Seared Ahi Tuna and Avocado Grapefruit Salad with Citrus Mint Dressing Ingredients for salad and dressing 2 red or pink grapefruit 2 tablespoons lemon juice 2 tablespoon chopped fresh mint leaves 1 teaspoon honey 2 teaspoon shallot, finely minced 2 firm-ripe avocados (10 to 12 oz. each) 1 package baby greens, rinsed Cumin Crusted Tuna Ingredients Sushi grade tuna Cumin Cayenne (if you like it spicy) Salt Pepper Olive Oil Directions Cut peel and white membrane from grapefruit. Working over a strainer set over a bowl, cut between inner membranes and fruit to release segments into strainer. Squeeze juice from membranes into bowl (discard membranes); you need about 1/3 cup juice. Add lemon juice, mint, shallot, and honey to grapefruit juice, and mix. Peel and pit avocados; cut lengthwise into 1/2-inch-thick slices. Rub tuna with salt, pepper, cayenne and cumin. Heat olive oil in hot pan and sear tuna for about 2 minutes per side (more or less depending on how ‘raw’ you want it). Arrange a handful of greens on each of 4 salad or dinner plates and arrange equal portions of grapefruit segments, avocado slices and seared tuna on top. Spoon dressing evenly over salads. Grilled Goat Cheese and Spinach Pesto Pizza Ingredients For Pesto 1.5 cups lightly packed basil leaves 1.5 cups spinach 2 tsp minced garlic 2 tbsp toasted pine nuts 1/3 cup olive oil juice of ½ lemon ½ tsp salt ¼ tsp pepper ¼ cup freshly grated Parmesan cheese For Pizza Pizza dough 8 oz fresh goat cheese Toppings of choice (I used-tomatoes, red bell pepper, spinach, red onion and mushrooms) Directions First, make your pesto. Combine basil leaves, spinach, garlic, pine nuts and two tablespoons of the olive oil in a food processor. Slowing drizzle in the remaining olive oil in a steady stream. Add lemon juice, Parmesan cheese, salt and pepper and continue processing until smooth. (or you can cheat and get pre-made pesto from the store) To prepare your pizza, spray the grates of the grill well with non-stick spray. Heat grill on low-medium heat. Spray a cookie sheet well with non-stick cooking spray. Set aside. Roll out your dough on a lightly floured surface. Transfer the pizza dough to the greased cookie sheet and carry outside to the grill. Don’t put the toppings on yet! Place the dough carefully onto the grill. Close the grill and cook for 3-5 minutes, checking occasionally. The dough should be starting to bubble up. Slide the dough off the grill and back onto the cookie sheet. Flip pizza so the charred side is on top then spread pesto all over the top. Add toppings of your choice followed by small mounds of goat cheese. Carefully slide dough back onto the grill, close top and cook for another 5-6 minutes, checking often. When done, the crust should be puffy, the bottom slightly charred and the cheese melted.

Lemon Garlic Chicken with Tomatoes Yield: 2-4 servings Ingredients: 1 lemon 2 pints grape tomatoes (I used frozen cherry tomatoes) 1 head garlic cloves separated 8 sprigs fresh thyme 2 tablespoons olive oil 2 bone-in chicken breasts, or various chicken parts coarse salt and black pepper Directions: Heat oven to 425° F. Zest lemon and set aside. In a pan covered toss the tomatoes, garlic, thyme, and lemon zest with 1 tablespoon of the oil. Nestle the chicken, skin-side up, among the tomatoes and drizzle with the remaining tablespoon of oil. Season the chicken and tomatoes with salt and pepper. Roast until the chicken is cooked through, 35 to 40 minutes. Remove the chicken from the hot roasting pan. Squeeze the juice from the lemon into the roasting pan. Gently stir. Enjoy!

