It’s not just a question of anthropomorphisation, with which they can give off more human emotions, but also stylization, to better fit the mold of the style of the art/animation. 

An example of this could be given to Bugs Bunnies earliest appearences, where his head was more egg-shaped and the eyes were located more to the side. I am guessing that having eyes closer together and a more pear-shaped head allowed him a better range of emotion. 

With the case of animation, less complex shapes and anatomy are also more practical, because it simplifies the whole process.
