A loathsome guest at a dinner party I once attended announced you can make anything taste good with fat. She said this as I was serving up a chocolate pecan tart promised to the host, and my first instinct was to divert it into her face. I didn’t of course, because violence and whip-smart retorts only ever live in my head. Later on, she invited me into the bathroom to see her new labia piercing. So, mixed messages.
That said, she had a point about fat. I’ve been writing this blog for eight years now and the most shared and liked recipes have lashings of fat and/or sugar in common. No surprises here - as we all aspire to cleaner, increasingly plant based virtue-signalling, how many of us are squirrelling away six pineapple Jaffa Cakes when we think no-one’s looking? Right this minute I am staring longingly across the coffee table at a box of Divine Mint Thins while a sweet potato bakes in the oven. And the rate at which we get through sea salt butter in our house (yep, the one with the extra crunchy salt crystals) is not something I am ever going to admit to my GP.
But if you all want fat and sugar, then I am here to please. Not necessarily with animal fat, and not always with proper sugar. One of the most versatile oils in my kitchen is coconut, sunflower oil always produces moist and springy sponge cakes and I could almost drink extra virgin olive. And I sometimes supplement no-carb Splenda for sugar in some recipes with zero difference noticed. None of this interferes with the popularity of the finished dish, sometimes it even enhances it - and I am often asked for recipes for dishes I photograph with abandon but haven’t got around to writing up.
So what follows then is only a bit like Julie Andrews: rather than a selection of my favourite things, it’s a revisiting of some of yours - a Top 4 of those recipes most often requested or dishes shared, fats or sugar included, with a couple of twists thrown in.
Perfect Roast Pork Belly
For my money the supreme leader of pork joints is belly - roasted long and slow until those layers of fat melt and the hide turns to the guiltiest pleasure of all: cracking. I used to subscribe to the belief that anything this good was proportionately difficult to achieve - but after many years and attempts, I have found a way as fool-proof and leave-it-alone succulent as you can get.
My advice is to serve this with creamed corn - fresh corn shucked and simmered in a little butter and cream. Pork and corn are a less-travelled match made in heaven. Cowboys kind of got the hang of it but were seduced into flatulence by the baked bean before the corn craze could really take off. But what the wild west discarded, the barbecue warriors picked up. OK I’m taking The Crown approach to history but you get the picture. Serves 4-6.
Ingredients
One 2 kg pork belly joint, bone in ideally but not necessary( get your butcher to score the rind)
1 tbsp. each fennel seeds and cumin seeds
1 tbsp, chilli flakes
2 tbsp. Kosher salt
2 onions, cut into wedges
2 carrots cut into chunks
1 leek cut into chunks
200ml sherry or white wine
100ml water
For the creamed corn:
3 fresh ears of corn
50g butter
150ml double cream
Kosher Salt and freshly ground black pepper
How to make.
The night before you aim to roast the pork, get rid of any covering, pat the skin dry, pop it onto a dish and put in the fridge. This will dry out the skin and ultimately product better crackling.
Heat the oven to 220C (or 210C Fan) and take your belly out of the fridge at least 30 mins before roasting. Pulverise the fennel seeds, cumin seeds, salt and a and chilli flakes in a pestle and mortar. Rub the mix into the scores in the pork rind, then pop into the oven for 25 mins to get the crackling going.
After 25 mins,remove from the oven and transfer the pork onto a board and reduce the oven to 180C or 175C fan. Working quickly, toss the onions, carrots and leek into the roasting pan and then put the belly joint on top. Pour the sherry or white wine into the roasting pan around, not on, the pork. Return the pork to the oven and roast for two and a half - 3 hours.
Check the pork at 2 and a half hours - if you can wiggle the rib bone easily, great, if not, return to the oven for another 30 mins. Remove from the oven again and transfer the roast veg to a bowl and keep warm. Crank the oven back up to 220C and return the joint one last time to crisp up the crackling.
