Chef Pachi 's Pork Seasoning Mix: 2 tablespoons plain yogurt 2 tablespoons Cranberry Dijon Mustard (use plain Dijon if unavailable) 2 teaspoons zaatar 1 teaspoon sumac Mix and refrigerate (well covered lasts for 1 month) or use. Pulled Pork 1 1/2 pounds of pork loin, sliced or whole (no bone) 1 Chef Pachi pork seasoning mix (recipe above) 2 tablespoons Coconut Aminos or Soy Sauce 1. Season pork allow to sit for 10 minutes if sliced, more if a whole piece of pork. 2. Place pork and coconut aminos or soy sauce in a pressure cooker or instant pot. 3. Cocer and cook for 30 minutes for slices, 1 hour for the whole piece of pork. 4. Uncover shred an enjoy! Freeze if desired when completely cold; refrigerate for up to 3 days.
