New book 📖
When I’m reading these kinda of books I get so motivated and I start eating clean. I have just read a few pages and I can predict that it might take me the whole month or more to finish it. When I read book about health I just not read them, I study them so I take long. I also got the ebook for $3.24 in the books app. I love having both versions, specially this one since the physical book is big, having it on my iPad will help to take it everywhere.
Let me know if you have read any of Dr. Greger’s books.

This is what I've been eating for the past 3 weeks, and I love it. I go through a blueberries box in 2 or 3 days and that is not good for my budget 😅 I make a big batch of quinoa/oats waffles and just put them in the toaster and breakfast it's ready. I've also been obsessed with apples and almond butter..... ahh it's just the best. My dog also loves them as you can tell.....

Scramble Tofu
I think I made the best tofu so far....
I used to not like tofu when I first when vegan, it was hard for me to get it right, and it always ended up tasting weird.... but after almost 4 years of being vegan I think I'm got it right.
I pressed it, matched and then put it on the freezer to froze. The next morning I put it to defrost and since I was at my parents I didn't have my usual spices so I used what they had.... salt.
I put the tofu to fried on a pan with little bit of salt and turmeric, then I made a salsa with tomatoes, onion, garlic, cilantro, chile, salt and onion powered.
Cooked it all together and it was delicious, I don't know if it was the frozen part or the salt which I usually don't add that made it so good , but even my husband said it tasted good.
My whole family ate it, so I think I would be trying the freezing technique more .

I think everyone should have this book as e-book, have it on your phone and feel prepare all the time.
Ed did a great job explaining many of the arguments people have for not being vegan, I recommend this book if you don't feel prepare to debate non-vegans.
It's also very respectful to everyone.

Had a nice talk with my parents about veganism. I tried to explain it in a way they could understand. My mom has been telling me she wants to go vegetarian but she still thinks making a change in the world is hard, and I told her that I might seem hard but it’s not impossible. We can all have a huge impact on the future of our planet and the lives of the animals exploit for food.
I also had a discussion about kids with my husband, and even tho we didn’t reach a conclusion I feel like I’m getting somewhere regarding raising kids vegan.
Please don’t ever think your choices don’t my a difference.

Solo date! 💚
There is a vegetarian restaurant in town with a few vegan options. The other day I realized i could turn these breakfast tacos vegan and now I’m obsessed. I also found out they have a new Vegan chocolate chip cookie and it’s DELICIOUS! It’s going to be hard not to get them all the time. Glad they are incorporating more vegan options to their menu. 🌱

I want to apologize to my body for this day.
I ate things I shouldn’t, so much sugar, too much bread and no veggies or fruits. I barely drink water and I had coffee and coke.
Tomorrow I will start again.
However, I also want to thank my body for today, for allowing me to spend time with my loves ones and create memories with delicious vegan food.

One of the places I visit every time I come down to Austin.
I love their Flapjacks 🥞, this is the place where I first heard of this word lol.
Love that they added a lot of fruit but I still asked for more blueberries. I hesitated to do it because I knew they were going to charge us a lot, but it was only $2 extra dollars which is not bad for an extra big bowl of blueberries. Our server was kind and attentive.
My husband asked for the Breakfast Sandwich and it was huge. XD I loved when we go to full vegan restaurants because we always share our food and try different stuff. This time he ate one of the flapjacks and I had a bite of this sandwich.
*had two cups of coffee (decaf of course)