Remove from the oven and leave to rest for 20 mins before carving
Dutch pancake with caramel apples
Leave It Alone is the best mantra for an easy life in the kitchen. Some dishes were made to be fussed over - risotto, caramel and of course pancakes. But a dutch pancake gives you both time to yourself and a whomping great wow factor when you bring it out of the oven. Thanks to Erin Jeanne McDowell at the New York Times for this little number. (Serves 3-4)
Ingredients
(100 g) plain flour
3 Tbsp. dark muscovado sugar
½ tsp salt
½ tsp cinnamon
½ tsp kosher salt
Pinch ground nutmeg
50g unsalted butter
3 eggs
100ml cashew nut milk (or milk of your choice)
1 tsp vanilla extract
For the caramel apples:
40g butter
75 ml double cream
110g dark muscovado sugar
3-4 apples (granny smiths are good)
Juice of 1 lemon
1 tsp vanilla essence
Pinch of ground cinnamon
How to make
Heat the oven to 200C fan (210C). Put the butter in a frying pan or skillet that you can use on the hob and in the oven. When the oven is hot, pop the skillet in to melt the butter.
Mix all the dry ingredients together. Break up the eggs with the milk and vanilla essence then add to the dry ingredients and mix until smooth.
Peel and core the apples then cut into thin slices and toss in the lemon juice.
Take the skillet out of the oven (the butter should have melte by now) and pour in the pancake batter. Put back in the oven and set your timer for 20 minutes.
While the pancake is doing its thing, make the caramel apples. Melt the butter in a saucepan then add the sugar and cream and mix again. Add the apples, stir to coat the apples in the caramel mix, then simmer gently for 5 minutes until the apples soften. Take the pan off the heat and stir in the vanilla essence and cinnamon.
After 20 minutes, and using protective gloves or oven mitts, remove the skillet from the oven. The pancakes should be all puffed around the edges like a dramatic Yorkshire pudding.
Pour the caramel apples into the centre, bring to the table and drizzle with double cream while everyone round the table gasps. DO NOT FORGET that the handle is hot so use your oven mitts while handling at the table.
Stuffed Courgette flowers
This is a romantic dish for me as it reminds me of my first trip to Rome. At the same time it’s tempura on steroids. Cook the whole (usually tiny) courgette with the flowers attached - it may not look as pretty but there is more flavour and nutrition (always handy when you are taking a bath in carbs). Like the Dutch pancake, this dish gives good gasp when it arrives on the table. (Serves 4).
Ingredients
8 courgettes with flowers attached
250g ricotta cheese, soft goat’s cheese or goat’s curd
6 anchovies, finely chopped
1 tbsp each finely chopped mint and parsley
Salt and freshly ground black pepper
For the batter:
70g cornflour
30g plain flour
80ml ice-cold sparkling water or lager
400ml sunflower oil for frying
How to make:
Mix the cheese, anchovies, herbs and seasoning in a bowl.
Taking each courgette, gently splay the petals of the flower and remove the stamens with a small knife. Using a teaspoon, stuff each flower with the filling then twist the tips of the petals to seal.
In another bowl mix the batter ingredients and leave to stand for 5 minutes.
Heat the oil in a deep pan or flat-bottomed wok. Line a serving dish with kitchen paper. Once the oil is hot, take each courgette in turn, dip it in the batter (courgette and flower) and then carefully lay it in the oil and deep fry for a couple of minutes, until the batter turns golden and crisp. Try not to crowd the pan, you can probably fry three at a time. Remove each courgette and flower from the oil and onto the paper lined dish. When all the courgettes have been cooked, remove the kitchen paper and serve while hot, with some quick pickled red onion slices on the side.
Sweet potato Gnocchi with pesto
Anything a potato can do, a sweet potato can do as well if not better. Plus it’s packed with antioxidants (not red for nothing) and lower in the demon carbs. When in Buenos Aires, gnocchi is traditionally eaten on a Thursday (a ritual they share with Rome) and it’s my niece Luli’s favourite dish. Wonder what she will think of this version? The gnocchi is based on a recipe by Jonny Rhodes (Serves 4)
Ingredients
1 large sweet potato
1 cup plain flour
½ cup wholemeal flour
1 tsp. Ground cumin
½ tsp cinnamon
¼ tsp allspice
½ tsp kosher salt
1 egg
50g butter
2 tsp apple cider vinegar
For the pesto:
1 large bunch basil
1 tbsp, pinenuts
2 fat cloves garlic
25g grated parmesan
½ cup - ¾ cup extra virgin olive oil
How to make.
