 muffin tin.
Blend together cream cheese, eggs, and vanilla.
In a separate bowl, mix almond flour, coconut flour, sweetener, baking powder, and salt.
Stir dry ingredients into wet ingredients.
Slowly add in almond milk until fully mixed in.
Fill each muffin tin about 3/4 way full.
Bake for 30 minutes.
Remove and let cool.
Melt butter in one dish.
Mix cinnamon and sweetener.
Dip top of muffin in butter and then roll in cinnamon/sweetener.
Devour!! 馃槈

Chicken Sausage Alfredo

Ingredients:
1 jar of Alfredo sauce
1 package of chicken sausage sliced. I like the Italian, caprese, or stuffed peppers ones.
Half a cup sliced mushrooms
Half an onion chopped
5-6 gloves of fresh chopped garlic
1-2 handfuls of spinach
Directions:
In a pan over medium heat, add garlic, mushrooms, onions, and little bit of olive oil. Saut茅 for 5-10 minutes.
Add chicken sausage to the pan and cook for five minutes.
Add in Alfredo sauce to the pan and stir to warm.
Add in a handful or two of spinach. Stir for a couple of minutes until spinach is wilted a little.
Serve over pasta or if low carb I eat it over zero noodles or riced cauliflower.
