I interpreted it as a symbol for the plauge motif! Plauge spread most famously by boat, and plauge ships were greatly feared. So the rats coming off the boat and Count Orlok coming with them just seemed like the easiest way to hammer home that he's literally the plague. If he's supposed to be "old world" fears (i.e., the professor telling Ellen she would have been a priestess in pagan times) coming to haunt us, taking a train would be kinda silly. I think it just made more sense with that motif.
i know that in dracula (1897) dracula travels to england on a ship and we get those delightful chapters of him slowly picking off the ship's crew one by one until it crashes on the shore and i know that nosferatu (1922) is basically a straight rip of dracula with the names and locations slightly changed and i know that nosferatu (2024) is pretty much just a higher budget shot-by-shot remake of the original nosferatu but why did they keep the part where count orlock travels to germany from romania by BOAT
