Oven roasting... Cauliflower and eggplant are the tastiest when brushed with olive oil, sprinkled with salt, then roasted till browned... I add it into rice with pieces of cooked chicken before boiling/cooking rice... (one large eggplant cut up then roasted, one whole cauliflower cut up and roasted, chicken boiled with salt and pepper, deboned and then all added to 2 cups of raw rice, layered, with 4 cups chicken broth- broth salted to taste) #roasting #roastedveggies #ricedish #yum !