Heat the oven to 190C fan and roast the sweet potato for 1-11/4 hours (the potato should be soft inside and give when you insert a knife). Cool, skin and mash.
In a bowl, mix the flours, potato mash, spices, salt and egg. Roll into a ball then cover with cling film and pop into the fridge for an hour to firm up.
After an hour, remove from the fridge and cut into six portions. Dust your work surface with flour then taking each portion in turn, roll into a long sausage and cut 18-20 portions. You can either leave the portions like this or roll each portion over a gnocchi paddle to give it ridges, then place on an floured baking sheet. Repeat with each portion, then cover all the gnocchi and refrigerate until ready to cook.
Bring a pan of salted water to the boil, working in small batches, add the gnocchi to the pan and continue to boil. As the gnocchi float to the surface, remove with a slotted spoon and transfer to a greased baking sheet.
Make your pesto, put all ingredients except the olive oil into the food processor and pulse until chopped small. Keep the motor running and gradually add the olive oil until the mixture thickens. Turn off the motor and leave to one side while you saute the gnocchi.
Heat a large frying pan and add the butter. when melted and sizzling add the gnocchi in a single layer and cook undisturbed for 2 or 3 minutes, until the bottoms are light brown (you may need to do this in batches). Then add 2 tbsp butter, 3 tbsp water and the apple cider vinegar and swirl around the gnocchi.
Serve immediately in pasta bowls and drizzle the pesto over the top. Grate over some parmesan.

And now it’s turned into more of like…a business.”
Wood didn’t see a space in the market for the straightforward, untrendy beers like nut browns and lagers that they originally wanted to produce. ”We like to make straight-up beer. We don’t want to do the lactose sours and the double triple hazy IPA stuff,” he says. “It’s not where our passion comes from. And the fact of the matter is there wasn’t a place in the market for us.”
Enter: seltzer. The Woods were actually in the process of building out their own brewery when they decided to pivot fully into seltzer, a move that they expected wouldn’t be a popular one in the brewing community. “In the brewing industry at the time, like two years ago, if a brewery made a seltzer, you’re the devil, you know?” Woods says. “You went against everything that you believed in. [And] we were just like, let’s do it.”
It’s worked out so far. Elevated’s taproom currently offers nearly 20 seltzers (in 5 percent and 7.5 percent ABV) and seltzer cocktails alongside a small selection of beer and wine. Don’t expect to see just the standard mango, lime, and mixed berry flavors, though. “We don’t have to risk putting 2,500 cans of a small-batch thing out on the market. We can make one keg of it if we want and put it on draft,” Wood says.
Experiments like that led to a recent gin-barrel-aged blackberry elderflower seltzer release, and a Valentine’s Day special chocolate-strawberry seltzer packaged into 22-ounce bombers and sealed with red wax. As Wood puts it, “That’s the power of the taproom, to be able to experiment without the risk.”
In Seattle, San Juan Seltzery opened its taproom doors in September 2019, though the brand itself dates back to 2017, when a weekend getaway drinking huckleberry vodka sodas among friends turned into its own seltzer brand for founder Katy Enger. Her company now also boasts wine-flavored seltzers, cocktail-inspired seltzers and hard lemonade seltzers.
CEO Ron Lloyd, whose experience in beverages through the years runs from Capri-Sun and kombucha to wine and now to seltzer, says the taproom is not just a place to sip a seltzer; it’s a San Juan Seltzer experience. “This is really brand-focused. This is not a restaurant. This is not a full-service bar,” Lloyd says. “This is a taproom, and it is focused on San Juan Seltzer, being a seltzery, selling our story, talking about Katy’s vision, talking about our new unique flavors, and really leveraging one of our many firsts: first to be zero sugar, zero carb, first seltzer brand from the Pacific Northwest, and the first to introduce our product on draft.”
