I used to post cake decorating video tutorials on my YouTube channel (maybe one day I will again), but now I work full-time as a bakery mananger and every once in a while do some gluten-free baking. But I still just want to want hang out at the barn.

First time posting in a long while, I know. Thanks to working long hours and still having most of my cake decorating stuff in storage due to moving house, my poor YouTube channel has been left neglected. 
I figured I would share my favorite cornbread recipe since it’s quick, easy, and gluten free, even though we’re no longer in “cold weather comfort food” season. But hey, it freezes well.

How to Bake a Cookie in your Cast Iron Skillet
One of our favorite ways to eat a cookie is straight from a cast iron skillet with a spoon. It’s as easy to make as it is to eat – just use your favorite chocolate chip cookie recipe and spread it into a cast iron skillet with a spatula. Bake it for 20-25 minutes (or under bake it slightly for a softer cookie). There’s no need to oil your pan or preheat it. We used an 11-inch skillet and this oatmeal chocolate chip cookie recipe. Let it cool for 5-10 minutes, scoop your favorite ice cream on top and dig in!

There are thousands of ways to make cornbread. We’ve seen it with avocados and bacon, with blue cheese and buffalo chicken, with cranberries and oranges and much more. Sometimes, though, you want to keep it simple, and this recipe is for those times. All you’ll need is three ingredients and your cast iron skillet. Find this recipe in the Lodge cookbook A Skillet Full. 
Elizabeth’s Basic Cornbread
Serves 6
INGREDIENTS
1 cup white self-rising cornmeal
1 egg
Enough buttermilk to make batter very thin (about 1 cup)
Oil a cast iron skillet and place it in the oven as oven preheats to 450°F. Mix all ingredients together to make the batter. Pour batter into hot skillet. Bake for 20 minutes or until nicely browned.

I only need 51 more subscribers on my YouTube​ channel to break 15,000! I know, I haven't posted a new video in a very long time (life has been more than a bit hectic lately #excuses), but I plan to get back to posting regularly soon. I still have all those gum paste flowers to make, and I want to redo my "How to Pipe Roses" video.
