I am so happy to announce that I graduated from the Culinary Nutrition Expert Program WITH HONORS!! It took a lot of time, focus, and dedication but it was definitely well worth it. Sweet Potato Arame Salad - created during my Culinary Nutrition Expert Program. Recipe is from The UnDiet Cookbook by Meghan Telpner. @meghantelpner @culinarynutrition This raw dish was refreshing, crunchy, and not overly complicated. I loved that this was paired with a Sweet Ginger Dressing. I didn't know what Arame was prior to this recipe. If you don't know either, arame is a sea vegetable. Sea vegetables are a good source of iodine and also known for detoxing radiation. Kimchi Maki Rolls - this raw food meal is fantastic and I love the mix of textures and flavours. I really enjoyed using the Sunflower Power Spread in place of rice for extra power of nutrition. I have never had kimchi before and I fell in love. A little everyday goes a long way with this stuff. The power of fermented food is a wonderful thing. I bought kimchi for this recipe but I am looking forward to making my own once I run out. Almond Veggie Burger, Trip to Italy Vegetables, and Mango Chutney - created during my Culinary Nutrition Expert Program, founded by Meghan Telpner. @culinarynutrition @meghantelpner The Almond Veggie Burgers were a hit with my kids, husband, and parents. This is definitely something I have now cooked a few times and make bigger batches to freeze extras. The ground up almonds make an awesome burger texture. Best of all, these burgers are packed with nutrients 🥦🌿 Swipe to find the 4th picture with the ingredients. The Trip to Italy Vegetables were so simple and can be quickly whipped up any night. I love how it included a Basic Herb Vinigrette for dressing them. The Mango Chutney I really liked too but I might be a little biased as mangoes are my favourite fruit. And even though it was made with my not so favourite flavour, ginger, I supringly liked the blend. My one day meal plan created for me by my Culinary Expert Program buddy. Everything was created based on my food philosophy, needs and likes. I loved everything. @culinarynutrition @meghantelpner 1. Chia Pudding topped with raspberries, almond butter, and blueberry and cranberry fruit puree. I like how this recipe is quickly prepped to sit overnight and the next morning you can top it off with whatever you like. 2. Banana Oat Bites, with hemp hearts and cranberries. I couldn't stop snacking on them, they were so yummy. 3. Chana Masala. This I have made plenty but this recipe from my buddy was made with an onion purree which I had never done before and I really liked that. 4. Cauliflower Soup topped with cilantro. This was made with minimal ingredients but flavourful. UnShepherd's Pie and Gravy Boating Another recipe from the Culinary Nutrition Expert Program I am taking, if you are ever interested in creating them you can find them in the UnDiet Cookbook by @meghantelpner UnShepherd's Pie was not what I expected as the traditional potatoes were substituted for Cauliflower Mega-Millet Mash, but overall still yummy. The base contained adzuki beans, carrots, sweet potatoes, celery, mushrooms, red onions, peas, and spices. Condiments & Spices 1: Curry Powder 2: Sambal and Agave Mustard ("honey mustard") made for #3 3: BBQ Sauce 4: Nut Milk These are required recipes I had to make for my Culinary Nutrition Expert Program. Here are my reviews: I am excited to have my own fresh Curry Powder as I like to make cauliflower chickpea curry dishes. The aromas were magical and tasted great in my coconut cauliflower soup. I really loved the Sambal and used the leftover on many things (even as a dip). It is pretty spicy but with lots of flavour. The Agave Mustard was a recipe that was suppose to use honey, but I decided to swap that for Agave, I could of done maple syrup to. It was thicker than I expected but was good nonetheless. I must say the BBQ Sauce was to die for. Best part is no hidden ingredients or preservatives like your store-bought kind. While I make lots of Nut Milk, I have never made one like this. I made it with my nuts of choice, I added maple syrup, vanilla, and Sea Moss! I thought I'd hate it as sea moss didn't smell so nice to me (like a fishy ocean) but I highly enjoyed it and it thickens it up. My day on the Culinary Nutrition Conference was so inspiring and just further assured me that I signed up for the best thing to continue on my path. Loved all the Panelists stories of success and why they started their nutrition journey. I can't wait to grow more and maybe help some peoples lives along the way. I also loved how our breaks today included excercise, stretches and meditation. It was great because I deffinitely do find overall health doesn't just included what you eat, it's about mind & body! Another part I loved was the last conversation: One Meal For All – Getting Little Ones (And Selective Older Ones) On Board. I want my kids to be inspired and knowledgeable of the benefits of the foods we put into our bodies. Sometimes it's a struggle but they have grown along with me and I am proud of them for adapting over the years. Getting them to cook with me, and after eating a meal, ask what they would maybe change or do next time helps get them involved. And even having them suggest a meal themselves helps with mealtime. Today is the Day! I received my welcome package from @culinarynutrition and I can't be more excited! This 14-week course from Academy of Culinary Nutrition founded by @meghantelpner in Toronto, Canada starts in September and I have already started working on my reading for assignments. Some things I will be learning will be: - Plant-Rich Eating - Fueling with Whole Foods - Raw Food Foundation - Herbal Medicine and Elixirs - Healing Diets - Beauty and Home Care & much more! When I complete this course I will be a Certified Culinary Nutrition Expert! With this I will have the ability to do a whole lot - improve my blog - write a cookbook - meal and menu planning - teach classes, etc. I have yet to decide what I will go onto and what my path will be but I am thrilled to start! As @joshgitalis would say, "The best way to get started, is to get started."