They also see the taproom as a way to test new ideas. “It really [is] a great place for us to not only showcase who we are and what we stand for, but it becomes the testing ground for new flavors, to see what consumers want,” Lloyd says. “Every one of our new flavors has gone through our taproom, and you can tell what’s really hot.”
Their 15 flavors on tap focus on ingredients from the Pacific Northwest, from the huckleberry that originally inspired the brand, to Rainier cherries, Fuji apples from a nearby orchard, and pears from Oregon (for a seltzer VinePair named among the best to drink last fall). Basically, if they can’t grow it locally, you won’t find it on their menu. “We can’t do a mango or a pineapple because those don’t grow here,” Lloyd says.
San Juan is also the only “seltzery” on this list because it managed to snag the trademark on the term. Yes, in a world full of breweries, distilleries, and wineries, there’s but one “true” seltzery on the continent and it’s San Juan — at least until someone wants to let their lawyers fight that out in court.

Another recent entry to the taproom seltzer space is Charlotte, N.C.’s Summit Seltzer, opened in September 2020. Founder/owner Kristin Cagney spent a decade in the craft beer business before leaping onto the seltzer side of things. “I really had a passion for craft beer,” she says, “and when I saw this craze for seltzer I [said] what if we opened up a taproom, and really just focused on inviting people in to try all kinds of different seltzers at the same time and really explore the craft side of it?”
The opportunity to innovate in an industry that’s in its infancy was also a big appeal for Cagney. “Some beers have been around for 400 years. We’re never gonna compete with the craft aspect of the history of beer,” she says. “I don’t think that it’d be fair to even try and do that because there is just so much historical meaning to it.”
Seltzer, though? There are no “styles,” no rules just yet: “A lot of people think it’s for, you know, young girls or frat bros, but there is a craft side to it that we want to explore,” Cagney says. Summit has seltzers in a range of strengths from 4.2 percent to 7.5 percent ABV and a dozen flavors including a dry-hopped tropical fruit seltzer and an acai-blueberry-raspberry seltzer. It’s also creating cocktails using its 14.5 percent ABV seltzer base for things like a jalapeño Margarita seltzer cocktail and a riff on the kiddie classic called a “Shirley Seltzer.”
Though most of its sales are on the seltzer side of the menu, there are a few beers on the list, and true to the small-craft nature of Summit, Cagney still has nothing but love for her industry peers. “I got into this industry because I love beer,” she says. “Beer and breweries and all the amazing brewers; they’ve paved the way for the seltzery to even open, so I want to definitely give my appreciation to the brewing culture.”
What’s next? Most recently an all-seltzer taproom temporarily popped up in a Chicago hotel and a pair of Kentucky brothers and nascent seltzer barons announced plans to open The Local Seltzery in Louisville, telling Louisville Business First their new process would include a proprietary seltzer “gun” for their taproom-exclusive seltzers this fall.
Seltzer taprooms aren’t quite taking over the world just yet. But don’t underestimate them, either. As the seltzer market matures and draft seltzer expands its reach, it may be only a matter of time before your neighborhood taproom is working with a lot less grain and a lot more fermentable sugar.

Michelob Ultra Is Releasing an Organic Hard Seltzer in 3 Flavors
The ever-growing hard seltzer category is getting another addition, and this time it’s organic.
Anheuser-Busch announced its new Michelob Ultra Organic Hard Seltzer in a press release on Thursday. The ���first national USDA-certified organic hard seltzer” will hit store shelves in January 2021, and will be available in three flavors: Spicy Pineapple, Peach Pear, and Cucumber Lime, with more to be expected later in the year.
Each 12-ounce can will clock in at 4-percent ABV and contain just 80 calories, and zero sugar and carbs.
