And the March savory pie is here! This is Beef and Guinness Pie. It looks pretty. But my crust sunk into my filling that didn’t thicken like it should have and so it’s kind of poorly executed. WEEK OF JANUARY 4 - winter fruit
FIRST PIE, MUCH TO LEARN
When they say keep your dough cold, by god, keep your dough cold.
When they say follow the recipe, don’t go substituting things until you successfully complete it twice.
When your pie crust looks too
Red pears won’t do. Find Bartlett or Anjou.
When it’s time to put it in the oven, don’t assume that 350 will be your go to.
RECIPE
adapted from epicurious (1) (2) and The Kitchen Magpie
PIE CRUST
2 1/2 c. all purpose flour 1 tbsp. sugar 3/4 tsp. salt 1 c. (2 sticks) chilled, unsalted butter, cubed 6 tbsp. bourbon, on the rocks.
Mix flour, sugar and salt together. With pastry cutter, or with food processer, blend until the butter is the size of peas. Take bourbon off the rocks, and add 6 tbsp gradually to the dough until moist. Do not over saturate. Gather into a ball and divide in half. Flatten into disks, wrap in plastic wrap and chill in fridge for at least 1 hour.
FILLING
1 c. dried figs, stems removed 2 large granny smith apples, peeled, cored, and chopped into bite sized pieces 3 pears, peeled, cored, and chopped to be the same size as the apples 1 c. fresh cranberries, fresh or frozen 1/2 c. granulated sugar 2 tbsp cornstarch 1/8 tsp. ground cloves 1/4 tsp. ground ginger 1 tbsp. butter (reserved)
STEPS
Preheat oven to 425 degrees. Take out one disk of pie crust from fridge and let rest while you assemble the filling after slicing and dicing. Toss all filling ingredients except the butter together in a large bowl. Set aside. Dust your work space with flour and roll out the dough to fit a 9 inch pie plate. Take out second disk and let rest. Lightly butter your pie plate, and line the pie plate with crust. Fill with the fruit, mounding slightly in the centre. Dot the top of the fruit with the reserved tablespoon of butter. Roll out the second disk to fit the top of the pie, finishing the edges however you please, cutting the top to let air escape, and cover the edges of your pie with tin foil. Bake for 10 minutes at 425 before lowering to 350 for 50-60 minutes. Bake until the top is browned and the filling is bubbly. Remove from oven and cool before eating.

So, I decided that this year was gonna be my year of pie. Remember when 2017 was my year of cake? Yeah. Like that. I’m gonna try and do at least one savory and one sweet pie every month. Anyway, this month is Bean Pie! It was recommended to me by a book club friend. If you know me, you know I hate beans. Hate ‘em. But this is really really delicious! It’s reminds me a lot of sugar cream pie, but there’s like…a bunch of beans all blitzed up in there.
