Mushroom of the day: Pink Oyster Mushroom - Pleurotus djamor

The pink oyster mushroom has a pink color, though there are also white forms. It has a fan-shaped, broadly convex to plane cap which is 2– 5 cm broad and 3-7 cm long, with an inrolled margin. The gills range from light pink to cream, and are 0.5-0.7 μm in width. The stem is white with matted hairs and is very short or non existent.
The flavor of the pink oyster mushroom has been described as meaty and fishy. Just like most mushrooms, it is quite umami. Its texture is both meaty and chewy. When fried until crispy, it resembles bacon or even ham. However, when it is raw, it has a sour taste.
The reason why it is very rare to find in supermarkets is that it has a shelf life of only about a day. Since it is only harvested from spring to fall, it is only available during that time.

Morchella esculenta (commonly known as common morel, morel, yellow morel, true morel, morel mushroom, and sponge morel) is a species of fungus in the family Morchellaceae of the Ascomycota. It is one of the most readily recognized of all the edible mushrooms and highly sought after. Each fruit body begins as a tightly compressed, grayish sponge with lighter ridges, and expands to form a large yellowish sponge with large pits and ridges raised on a large white stem. The pitted yellow-brown caps measure 2–7 centimeters (1–3 inches) broad by 2–10 cm (1–4 in) tall, and are fused to the stem at its lower margin, forming a continuous hollow. The pits are rounded and irregularly arranged. The hollow stem is typically 2–9 cm (1–3+1⁄2 in) long by 2–5 cm (1–2 in) thick, and white to yellow. The fungus fruits under hardwoods and conifers during a short period in the spring, depending on the weather, and is also associated with old orchards, woods and disturbed grounds.

This colourful little mushroom of rich grassland and roadside verges (and found occasionally also on damp woodchip mulch) is one of the shortest-lived of all mushrooms. It goes from a yellow 'egg on a stick' via a pinkish parasol stage to a mid-to-dark brown or, in hot dry weather, light ochre mushroom in less than a day. This mushroom, better known until recently as Bolbitius vitellinus (previously thought to be a separate species but now merged with Bolbitius titubans) is still quite commonly referred to as the Egg Yolk Fungus.

Amanita muscaria, commonly known as the fly agaric or fly amanita, is a basidiomycete of the genus Amanita. It is a large white-gilled, white-spotted, and usually red mushroom.
Despite its easily distinguishable features, A. muscaria is a fungus with several known variations, or subspecies. These subspecies are slightly different, some having yellow or white caps, but are all usually called fly agarics, most often recognizable by their notable white spots. Recent DNA fungi research, however, has shown that some mushrooms called "fly agaric" are in fact unique species, such as A. persicina (the peach-colored fly agaric).

"Laetiporus zonatus is a species of polypore fungus in the family Fomitopsidaceae. It is found in southwestern China, where it grows on oak. The species was described as new to science in 2014 by Baokai Cui and Jie Song. The specific epithet zonatus refers to the concentric rings on the upper surface of the white to cream-colored fruit body. The fungus produces ellipsoid to pear-shaped (pyriform) or drop-shaped basidiospores that measure 5.8–7.2 by 4.3–5.5 μm. Molecular analysis of internal transcribed spacer DNA sequences indicate that L. zonatus is a unique lineage in the genus Laetiporus." - Wikipedia