“We believe that Michelob Ultra is uniquely placed to win in the seltzer segment,” Michelob Ultra vice president Ricardo Marques said in the release, adding, “[Michelob Ultra] has unmatched equity as a high-quality brand with consumers who like to have an active lifestyle.”
This isn’t the first time the brand has dabbled in organics. In 2018, Michelob Ultra released Pure Gold — an organic version of its light lager — which it similarly dubbed the first USDA-certified organic beer from a major brewer. The lager contains slightly fewer calories (85) than its new seltzer and 2.5 grams of carbohydrates per 12-ounce serving.
The impending release marks the fourth hard seltzer in Anheuser-Busch’s portfolio, which also contains Bon V!V, Natural Light Seltzer, and Bud Light Seltzer.

Triticale Lager
Hey! I haven’t been around in a while but just started a new series of brews that highlight different ingredients! First up, triticale!
For those of you that are not familiar with triticale, it is a versitile cereal that is a cross between wheat and rye. It takes on both characteristics that wheat and rye provide including the spiciness of rye as well as the nuttiness of wheat. In this particular application, I used malted triticale from MJW Grain Inc (https://www.mjwgraininc.com/) from Ritzville, WA!
The idea was simple: brew a beer that highlights the triticale malt as a base malt in this SMASH-ish brew. The recipe comes out as 90% triticale and 10% oats for body and head retention. I know, you’re thinking holy stuck sparge - but I actually mashed in at 120F for a beta glucan rest and slowly rose the mash temp up until it was steady around 160F and let it rest. We pulled out a very steady voralouf for about 15 mins and continued on to the transfer. Zero stickiness whatsoever!
With an OG of 1.061, the initial runnings were surprisingly sweet! One of the people brewing with us said it tasted of brown sugar on oatmeal. It was indeed quite sweet and lacked the bitterness that wort typically has. In fact, I’d say that was maybe the best tasting wort I’ve ever had. That being said, it was super murky and seemed on the thicker side. We feremented it out with Bohemian lager yeast around 47F. After a week, the color lightened up much to my delight and the fermentation was incredibly active, especially for a lager. We threw it in the lager chamber at 31F and let it go for the month! After a month, we transferred it over to a keg, carbed that puppy and sipped!
At Lowercase Brewing, the brewery my roommate and I work for, we brewed up a roggenbier, a typical German rye style. That is the closest thing I would say it tasted like - a rye lager. It was definitely super rye on the flavor - a light spice but very malt-forward. You could tell that the wheat-side of the triticale rounded this spicy maltiness with a lovely back end that brought in some sweetness. The aromatics were pretty sweet as well, if not fairly light. We only used Hallerteau Blanc for bittering in the brew so not very much hoppiness was involved. That also being said, the bitter was pretty nicely subdued.
The body wasn’t crazy heavy but a nice light pillow with a dry crispiness that finished out the sip. The head was a perfectly placed pillow cloud, resting calmly above the golden brew leaving a delicate lace behind.
Overall, I encourage using this blend as a nice, rye forward base malt! Do be aware that it does come through pretty cloudy as is to be expected with any wheat variety. I would love to see this in something like a festbier, Roggenbier alternative, or even a bock of some kind! Next time, I’m thinking an IPA would play well with the spice or creating a winter warmer that is lighter in color would be something interesting, as well!

New Year’s Resolution: The Swap

As I mentioned in my previous post, I ended up booking the best Airbnb in the best location ever. Hip, weird, close to the main city area but special in its own kind, here’s what to do in Fitzroy, Melbourne’s part Brooklyn, part Shoreditch neighbourhood.
BREAKFAST
Proud Mary’s
Melbourne is a mecca for coffee lovers so I momentarily threw my zero caffeine lifestyle in the bin and had some amazing flat whites. Proud Mary’s is THE place where you should have one – creamy but not too much, perfect size, perfect amount of caffeine. The space is always busy and lively but never noisy.
Proud Mary’s are coffee specialist who brew their special batch and ship it all over Australia so if you haven’t tried it, you’ve missed out.
