We had the pleasure to make it to Cape Forchu in Yarmouth for sunset. It was the inspiration and ultimate goal of last week's lighthouse road trip. We were delayed as weather did not cooperate on the first day which resulted this being one of the first to photograph vs the last as planned. We drove a solid 3 1/2 hours to kick off the photo trip, and it did not disappoint. Once we arrived, I set out to find the best viewing angle with the least amount of distracting elements. There was a lot of people, random antennas, benches, etc, but quickly found my spot. I dialed in the settings and waited for good light. Lisa scoped out the other side and found more spots for a future visit. It was tough committing to one spot but I'd rather have one photo I am happy with vs 10 ok photos. This is as long exposure of 2 minutes to which I had to find ways to block the strong wind. The slightest breeze is enough to ruin a long exposure as it needs to stay perfectly still. Tusket River Lighthouse, a bonus lighthouse that was not on the planned list. I had planned from looking at a map on a good sunrise location and decided that Wedgeport NS was a good candidate. Since we were running behind there was no time to scope out the location beforehand, so the next morning we got up early and traveled from Yarmouth for 25 minutes to catch sunrise. Got lots of photos of the dock and boats, but as we were wrapping up, realized that there was a lighthouse off in the distance and the light was just right. Coconut Strawberry Short Cake

It’s been a beautiful sunny long weekend and I haven’t felt like cooking.

This morning I was craving something refreshing and sweet so I made Coconut Strawberry Short Cake.

Healthy Points: 10/10

Future Husband Points: Derek is away again! I’ll save him some to see what he thinks.

Coconut Strawberry Short Cake- WW 5 points

Ingredients

Angel food cake (store bought but you could make your own) Can of light coconut milk Splenda Vanilla extract Strawberries Raspberries

1. Place the can of coconut milk in the fridge over night;

2. Open tin of coconut milk. Put the separated cream in a mixing bowl, mix for 30 second, add cream and Splenda or icing sugar (¼ - ¾ cup). Continue whipping.

3. Assemble all your ingredients and enjoy.
