If you’re waiting at the microwave tomorrow at lunch and smell something good, it’s probably me heating up some leftovers from this awesome tray bake: chicken thighs, Russian banana fingerling potatoes from the garden, artichoke hearts, Castelvetrano olives, roasted red peppers, red onions, and capers. The seasonings were salt,pepper, oregano, marjoram, and thyme sprigs from the garden, olive oil, and lemon juice. Look for the recipe here soon.