Donut Shop Fitzroy
Unfortunately I wasn’t chosen to be Idris Elba’s Valentine in the wonderful competition that was Omaze so I decided to eat a lot of doughnuts to drown the pain in jammy carbs. Donut Shop in Fitzroy came to my rescue with unique doughnuts that tasted incredible without being overpowering. Think passion fruit glaze, or black sesame glaze with coconut cream filling, or ginger and rhubarb. Idris definitely won’t look at me now with all this extra doughnut fat in my belly.

I sometimes eat healthy too. I know right? Shocker. Well, Vegie Bar was a great option for a healthy lunch that didn’t make me want to go for doughnuts straight after. I had a fresh and filling lettuce salad with roast pumpkin and yummy crouton style crispy sushi rice cubes which you should really get if you’re in the area. Smoothies are totally yummy too and so are all the cakes and parfait on offer. Oh and did I mention they make vegan pizza?
DINNER
Easey’s
Now let’s get back to bacon cause that’s the food of Gods and what you all want to hear about anyway: enter Easey’s. This incredibly cool restaurant is situated on a Collingwood rooftop by the defaced pregnant Beyoncé mural on Easey Street and its main characteristic is that it is basically a dining room made out of a train carriage.
The space is tiny and it gets busy, so book in advance. For amazing sunset views grab a drink in between carriages before your meal, then go sit down for your chance to eat in a New York style venue with Melbourne views.
So I’m just gonna put it out there and say that I’ve had the best burger in my life at Easey’s, probably also thanks to bacon, which I added as an extra. The bun was tender and spongy, but not crumbly. The meat was cooked just enough. The cheese was runny. Salt was on point. The bacon was as crispy as it gets. Overall, a winning mix. I topped it all up with a side of fries and mac n’cheee coming in the same plate and topped up with crumbly pretzels, which all sounds very weird and unhealthy but damn it tasted good.
Little Hop
Beers and tacos are what this tiny Brunswick Street eatery is all about. Their fish taco is tiny but tasty enough to get you through a night of bar crawls without feeling hungry and costs only $5. The staff are friendly and there to help with recommendation. It’s a true style beet and tequila bar and a badass taqueria, so what can go wrong?
DRINKS
Naked for Satan
Hands down my favourite place in Melbourne. Aside from an giving me an awesome idea for a butt tattoo, Naked for Satan has the best views of Melbourne at sunset and all day round – from the lit skyline to the busy Brunswick Street. No reservation and the slowest lift in the world might deter you from going up to the rooftop, but do go, grab yourself a Naked Lager or a cocktail if that’s your vibe and breathe in the chill, magic vibes this place has.
Black Pearl
This New Orleans style cocktail bar was actually born before Pirates of the Caribbean became a thing and not only drinks here are incredible, the staff have a heart of gold, too. Every year they pose naked with hilarious results for a themed sexy calendar, the profits of which go to charity. This year they went to Beyond Blue, researching mental health and raising awareness of depression and anxiety.
Kent St
Now featuring a drawing by my absolute favourite current artist Celeste Mountjoy (aka Filthyratbag), Kent St is a relaxing, random boozer with an amazing “No jerks” lager and attitude. The staff legit give people hell if they’re being annoying but always with a smile on their lips. It’s the best place for a nightcap.

A Vintage emporium from heaven, selling denim, pin up clothes, leotards and Madonna style spiky boob outfits. I would have bought the whole place if I only could.
Rose Chong Costumiers
Most of Rose Chong’s costumes are for hire but the shop is so colourful it’s a real pleasure to just walk in and get some party/disguise material. Or a crazy dog lady playsuit from the sales rail.

Melbourne is THE place in Australia for graffiti. No wonder Banksy’s exhibition was held here. Take a street art tour or walk around the CBD’s laneways and Fitzroy’s streets for some of the most beautiful graffiti you will ever see.
Melbourne Museum
Skip the natural history and science bits if you’ve already seen your fair share of science museums and head to the aboriginal art and history section for a stark reminder of what colonisation did Australia’s original population. A must-see.