Vegetable Stir Fry Serves: 4 Ingredients 2 tablespoons extra light coconut or olive oil 1 medium/large red onion 2 cloves garlic A sprinkle Himalayan/sea salt 2 cups broccoli florets 2 cups cauliflower florets 1 medium carrot 1 cup mushrooms 1 large bok choy Sauce 2 tablespoons low sodium soy sauce 2 tablespoons cornstarch 1 tablespoon white cooking wine 1 teaspoon sesame oil 1 teaspoon rice vinegar (or apple cider vinegar) 1 teaspoon tahini paste 1 teaspoon honey 1/2 teaspoon ginger, grated A pinch of red pepper flakes Instructions Chop the onion in half, then slice into long, thin strips. Peel and dice the garlic finely. Put the onion and garlic, along with the two tablespoons of oil and a sprinkle of salt into the frying pan for now. Chop the broccoli and cauliflower, carrots, mushrooms and bok choy. Combine the broccoli, cauliflower, carrots in a large bowl and keep the mushrooms and bok choy separate. Turn the frying pan with the onion and garlic to medium high. Stir and fry the onions and garlic for about 7 minutes, then add the broccoli, cauliflower, carrot. Let it cook while you’re stirring for 5 minutes. Meanwhile in a small bowl, add the soy sauce, cornstarch, cooking wine, sesame oil, rice vinegar, tahini, honey, ginger and red pepper flake together. Stir until everything is mixed evenly. After 5 minutes of cooking the vegetables, add the mushrooms and bok choy, the sauce mix and stir it around a lot, cooking for a final 8-10 minutes. Abalone Chowder 1 head cauliflower, steamed 1 tbsp butter 1 yellow onion, diced 4 cloves garlic, diced 1 pound abalone chopped 1 tsp cayenne 1 tsp salt 1 tsp pepper 2 quarts water/chicken/vegetable stock 1 cup celery 1 pound potatoes, cubed Salt and pepper to taste Start by steaming the cauliflower. As the cauliflower is steaming, melt 1 tablespoon butter in a sauté pan. Add onion and garlic and sauté till fragrant. Add abalone. Cook till all the excess water is gone and the abalone is done. Season with cayenne, salt and pepper. While abalone is cooking puree the cauliflower, get 2 quarts of water or stock boiling (you can use more if you would like) add the celery and red potatoes. Once abalone is cooked, add the mixture to the stock pot and simmer. Greek Quinoa Salad Ingredients: 2 cups cooked quinoa 1 cup cherry tomatoes, halved 1 cup chopped cucumber 1/3 cup pitted kalamata olives, halved 1/4 cup diced red onion 1/3 cup feta cheese Salt and freshly ground black pepper, to taste To make the dressing: 1/4 cup olive oil ½ lemon, juiced 3 tablespoons red wine vinegar 1 teaspoon dried oregano Directions: 1. Cook quinoa according to package directions. Remove from heat and fluff with a fork. Let quinoa cool to room temperature. 2. In a large bowl, combine quinoa, tomatoes, cucumber, kalamata olives, red onion, and feta cheese. 3. To make the dressing, whisk together olive oil, red wine vinegar, and oregano in a small bowl. Pour dressing over the salad and stir until mixed well. Season with salt and pepper, to taste.

Love Thai, don't love the calories? Then this is for you! Thai Chicken Zoodle Soup Ingredients 1 tbsp coconut oil 1/2 onion,chopped 1 jalapeño, chopped 1 1/2 tbsp green curry paste 2 cloves garlic, minced 6 cups chicken broth 1 15-ounce can coconut milk, full fat 1 red pepper, thinly sliced 1 pound chicken breasts or thighs, thinly sliced against the grain 2 tbsp fish sauce (use Red Boat for paleo) 1/2 cup chopped cilantro 2 medium zucchini, spiralized 1 lime cut into 8 wedges Instructions In a large sauce pan, heat coconut oil over medium heat until melted and shimmering. Add onions and sauté until just translucent, about 5 minutes. Stir in jalapeño, curry paste and garlic and sauté until fragrant, about 1 minute. Add chicken broth and coconut milk, whisking until fully combined. Bring to a boil, then reduce heat to medium and add red pepper, chicken and fish sauce. Let simmer until chicken is cooked through, about 5 minutes. Stir in cilantro. Divide zoodles among 8 soup bowls and ladle soup over; the heat of the soup will make the zoodles tender. If you are not serving it all at once, only use enough zoodles for each bowl of soup you are serving. The rest will keep well in a covered container for a day. Serve each with a squeeze of lime.
