I haven’t posted much lately. That’s mostly because I’ve been busy making 2 vegan-friendly children’s books which I dedicated to my mother for her birthday yesterday. Luckily she loved them. I found a new passion for writing and illustrating that I never knew I had. I think the world needs more vegan-friendly children’s book so I will continue writing them. Vegan Spinach and Cashew Ricotta Quiche. 🌱Pretty easy to make. The crust is from oat flour and flax eggs. The eggy part can be made with soft Tofu or Chickpea Flour and A bit of Black salt. The filling could be what you want. I made the filling with sautéed spinach with a bit of garlic and then mixed with cold Cashew Ricotta before baking. This is good cold or hot.
