Vegan Baked Yucca Fries
Outcome: yummy
I made these myself! With no recipe woohoo! First I peeled a yucca and cut it into three equal sized chunks and boiled them for about 15 minutes. Then I cut them into fries. I made the seasoning/coating with one flax egg (1 T ground flax, 2 T water), a lot of garlic powder, paprika, cumin, and oregano and then tossed the fries in that. I cooked them at 425°F for about 17 minutes and flipped them once. I’m so proud of myself! My own recipe! And they taste good! Chewy on the inside and crunchy on the outside! Plus no salt or oil used :)

Vegan Black Bean Brownie Bites
Outcome: meh..
I was hopeful when making these because I had made chickpea blondies before and they changed my life. The batter even tasted good (which is usually a sure sign of success). However, they came out tasting very strongly of black beans, which I don’t mind all that much, but I probably won’t even bring these to school for snack club because I really don’t think anyone will like them at all. I even added a bit of sugar to the recipe and still- slightly bitter, black bean-y brownie bites :/

Vegan Banana and Peanut Butter Overnight Oats
Outcome: yummy
These are really good and really easy. They’re so sweet and filling even without the sweetener. I will probably be making these all the time for breakfast.. and lunch... and probably dinner too.

Vegan Red Lentil Cauliflower Burger
Outcome: yummy
I changed out red lentils for black lentils because I didn’t have any red lentils but it still turned out SO. GOOD. So good that I had to resist eating one before I brought them to school. The seasonings are really good and they’re not too salty. I would definitely make them again. The only problem is they dry out, so make sure to eat them soon after you make them.

Vegan Brownie Batter Peanut Butter Swirl Oatmeal
Outcome: gross
I did not like this at all. The very top layer was good because I sprinkled peanut butter and brown sugar on top. It did not taste like brownie batter and had a very bitter dark chocolate taste. If that’s your thing, go for it. If I made this again I would probably end up adding a scoop of sugar to the recipe.

Vegan Made From Scratch Brownies

These are really good! Not the absolute best brownies I’ve ever had but they’re still really good! I would cook them for a little less time next time because I like them to be a little undercooked and gooey.

Vegan Bananadoodles
Outcome: SUCCESS!!!
These are so good and so unbelievably soft! The perfect amount of sweet and taste extra banana-y. I could easily eat ten in one sitting! I had a hard time not eating all of them before they got to my school bake sale :)

Vegan Apple Pie
Outcome: yummy
This pie turned out really well! I ate about half of it the next day.. Anyways, the only problems I had was that I couldn’t find apple butter at the store so I just didn’t use it, I struggled with forming the crust and didn’t have a pie pan, and I didn’t use enough apples. It was still delicious though! I would definitely use this recipe again if I ever needed to make an apple pie

Vegan Crispy Garlic Brussels Sprouts (with Sriracha Aioli)
Outcome: SUCCESS!!
These are super crispy, salty, and filling! I like them extra crispy and a little burned so I cooked them a lot longer than the recipe said. I also only used three cloves of garlic and cooked the garlic right in with the brussels sprouts. Great recipe! I will definitely make it again, maybe to bring as a side to a dinner party.

This recipe is so good, I must have made it at least eight times since I discovered it a month ago. I always keep a banana in the freezer for this purpose. So yummy, filling, easy, and healthy! I highly suggest trying it!

Vegan Peanut Butter Banana Ice Cream Sandwiches
Outcome: good
The cookie recipe ended up being a little dry and not too flavorful but this might of been because I didn’t have enough creamy peanut butter and had to use mostly the freshly ground crunchy peanut butter from Whole Foods because I didn’t have anything else. The banana ice cream was SO GOOD and tasted just like regular ice cream. I will definitely make that by itself again. Also, it’s hard to form the sandwiches because I didn’t have the right sized baking pan. But still a pretty good recipe :)

Vegan Green Bean Casserole

These turned out to be really good. Perfect for a salty, comfort food craving- but healthy! When I make it again I’m going to cook the green beans for longer because they were a little undercooked for my taste. But I will definitely be making it again! So good!

Tofu scramble with Guacamole

I used this Whole Food recipe as a basis for the seasoning of my tofu. Other than that, I only used about 1/4 of the amount of tofu and added black beans, garlic and potato. Super yummy!

Chickpea Brownies
Outcome: SUCCESS!
These are so goddamn good! Also they are super healthy for you (the only sweetener is 1/3 a cup of maple syrup). And they are loaded with protein from the chickpeas! My only note is that if you are expecting a typically “brownie” taste, you are not going to get that. They taste super good anyways, kind of like cookie dough/ cookie cake :)
