Mr right now in a bowl 😍😍 A bowl of gnocchi is like a shot of tequila. It’s quick. It hits the spot and it never disappoints....... this gorgeous bowl of deliciousness is simply wonderful and easy to make. Get a sausage of salami and slice and quarter some, about a half of a cabana sliced, some spring onion as much or as little as you like, and a full jar of good Alfredo sauce. Now I do this in two saucepans. One has the gnocchi the other I layer as it cooks the salami, cabana, spring onion and Alfredo. But I do add a bit of basil and thyme to it and sometimes a dash of pepper. A roll in my the hay is delicious.... but sometimes a roll in the multigrain is a taste sensation...... chicken and avocado salad multigrain rollups are great for lunches, suppers or entertaining. I pre cook my chicken and let it cool..... to cheat buy a pre cooked chicken from the supermarket, slice and dice and then let cool in the fridge..... Then I get 2 or 3 avocados and add in some diced red onion, a good splashing of whole egg mayonnaise, a light splash of balsamic vinegar, herbs of my liking, a dash of salt and pepper.... and mush into a creamy consistency. A simple mince sauce in a bowl with a little dash of sour cream and a plate of cheesy corn chips. Let me introduce you to my Sausage stir fry!!! Lamb steaks cooked in butter, oil, garlic and mustard with a lovely salad of my usual favourites; spinach, avocado and my potato croutons/mini wedges. You don’t need to go to great lengths or trouble to make a meal, especially when you’re busy and don’t have the time to fuss. This one dish chicken with rice and pumpkin is cooked all at the same time in the same dish with vegetable stock, soy sauce, garlic and herbs. Mixed slightly after cooking to start breaking down the pumpkin and served.
